However just because a dessert is easy and quick to make, it doesnt mean that Im willing to sacrifice on flavor!

This egg and dairy free chocolate cake tastes just like the one you would get from a bakery but its healthier and you only need a couple pantry staples.

How to replace eggs when making a chocolate cake

The great thing about this dairy and egg free cake is that its developed so you dont need to use any egg replacer. Egg replacer is great when making vegan desserts but sometimes can be difficult to find, you may not have them in hand or might create some weird texture.

This recipe doesnt need eggs at all and you wont even notice the difference. We are just using a bit more baking powder so it rises high and fluffy.

For the butter we are using oil instead of butter. Oil is commonly used when making cakes so its a great way to substitute dairy.

Replacing Eggs In Betty Crocker Baking Mixes

Most Betty Crocker mixes call for the addition of eggs. According to the website, you can replace eggs using applesauce, bananas, flax seeds, or a can of diet soda. As far as ratios go, a quarter cup of unsweetened applesauce replaces one egg. A ripe, evenly mashed banana is equal to one egg. To make a flax egg, mix one tablespoon of ground flax seeds with three tablespoons of water and let it sit for at least ten minutes. Bakers have shared tips for replacing eggs in specific mixes, which are detailed below.

Ingredients For A Vegan Birthday Cake

Here are the ingredients youll need to make a vegan funfetti cake. You can use either water or milk as both work well. For such a fancy looking cake, youll be surprised that no fancy kitchen mixers needed, and just ONE bowl.

  • All purpose flour Sift the flour first, to ensure there are no clumps. You can also use gluten free all purpose flour.
  • Sugar of choice White sugar is preferred, but you can also use brown sugar or coconut sugar. The latter two will yield a slightly darker cake.
  • Baking soda Leavens the cake, and gives some rise.
  • Salt Brings out the sweetness of the cake.
  • White vinegar Works with the baking soda to give the cake the fluffy texture and rise.
  • Vanilla extract A must for any cake or dessert recipe.
  • Oil Any neutral flavored oil can be used. I recommend vegetable oil or canola oil.
  • Water To mix it all together. For extra flavor, you can use a plant. based milk instead.
  • Funfetti Sprinkles Optional, especially if youd like a vegan confetti cake. Use vegan-friendly sprinkles, but be wary that they are likely to dissipate into the batter or stain it.
  • Vanilla Frosting I used a vanilla buttercream but if you have a preferred frosting, you can use that instead.

How To Make Vegan Red Velvet Cake

To make a vegan gluten free red velvet cake, simply swap the egg in the recipe with a little egg replacer.

My go-to is Bob’s Red Mill’s Egg Replacer, but I also have had great results with a flax egg.

I know many people swear by Ener-G egg replacer. Use your favorite vegan egg replacer!

Because this recipe uses whole eggs I’ve had no problems substituting a egg replacer.

There are lots of natural food colorings on the market, too. If you use a natural food coloring, your cake may not be as vibrant.

Just add your food coloring of choice until your cake batter reaches the hue you desire.

If you use a liquid food coloring, you’ll need a lot more to get a vibrant color.

You may have better luck using a powdered natural food red coloring to get a brighter color.

The Function Of Eggs In Cake Mix

Before thinking about how to replace the eggs in a cake mix, it is important to know what the purpose of eggs is . What exactly do the eggs do when mixed into the batter?

Eggs actually play a lot of important roles in cake, the first being that they add structure. When the eggs bake inside the cake batter, the proteins in the cake coagulate, helping to create the overall structure of the cake.

Not enough eggs and the cake may be too soft and flat . Too many eggs and the cake will be tough and chewy.

Eggs also add to the overall flavor of the cake. The yolk of the egg has a good amount of fat which makes the batter taste rich and smooth.

Eggs add moisture as well since they are made primarily of water. This keeps the cake tender as I bake, preventing it from becoming too dry.

Eggs are responsible for adding nutrients to your cake mix as well. They are full of protein and healthy fats along with iron, vitamins and minerals. This definitely helps if you want to consider your cake mix healthy!

Now that you know the purpose of eggs when making a cake mix, you will be able to replace them in a smart and beneficial way, creating a perfect egg-free boxed cake mix.

How To Decorate The Cake

My 4-ingredient simple vanilla frosting is probably the best tasting option for the cake! Itâs rich, buttery and smooth. One batch will cover the entire cake and satisfy your sweet tooth.

Or you can make the simple vanilla icing Iâve included in the recipe. It only has 2 tablespoons of vegan butter, and if you really needed to you could leave it out. For the simple icing, you can mix all of the ingredients in just one bowl. If the frosting is too runny, stir in more powdered sugar, and if itâs too thick, add a teaspoon of milk at a time until you reach the desired consistency.

This is an easy cake icing that can be made in just 5 minutes. Therefore, its perfect when youâre in a rush or just need something simple! You can always create an extra fun design with colorful sprinkles, shredded coconut, or crushed Oreo cookies.

