Gluten, Egg & Dairy-Free Chocolate Cake with Chocolate Frosting!

Due to my frustration I decided to make the damn thing myself and I used the methods of how I used to make a regular glutenous cake.

After I tweaked the ingredients and played around with it a bit to make it gluten and dairy free, voila! The worlds best tasting gluten free and dairy free Vanilla Cake!

Finally , I had a delicious cake with perfect texture! Could it be, cake that tastes like cake? The most noteworthy part of this recipe is how well it holds up and how comparable the texture is to a regular cake.

Therefore, I literally have friends and family that request this for their birthdays when they could easily get a normal cake at a bakery.

As a result of this cakes popularity, this recipe is tried and true a million times over. It has been used as the base for anything that calls for vanilla cake, especially during the holidays. It is truly the perfect gluten free birthday cake recipe.

Note: It is also important to remember that your All Purpose Flour mix is a huge part of this process, since My AP Mix makes fluffy cakes and baked goods I would highly recommend using it.

I have bought some pre-made mixes from the store that caused major recipe fails, so please keep that in mind.

What Chocolate Is Gluten Free And Dairy Free

My favorite dairy-free and gluten free chocolate chips are from Enjoy Life brand. Theyre super rich and high quality. All of Enjoy Lifes products are free of the top 8 most common allergens, which include gluten and dairy, making them safe for most people to enjoy .

If you need baking chocolate bars to chop, I really like Hu Kitchen brand, which is dairy free and gluten free. Scharffen Berger brand is the higher-quality baking chocolate that I usually turn to, and some varieties dont contain any dairy ingredients.

Some other brands of gluten free dairy free chocolate bars are some varieties from Alter Eco, Green & Blacks, and Endangered Speciesbut theyre all quite expensive.

How Do You Color A Vegan Dairy Free Red Velvet Cake

Red velvet cake got it’s name from its natural reddish hue from the chemical reaction of the vinegar and cocoa powder.

Regular or natural cocoa powder is very acidic and has a bit of a reddish brown color.

A dutch-processed or dark cocoa powder is alkalized resulting in a dark brown color, and a sweeter taste.

For this recipe, it is crucial that you use a natural cocoa powder and not a dutch processed cocoa powder if you want a vibrant red color.

A dark cocoa powder will not have any natural red color, and will be hard to overpower with food coloring.

To get a bright red, gluten and dairy free red velvet cake, you have to help the chemical reaction out a little bit with some kind of coloring.

I always use a concentrated gel food coloring to color my cake.

To Flour Pans With Cocoa Powder

  • Use a sifter to evenly drop cocoa powder over pan
  • Then, tap the pan around to get the cocoa powder to spread.
  • For the sides, you have to aggressively tap and hold the pan on its side, getting the cocoa powder to fall down onto the opposite side. Rotate as you tap so the cocoa powder will fall and coat more and more of the side of the cake pan.

How Do You Color A Red Velvet Cake Using Beets

Gluten

I’m working on a dye-free vegan red velvet cake using beets.

Until it is ready, I’d try using pureed steamed beets instead of some of the dairy free milk if you want to give a dairy free red velvet cake colored with beets a try.

Carefully Select And Measure Your Gluten Free Flour

As always, choose your all purpose gluten free flour blend carefully, and measure by weight. Here, I usually use Better Batter since I always have it on hand in bulk, and it works so well. But my Better Than Cup4Cup blend works perhaps even better .

You must measure flour, especially, using a digital kitchen scale for reliable baking results. Dry measurement cup sizes are not standardized, and its impossible to measure accurately using them, anyway.

This can easily be made dairy free or vegan with a few substitutions!

  • Substitute 1 egg with 1/4 cup of unsweetened applesauce.
  • Replace the milk with a milk substitute, like unsweetened almond milk .
  • Replace the butter with vegan or dairy free butter or vegetable oil .
  • For the cinnamon streusel topping, use a few tablespoons of vegan butter or add vegetable oil until just wet.

  • Hold it parallel to the counter top and shave off the domed part of the cake top. Do this for both layers.

When Do You Add The Oil For Vegan Red Velvet Cake

Based on some comments on my red velvet layer cake recipe, I tried mixing the oil into the flour and other dry ingredients before adding the other wet ingredients.

Someone commented on my other recipe saying a velvet cake is made by mixing the oil with the flour instead of adding it with the other wet ingredients, which gives it a velvety texture.

In a red velvet cake made with regular gluten-flour adding the oil first makes a big difference!

This is because the oil prevents some of the gluten binding together when other liquid is added, which does result in a more tender cake.

With gluten free cakes, you don’t have to worry about preventing gluten development, so I hadn’t ever bothered to add the oil before the other wet ingredients.

This time I tried adding the oil first, and to be honest I didn’t notice much of a difference in texture.

It has the same great tender crumb that my red velvet layer cake and gluten free red velvet cupcakes have.

You can mix your dairy free red velvet cake batter whichever way you prefer.

I give directions for mixing the oil first in this recipe, since that is how I made it this time.

    Whats The Best Oven Temperature For Gluten Free Vegan Chocolate Cake

    Ive tested this recipe at two different oven temperatures: at 350ºF and at 320ºF , and the slightly lower oven temperature of 320ºF gives noticeably better results, with a more even crumb, less doming and a slightly sturdier, less crumbly cake.

    The sponges baked at 350ºF rose less in the oven and also rose more unevenly, with a more pronounced dome in the centre. They were also crumblier and more difficult to level off.

    In comparison, the sponges baked at 320ºF rose higher, were almost flat so that they required minimal levelling, and they were also less crumbly and therefore easier to handle.

    So, I definitely recommend baking this gluten free vegan cake at a slightly lower oven temperature of 320ºF for best results. Note that these oven temperatures refer to a conventional/non-fan oven. If youre using a convection/fan oven reduce the temperature by 25ºF . This is a general rule of thumb that holds true for most recipes.

    Do Not Make Substitutes

    I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.
