Allison asked if I would make some cake balls for Valentines Day. Since we all love chocolate covered strawberries at our house, she thought Chocolate Covered Strawberry Cake Balls would be the perfect treat to celebrate the day of love!! Plus, who doesnt love cake balls!

Ive been making Steve red velvet cake balls for years, they are one of his favorite treats. Right up there with chocolate chip cookies and Coke.

I made a batch for Heather to take to the salon to share with co-workers and clients, and a batch for Allison to take and share with her girlfriends at their anti-Valentine party. These are almost as good as a real chocolate covered strawberry!

Im so in love with the little boxes I put them in. I picked up these Martha Stewart Treat Boxes at Michaels a few months ago. They are the perfect size. They come with the little scalloped boxes, paper liners, ribbon and even the cute labels. Filled with cake truffles, they make a super cute Valentines Day treat to give someone. And chocolate covered strawberry cake balls are a little different than the typical candy. Its like cake and candy all in one!

How do you feel about Valentines Day?

Im pretty fortunate to have a husband of 27+ years who doesnt need the calendar to tell him when to be romantic. I dont know about you, but those days when he runs to the store when its below zero and snow piled up to his knees because I mentioned that Im out of my favorite cereal..thats love. When Im feeling my worst, and he looks at me and tells me I look beautifulthats love.   • Follow the instructions on the back of the cake box to make your strawberry cake.
  • In a large bowl, crumble the entire cake with your hands or a fork.

  • Place each strawberry on a long paper lollipop stick and prepared a drying rack out of a piece of styrofoam. *I even left the plastic wrapping on the styrofoam, in case we were especially messy.

    Yes, these should be fine to make a day before serving, but I would not suggest leaving them in the fridge for longer than 48 hours.

    If the strawberries are too ripe, they can be extra soft and could slide off the sticks.

    Try to pick strawberries that are almost-ripe to ripe, but not overly ripe. One way to offer a little extra security is to dip the end of the stick into the chocolate and then stick it in the strawberry. Allow for it to cool and harden before trying to dip the strawberries back into the chocolate.

    Chocolate Covered Strawberry Pops are so much easier to eat than regular ones. They are so good and less messy.

    Whenever I eat chocolate covered strawberries they are always messy. Sometimes the leaves fall off and it just isnt easy.

    Putting the strawberries on a pop stick makes it so easy and you can eat the whole thing at one time or take bites.

    Being able to place them in gift bags makes it where I can hand them out to all of my friends and its also very cute.

    I made half with dark chocolate and half with milk chocolate. Then you can use the opposite kind for decorating or you can use colored melting chocolates.

    I found small packages of white and pink melting chocolates at the store and thought they would be wonderful but they ended up being a little difficult to work with.

    Ill just stick to melting the white chocolate and adding my own colors.

    I even soak some of the strawberries in brandy for an hour before coating them. Those were really good and the strawberry flavored brandy makes a great cocktail.

    I was thinking about ways to wrap them so that I could give some to friends and I came up with cake pop covers at the store. They are the perfect size and even have cute ribbons with them for decoration.

    With Valentines Day right around the corner, I was trying to think of something different to make and it popped into my head, Chocolate Covered Strawberry Cake Pops. Granted I have made all different types of YUMMY DESSERTS in the past, but I have been avoiding the cake pop craze for some time. I have moved over to the dark side and now there is no turning back. These were a huge hit with my family.

    How To Make The Best Chocolate Covered Strawberries

  • Prepare the strawberries. Wash and dry the strawberries very well. The strawberries have to be really dry or else the chocolate will not stick on. They have to be SUPER dry.
  • Melt the chocolate. You can melt the chocolate either on the stove or in the microwave.
  • On the stove: Bring 2 inches of water to a low simmer in a saucepan over medium-low heat. Then turn the heat to low and place a large heatproof bowl of chocolate chips on the mouth of the pot. Make sure that there is a gap of a few inches in between the bottom of the bowl and the water . Stir the chocolate constantly as it melts. Stir until the chocolate is completely smooth and melted. This should take a few minutes.
    • In the microwave: The second way to melt chocolate is in the microwave. Place the chocolate into a microwave safe bowl and microwave in 30 second intervals. Remove the bowl at each interval and stir well. Repeat until the chocolate has completely melted. Stir until completely smooth.
  • Coat the strawberries. Dip half the strawberries into melted semi-sweet chocolate and place on a quarter sheet baking pan lined with parchment paper. Dip the remaining half into melted white chocolate. .
  • Add toppings. Use a piping bag and round tip to drizzle the remaining chocolate on top. You can also add sprinkles or coat the chocolate with crushed nuts.
  • Chill. Place the baking sheet in the refrigerator and chill for 30 minutes until the chocolate is set.