How To Make A Vegan Coffee Cake

Prepare the cinnamon filling and the crumble topping first. In a small mixing bowl, whisk together the cinnamon and sugar, until combined. In a separate bowl, mix together all your crumble topping until a coarse crumb remains. Set them both aside and prepare the cake. In a large mixing bowl, add your dry ingredients and mix well. Then, add your wet ingredients and mix until combined. Now, youll put the coffee cake together!

In a greased 9 x 13-inch pan, spread half the cake batter in it. Sprinkle the cinnamon sugar filling all over the top. Then, add the remaining cake batter. Finally, top with the crumble, to completely cover it. Bake for 30-35 minutes, or until a skewer comes out clean from the center. Let the cake cool completely, before drizzling with a simple icing.

Use Room Temperature Ingredients

Chocolate Cake (Gluten free, Dairy free, Egg free, Nut free)

Youll also have best results if all the ingredients are at room temperature, except for any ingredients that specify cold or chilled.

Using room temperature ingredients like eggs, butter, and gluten free flours helps your baked goods to bake evenly and correctly.

Think about it, if you use cold eggs, your batter will be colder.

And then it will change how it bakes, or may take longer.

For recipes that rise using steam, this is especially important.

Do Not Make Substitutes

I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.

What Is The Difference Between Yellow Cake White Cake And Vanilla Cake

Today, were making a vegan birthday cake, aka a vegan yellow cake. But you might be wondering, what the difference between a yellow cake, a white cake, and a vanilla cake. Arent they all the same? Just a vanilla cake?

Theyre actually slightly different per cake recipe, from ingredients to taste. Lets start with vanilla cake. Typically, this cake is full of vanilla flavor and is light and tender to the crumb. Sometimes, a traditional vanilla cake will contain an egg yolk, but the key is the amount of vanilla. My vegan vanilla cake uses 2 full tablespoons of vanilla, which is the key to the most amazing flavor.

White cake and yellow cake, on the other hand, are slightly different. With both, there is actually a bit of vanilla in the cake batter. However, there wont be as much. White cake is given its name since it just uses egg whites. Because of this, the texture is also slightly more grainy sometimes, and the vanilla one would use is often clear vanilla to keep the cake super white in color. Personally, this is not my favorite cake- I find it a bit bland!

Honestly, this cake reminds me so much of the boxed mix we would have as kids! .

While they contain no animal-derived ingredients, some vegans may avoid these food colorings because of this.

Tips For Vegan Baking

While mixes make it easier, there are a few other things to keep in mind when baking a cake. The first is choosing the right pan sizeif its too big, your cake will turn out flat and dry. If its too small, the batter may spill over in the oven or it might not bake according to the minutes on the box. The instructions on the box give you a few options for pan sizes.

The material matters, tooshiny, light-colored pans reflect heat away from the cake for a perfect bake. Dark-colored metal or glass pans cause cakes to bake faster, so you may need to lower the temperature by 25F to prevent your cake from burning.

Bake your cake on the center rack unless otherwise noted and check that its done by inserting a toothpick into the center. If it comes out clean, your cake is done. Resist taking the cake out of the pan immediatelyplace the pan on a wire cooling rack and let it cool for 10 minutes and let it cool completely before frosting. Otherwise, you may end up with a sticky cake.

Be sure to store your cake correctly.

Can You Freeze Cake

Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.

Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.

I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.

For most people with severe food allergies, using a mix out of the box isnt an option, so this version allows you to select your favorite gluten-free flour.

Youll also find that the use of chocolate non-dairy milk gives this cake a moist, rich texture that will bring everyone back for seconds. You can find this dairy-free option in the refrigerated section of your grocery.

vegan vanilla cake | egg-free | dairy-free | soy-free | nut-free |

Emory celebrated her 4th birthday a few weeks ago, and I was determined to ensure she had whatever sweet treats she desired. This year she wanted cake. Specifically, cake with tons of sprinkles. As an allergy mom, I will go to the ends of the earth to ensure that Emory is offered the same experience as other kids, especially on her birthday. This year I decided to make her a 2-layer vegan funfetti cake. I scoured the internet for a recipe that checks all of her allergy boxes. After weeks of searching, I realized that there werent many recipes that didnt include allergens. Emory is sensitive to products made with sunflower, sesame, and oat. The majority of gluten-free flours contain oat flour.

Additionally, most, if not all, plant-based butter includes sunflower oil. I had my work cut out for me. Thats when I decided to come up with my recipe.

Ive been working with gluten-free flour for a while now. I am teaching myself the best methods to ensure a soft and moist outcome. When I first started making allergen-free cupcakes, cakes, and muffins, they werent the best. Often they were dense, gluey, and gummy. Not the best texture, but I was so proud to create something for my then budding toddler. Over time I have learned that gluten-free baked goods need more love and patience. Over mixing and increased baking time are my two pro-tips when working with ingredients that contain little to no fat or binders. Below is my Easy Vegan Funfetti Layer Cake recipe.
