  • In a large mixing bowl or stand mixer, combine the dry ingredients flour, sugar, pudding mix, baking powder, baking soda, and salt. Mix on low to combine.
  • Add the eggs, sour cream, oil, and vanilla extract. Mix to combine, then add in the hot water while continuing to beat. Increase the speed and beat for 1 minute.
  • Pour into the prepared bundt cake pan and spread evenly. Bake in a 350°F oven for 55 minutes, or until a long cake tester comes out clean.

    Place the chopped chocolate in a glass bowl. Shake the can of coconut milk before opening.

    Place it in a saucepan over medium heat on the stove and whisk as it heats until it just begins to simmer. Pour it slowly over the chocolate and allow it to sit 2 minutes to soften.

    Slowly stir the milk and chocolate together until completely melted and shiny.

    If the chocolate doesnât fully melt, you can place it in the microwave for increments of just 10 seconds, stirring well until fully.

    Allow the ganache to sit for 5 minutes, then spoon over the cooled cake. Wait another 10-15 minutes for the ganache to set a bit before cutting and serving.

    Do you love cake? I love cake. It used to be my most favorite dessert. Cookies now share that spot, but there is just something about a delicious piece of cake. I think cake has been one of the biggest challenges since we went gluten free. I have tried the many store bought mixes available. The only one we have ever enjoyed is the Chocolate Pamelas Products Cake. It is a truly delicious flavor and texture. But to make enough cupcakes for Man Childs class I have to buy two packages. Bummer. So I have experimented with homemade cake. I always used to make cakes from scratch before gluten free life but it seemed so intimidating without wheat flour. I have had some truly awful gluten free cakes. I mean cakes that should be totally ashamed of themselves. Or change their name to cardboard disc with frosting. A cake should not be dry, crumbly or have the density of a brick. I should not have to drink a full class of milk per bite.

    Okay, enough talking about this. Nothing Bundt Gluten Free wants to bake! Still doesnt work, huh?

    Bundt Cake Pan Substitutions

    Bundt cakes can be any cake recipe baked in a bundt pan. Bundt pans have a decorative edge with a hole in the middle to make an almost doughnut shaped cake.

    Since the cake batter makes more contact with outer and inner edges of the pan, bundt cakes conduct more heat and bake evenly throughout. If you love chewy cake edges with a moist interior, then bundt cakes are ideal!

    Since bundt pans hold so much batter, you have to be careful when substituting another cake pan. Be sure to not overfill and leave at least 2 inches space, leaving room for cake to rise in the pan and not all over your oven!

    You can make your own bundt cake pan using two 9-inch cake pans with a narrow glass jar in the middle to create the hole. A 9X13-inch pan may also be used, but you may have excess batter, which can be poured into muffin tins.

    Alternatively, a tube pan, like the one used in gluten-free angel food cake, will also work interchangeably. Just be sure to grease it well so the cake releases.

    Bundt cake pans are very deep, so they require a long baking time. If you plan on using a substitution, less time will be required for shallower pans. For either bundt cakes, or any other cake recipes, I recommend this cake tester because its more reliable than a toothpick.

    I have not tested this chocolate chip bundt cake with dairy-free sour cream, so I cannot say with certainty how it will turn out. If you do, please leave me a message in the comments below!

    Vanilla pudding mix does not contain dairy, so that is safe to use. You will also have to replace the chocolate chips with dairy-free baking chips.

    Either omit the frosting or use a simple glaze of 1 ½ cups powdered sugar mixed with 2 tablespoons dairy-free milk.

    How To Make A Gluten

  • Add sugar, flour, cocoa, baking soda, baking powder, and salt to a large mixing bowl.
  • Mix until combined and no lumps of cocoa remain.
  • Add the eggs, sour cream, oil and vanilla.
  • Beat on medium speed for 1-2 minutes. Add hot water and stir until combined. If desired, stir in chocolate chips.
  • Poor into a non-stick bundt cake pan. Tap sides to help it settle.
  • Bake as directed. Allow to cool for 10 minutes in the pan, then loosen the sides of the cake with a rubber spatula. Invert the cake on a cooling rack and allow it to settle onto the cooling rack. You can frost this gluten-free chocolate bundt cake, drizzle it with melted chocolate, or enjoy it as-is.

    For the cake:Gluten-free cooking spray or vegetable oil, for greasing the pan ½ cup unsweetened coconut milk 1½ teaspoons lemon juice ½ cup canola oil 1¼ teaspoons gluten-free vanilla extract teaspoon almond extract ¹/³ cup plus 5 teaspoons white rice flour ¼ cup brown rice flour ¼ cup plus 1½ teaspoons baking powder ½ teaspoon xanthan gum ¼ plus teaspoon kosher salt 1 cup granulated sugar ½ cup chocolate chips

    This particular store location was beautifully done and the edible treats looked delicious. On average, the store regularly offers cakes in the following flavors: red velvet, chocolate chip, white chocolate raspberry, lemon, marble, pecan praline, carrot, white white chocolate, cinnamon swirl, and a featured limited-time only flavor.

    Cakes are available in bite-sizes by the dozen , an medium individual-size bundt cake, an 8-inch cake, a 10-inch cake, and a variety of other specially-sized creations.

    The crowning touch of this businesses cakes is the amazing icing. It is a thick cream cheese and buttery frosting that is simply delicious! It comes in their signature style or the drizzle style-icing depending on your tastes.

    On our visit that day, the sales person I spoke with was very helpful. Currently, the store only offers one flavor of gluten-free bundt cake- the chocolate chip cookie dough cake with icing.
