Pro Tip For Measuring Gluten

I have found that the best way to measure gluten-free flour is to use the spoon & level method. It is always best to use a dry measuring cup to measure flour, not glass measuring cups used for liquid.

Use a spoon to scoop the flour out of the bag into a measuring cup. After spooning the flour into a measuring cup, use the back of a knife to level the flour off of the measuring cup.

Please do not use a measuring cup to scoop the flour directly out of the bag or you could get more flour than the recipe calls for.

How To Make Dairy Free And Gluten Free Banana Cake

Add in the blender the 4 eggs, the 4 ripe bananas chopped, the vegetable oil , the grounded cinnamon and the 2 cups of sugar. Add the sugar as the last ingredient so the blender wont get stuck. Blend everything well until you get a homogenous and liquid dough.

Pour the liquid in a big bowl and add the cups of rice flour one by one, mixing by hand. It will be a very smooth and liquid dough, dont worry, its normal. It will result in a super fluffy and super moist banana cake. Then add the baking powder folding gently.

Choose your favorite baking tin and grease it with vegetable oil and coat with rice flour. I use a 25 cm springform cake tin so I can easily remove the cake from the container, and itll look gorgeous when serving. I love to eat cake, even more if they look beautiful.

Pour the cake dough in the coated baking tin and be ready for my little secret. Get the flaxseeds and sprinkle them over the cake. Get the nuts and wrap them in a napkin or a clean tea towel and smash them with a meat pounder. Dont you have one? Dont worry, I used a regular hammer and worked flawlessly. After cracking the nuts carefully, sprinkle the big chunks on the top of the cake. If you love cinnamon, as I do, sprinkle a little bit on the top of the cake as well, and now we are ready to bake.

Tip For Measuring Gluten

It is super important to use a measuring cup made for dry ingredients to measure gluten-free flour. I measure the gluten-free flour with the spoon & level method.

I use a large spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

Please do not scoop the flour directly out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe.

In higher elevations, the leavening agent works twice as hard and may cause the batter to rise rapidly and sink before it√Ęs had a chance to set up.

How Do You Color A Vegan Dairy Free Red Velvet Cake

Red velvet cake got it’s name from its natural reddish hue from the chemical reaction of the vinegar and cocoa powder.

Regular or natural cocoa powder is very acidic and has a bit of a reddish brown color.

A dutch-processed or dark cocoa powder is alkalized resulting in a dark brown color, and a sweeter taste.

For this recipe, it is crucial that you use a natural cocoa powder and not a dutch processed cocoa powder if you want a vibrant red color.

A dark cocoa powder will not have any natural red color, and will be hard to overpower with food coloring.

To get a bright red, gluten and dairy free red velvet cake, you have to help the chemical reaction out a little bit with some kind of coloring.

I always use a concentrated gel food coloring to color my cake.

Can I Make This Gluten

I haven’t tried using an egg substitute in this gluten free chocolate cake but a few others have tried it with flax-egg.

How To Measure Gluten Free Flour

How you measure your gluten free flour is also very important.

To accurately measure your flour, use the fork, spoon, knife method.

First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.

Then carefully spoon it into your measuring cup.

DO NOT scoop the flour with your measuring cup, youll compact extra flour into the measuring cup and then your gluten free baked goods will be dry and crumbly because they’ll have too much flour.

Finally, level off your measuring cup using a knife.
