This isnt your average cake. If youve never tried the 6-inch Milk Bar Birthday Cake, you might think it wont be enough for celebrating with more than one or two other people. It looks kind of small, you might say to yourself. I could take this down faster than you can sing two rounds of Happy Birthday. But you would be mistaken.

With three spongy, rainbow sprinkle-infused yellow cake layers, each held together with thick, cream cheese-tinged vanilla frosting, then topped with more frosting and dotted with crunchy cake crumbs , it’s deceivingly dense, and easily serves 8 to 12 people.

What To Actually Try At The Milk Bar Flagship

Cereal Milk: Best sampled either as cool soft serve or as actual sweet-salty milk the latter is off-menu but available.

Peppermint snaps: A chocolate wafer layered with caramel and pretzels, dipped in white chocolate peppermint bark each flavor comes through clearly without devolving into heavy sweetness .

Birthday cake or corn truffles: Small snacky bites flavored like vanilla cake or vegetal corn and caramel. Eat them cold .

Apple pie soft serve : The texture is a bit thin, but it packs a wallop of cider flavor .

Cerealsies: Try the spicy cinnamon-sugar spheres or the Andes-like mint variety . Avoid the birthday flavor.

Milk Bar pie: A riff on chess pie that tames buttery, sugary goodness with an oat crust .

Taste And Texture: Cake

Ive heard of these people that use cake simply as a vehicle for frosting. Somehow, these individuals walk the earth without appreciation for a perfectly textured slice of spongy cake. I, however, am not one of those people. I. Love. Cake.

And although I picked this dessert up in Toronto, its my understanding that all Milk Bar products are actually flown in from NYC. So obviously, time and distance factor in the quality of consumed product. Having heard so much hype about this cake, I had very high expectations. And knowing the deliciousness of other Milk Bar desserts, the bar raised even higher. However, when the time came to bite into the slice of presumed heaven, l have to admit I was disappointed.

Now, this is not to say that the cake was so dry that an avalanche of crumbs tumbled to my plate. But the moist, freshness that give cakes that ever-so-desirable quality was seriously lacking. However Im, chalking this up to sheer travel distance . I mean, after a long road trip, people arent exactly at peak quality either.

Cake texture earned a respectable 3.5 out of from me this round.

When you order a Milk Bar Cake, it comes carefully wrapped and insulated with freezer packs in a cooler. You can store it in the fridge for up to 7 days , or in the freezer for 30 days . I ordered the Milk Bar Birthday Cake because I knew for sure that it was AMAZING! I also ordered the Milk Bar Chocolate Malt Bar Cake because I love chocolate and wanted to also try something new.

This is how the cakes looked when they came out of the box. They are securely wrapped and protected.

I ordered the two cakes as a special surprise for a dinner party that would be 3 days later. Therefore, I stored them in my refrigerator until I was ready to serve them for the dinner party.

*UPDATE*: I apparently unwrapped the cakes upside down. Each side has a card board cover top. I unpacked them how they came out of the box. I had no idea I was doing it wrong… but had I known better, the top would have had a pretty layer of cookie crumbs! Whoops! None the less, the cake tasted extraordinary upside down or right side up!

Because the cakes were shipped from such a distance and came frozen, I was curious to see how they would compare to the homemade fresh cake that my friend talentedly put together. I was not disappointed in any way.

Somilk Bar: The Verdict

Okay, here we go.

First thought: the original Milk Bar location is so charmingly unassuming. Its a tiny little shop that can only fit about a handful of people inside to place an orderno indoor seating. Thankfully there wasnt a line out the door to orderin fact, we were the only people ordering when we arrived. There was a steady stream of people who came and went while we sat outside, but the place wasnt exactly hopping at around 2pm on a Saturday afternoon. That initially surprised me, but then I remembered that the NYC nightlife is strong, and the shops posted hours are 9am-1am, so doubtless many people hit up Milk Bar in the evening hours.

What did we try? The Birthday Cake, obviously. Also, Birthday Cake Truffles, Corn Cookie, and Compost Cookie Soft Serve. We also sampled the Compost Cookie and Cereal Milk Soft Serve. Im kicking myself for not ordering a slice of Crack Pie, but at the time it seemed exorbitant. In quantity of sweets to eat, yes, but also in price. The slice of cake alone was $9!

The cookies, both Corn and Compost, were yummy.

The ice cream wasstrange. We each had our different takes. The Compost Cookie soft serve has a chocolate pretzel soft serve base that I found nearly inedible on its ownit was just way too saltybut that was mitigated by the sweet and crunchy Compost Cookie topping. And thats exactly Christina Tosis trademark: marrying dynamic textures with super salty and super sweet to create an addicting treat.

It was neither.

Cornflake Chocolate Chip Marshmallow

WAS THIS $65 CAKE FROM MILK BAR WORTH THE PURCHASE?? *Hilarious Mukbang*

But, I did try something similar with the Cornflake Chocolate Chip Marshmallow !

First, I tried it on its own and WOWZA. I could not get enough of the marshmallow flavor, which was like having ooey gooeyness goodness around the campfire without all the flame, char, and ash! The cookie dough ice cream base really complemented and brought out the mallow. The rest of the ingredients helped to seal the deal. There was great texture from the chocolate chips, which were more like rectangular chunks reminiscent of Ben & Jerrys inclusions.

Additionally, the cornflake crunch was not soggy but not a frozen flake either, so I considered it just right on the texture spectrum. And guess what? They tasted just like cornflakes. Said corn flavor was as comforting as my childhood cereal.

As Milk Bar also sells a grocery-exclusive version of their cookies in the same exact flavor, I decided I would also use them to make an ice cream cookie sandwich. This is not a cookie review, so Ill just concisely say that the ice cream MADE the sandwich the key again being the marshmallow goodness. Id prefer to eat it on its own, though!

You will also need to gather these tools and equipment to make this cake:

  • 1 quarter sheet pan. The most important note when it comes to this birthday cake is that you are not going to bake three 6-inch cakes. Instead, you will bake one large sheet cake. Then, you will stamp the 2 cake rounds with a cake ring. For the third cake layer, you will need to put together the remaining off-cuts from the sheet cake.
  • 1 6-inch/15 cm cake ring. A cake ring is used to stamp out the birthday cake. Then, the stamped cake rounds are stacked in the same cake ring lined with an acetate cake collar.
  • 2 strips 3-inch/7.5 cm cake acetate. Cake acetate is a type of sturdy plastic that comes in sheets or rolls. It is used to line the inside of the cake ring. They will serve as a protective wrap for naked cakes.
