When it comes to ice cream add-ins, cookie dough pretty much takes the cake. Though most of the time we’re not technically supposed to eat it on its own, something about adding it into ice cream transforms it into a viable component of a good dessert.

Despite all the cookie dough that ends up in our ice cream, we don’t really seem to stop and think about the fact that these morsels of goodness are more raw material than finished product. Theoretically, could one harvest the chunks of cookie dough from an ice cream pint and bake it into a real, “normal” cookie?

As it turns out, the answer to that seems to be an emphatic “yes” if a is to be believed.

Perhaps the product of the kind of boredom that only 2020 could produce, he decided to pick out all of the cookie dough pieces from a pint of Ben & Jerry’s Chocolate Chip Cookie Dough and mash them together into one big delicious ball. From there, he loaded one single, solitary cookie onto a baking sheet, dropped it in the oven, and waited. Twelve minutes later, he had what appeared to be a legit cookie.

So, one day back in December 2016, I was blown away by your love of cookie dough. This No Bake Cookie Dough Cheesecake is one of my most popular recipes to this day!

I was actually on a holiday, on a cruise ship with my family in the middle of the ocean when the video went live, and it was an instant hit. Every time I managed to log on to the internet I was stunned by how crazy it had gone!

So Im not exactly sure why its taken me so long to come up with another cookie dough recipe for you.

But rest assured, Im back, and just in time for your 4th of July celebrations!

I know some people are weirded out by raw flour , so this time I actually tried heat treating the flour which is supposed to kill any dangerous bacteria. It worked fine, and you can find instructions for heat treating your flour right here, if this is something you want to do.

If you want to make this recipe even easier, you can absolutely use store bought ice cream, cookie dough or another of your favorite flavors, and if you want to get creative you can throw just about anything into it.

Since regular cookie dough can lead to tummy aches and, supposedly salmonella, the Edible Cookie Dough portion of this recipe utilizes pre-baked flour and skips the eggs, altogether. Though, has anyone ever contracted salmonella from raw cookie dough, I wonder? Nevertheless, this cookie dough is super delicious, tastes like it’s straight off of grandma’s wooden spoon and wont make anybody sick. For this Cookie Dough Ice Cream Cake, the cookie dough is used in the No-Churn Vanilla Ice Cream and as a fun decoration.

How To Bake Flour for Edible Cookie Dough

  • Preheat the oven to 350 degrees celsius .
  • Place your measured flour on a small sheet tray lined with parchment paper. If mounded, press the flour flat to bake evenly.
  • Bake the flour for 5 minutes. Allow the flour to cool completely before using in the Edible Cookie Dough recipe. Once cooled, you can transfer the flour on the parchment paper directly into your recipe or into an air-tight container to be stored for later use.

It shouldnt be completely melted though, because the chocolate chips will just sink to the bottom.

    DESSERT RECIPE – Easy Cookie Dough Ice Cream Sandwiches

    Cookie Dough Ice Cream Layer Cake made with chocolate chip cookie dough, creamy vanilla bean ice cream and drizzles of dark chocolate ganache.

    • 230 grams unsalted butter, room temperature
    • 180 grams brown sugar
    • 100 grams caster sugar
    • 2 teaspoon vanilla extract
    • 280 grams plain flour, heat treated*
    • 4 tablespoons milk
    • 150 grams chocolate chips, plus extra for decorating

    Vanilla ice cream

    • 2 cups thickened or heavy cream
    • 1 cup condensed milk
    • 1 teaspoon vanilla bean paste

    Chocolate ganache

    • 1 cup thickened cream
    • 1 cup good quality dark chocolate

    Chocolate cream

    • 1 cup thickened cream
    • 1 tablespoon cocoa powder
    • 2 tablespoons icing or powdered sugar

    Ice Cream Cake Ingredients:

    -Cookies: You will need about 22 Chewy Chocolate Chip Cookies from a package. Youre welcome to eat the remaining cookies in the package as you wait for your cake to chill and set.

  • Preheat oven 350°F. Grease 9 spring form pan with butter.
  • Set aside 4 pieces of pre-made cookie dough to bake later. Place the rest of the dough in the pan, allow to soften 5-10 minutes. Using finger tips, gently press dough down onto the bottom of the pan and 1 inch up the side.
  • Bake for 15-18 minutes, until golden brown with center slightly soft. Cool completely on wire rack. Bake remaining cookie dough pieces according to package instructions. Remove and crumble cookies into small bowl, set aside.
  • Spread softened ice cream evenly over cooled cookie crust. Cover with plastic wrap and freeze for 2-3 hours, until firm.
  • Remove side of pan. Top with crumbled cookies. Cut, serve and enjoy!

    How To Remove Ice Cream Cake From A Springform Pan

    Thanks to the parchment layer on the bottom of the pan that part of removal will be easy. To help get the sides unstuck, youll want to run a knife along the sides/walls of the pan to help unstick the cake from the metal. If needed, warming the knife up first with warm running water could help to unstick the frozen ice cream if its being difficult. Youll want to wiggle the pan off, not lift directly as you could pull a side of the cake off and ruin the appearance of your hard work.

    How To Make A Chocolate Chip Cookie Dough Ice Cream Cake:

  • Use a food processor to crush a package of store bought chocolate chip cookies. You want to make sure you buy the crunchy cookies because they work best for a cookie crust.
  • Stir together the cookie crumbs and melted butter and press in bottom of a springform pan.
  • Place a carton of chocolate ice cream on your counter for 15-25 minutes, or until softened enough to stir.
  • Spread on top of the cookie crust. Place in freezer.
  • Place cookie dough ice cream on counter and let soften. Spread on top of the chocolate layers.
  • Spread Cool Whip on top of the cake and freeze for at least 4 hours or overnight.
  • Use a knife dipped in hot water and run it around the outside edge of the cake to loosen it from the pan. You will need to rewet the knife a few times as you do this.
  • Add Cool Whip swirls with mini cookies around the top of the cake. Sprinkle mini chocolate chips in the center.

    What Brand Of Chocolate Chip Cookie Ice Cream Sandwiches Do I Use

    You can use any brand that you want. I personally used the Turkey Hill brand because I found that the cookie sandwiches were just a bit thicker than the other brands I was looking at. The height of the cookies doesnt matter as you can easily add in more ice cream to the pan and make up the difference so just use the sandwiches you already know you love.
