Yesssss! This recipe uses a boxed cake mix — making it a perfect cake to bake with small kids! They can basically do everything themselves except put the cake in the oven.

Unlike some homemade cakes, this cake is very forgiving, so if you step away and your kids have added more sour cream — no biggie. You won’t have a sloppy mess of a cake if the measurements aren’t exactly right. That’s the beauty of boxed cake mix…very forgiving.
And I know Nothing Bundt Cake’s vanilla bundt cake does not contain chocolate chips, so feel free to leave these out. This cake is a hybrid between their classic vanilla and chocolate chocolate chip bundt cakes. It also ended a tiresome argument about what kind of cake we’re going to make because one is an adamant vanilla cake lover and the other chocolate.
How Close Did We Get To The Original Nothing Bundt Cake Chocolate Chocolate Chip
Our version of Nothing Bundt Cakes Chocolate Chocolate Chip Cake was nothing short of phenomenal. The combination of eggs, sour cream, and mayonnaise was the perfect recipe for keeping the cake batter light and moist.
When it came to chocolate flavor, this cake certainly had it. The chocolate pudding was rich, and the chocolate chips melted in your mouth as you took a bite. When you combined that ultra-rich chocolate flavor with the sweet, slightly tangy cream cheese frosting, it almost tasted like an Oreo cookie.
Did they have a leg up on us when it came to decoration? Perhaps. The frosting on our cake was a little clunky looking compared to the original, but these guys are experts who frost cakes every single day. From afar, you really couldn’t tell that our version wasn’t made in a professional kitchen. Up close, you might see a few imperfections, but they won’t matter once you dig in and take a bite.
Picking The Right Bundt Pan For Nothing Bundt Cakes Copycat Recipe
There are several different sizes of bundt pans, but they all share the same design. This round pan has fluted edges and a hollow center. Some pans have decorative edges to give the cake a unique shape as it bakes, but the hole in the middle is what really makes this pan shine. It allows airflow through the center of the cake, helping dense cake batters rise quickly and evenly. You could use a tube pan for this recipe, but its smooth so youll miss out on the fancy shapes around the edge of the cake.
When it comes to bundt pan sizes, we recommend using a 10-inch bundt pan. If you used an 8-inch bundt pan, youd run the risk of the batter rising above the top of the pan, creating a rounded bottom instead of a flat one. It will still taste great, but it wont sit evenly on the plate. You can easily measure the size of your bundt pan by filling it with water. If it holds 12 cups, its a 10-inch pan.

There are several popular bundt cake flavors, but their Chocolate Chocolate Chip cake is our favorite, so thats the one we decided to make. Our first step in developing copycat recipes usually begins with a look at the ingredients on the companys website. Unfortunately, Nothing Bundt Cakes doesnt say much other than their allergen disclosure: The cakes contain wheat, milk, eggs, and soy. So we had to start from scratch with this one, and we decided to keep it really simple.
We could have made the cake completely from scratch. Instead, we picked up a package of devils food cake mix and a box of instant chocolate pudding. Add in a cup of semi-sweet chocolate chips, and this cake would have a rich, super chocolatey backbone.
From there, we added the wet ingredients that would help this bundt cake achieve its characteristic level of moistness: water, canola oil, sour cream, and eggs. We could have used four eggs, but we swapped one of the eggs for mayonnaise . Finally, for the cream cheese frosting, we whipped together cream cheese, butter, powdered sugar, and vanilla extract.

What Is The Best Bundt Cake Pan
As pictured, the cake here was made in a traditional bundt cake pan. My favorite bundt pan of all time is the super swirly Nordic Ware Platinum Collection Heritage Bundt Pan. I just love the way that one comes out of the pan with such clean lines and a nice shape.
The glaze in this recipe is delicious. Its made with white chocolate melted with cream and powdered sugar. It has great flavor, and it adds just the right amount of sweetness to the exterior of this cake.
See how nice it looks? Dont worry about the glaze being gooey. Given time to set, the glaze will set just fine and harden up a little bit.

Do I have to use the cream cheese?
I would suggest it if you can get it. I havent tested this recipe out without the cream cheese, so Im not sure what the final product will be like. The cream cheese does help give the cake a nice pound cake texture though.
Do I have to use the pudding mix? I cant find the white chocolate pudding mix.
Itll probably be okay if you dont use it, but it does add additional flavor and it helps give the cake a pound cake texture. If you cant find white chocolate pudding mix, you can always use vanilla instead, it just might give it a slightly more yellow tint to it.
Can I just use a funfetti cake mix instead of a white cake mix?
Probably, I just wanted to control the amount of sprinkles in my cake and I wanted nice quality sprinkles. I havent tested this recipe out using the funfetti cake mix, but I would think it would be fine to use.
Make sure when measuring flour that you dont pack the flour when measuring it.
Spoon it into your measuring cup to measure.
Be sure to use the rainbow jimmies and not the tiny round rainbow sprinkles.
The rainbow sprinkles will bleed color into your cake batter. The jimmies wont do that like the sprinkles can.
