Gluten, Egg & Dairy-Free Chocolate Cake with Chocolate Frosting!

This cake is so simple to make that my 11yr old niece bakes it with ease. All you need a hand mixer, weighing scales and cake tin. I have no finesse in the kitchen. I usually measure and throw the ingredients together, so if I can do it anyone can.

  • Sainsburys pitted black cherries in light syrup
  • Any dark chocolate, dairy-free cocoa powder, chocolate chips and baking powder that are on offer

*TIP* Our family have intolerances. We do not need to ensure the factory is also gluten-free. If this is the case for your family, check the ingredients as many supermarkets like Aldi has gluten-free products without advertising them as gluten-free.

The cake is very moist and doesnt need anything else, but you can serve it with dairy-free ice cream. Make sure you hide a piece if you live with hungry loved ones. Enjoy x

How To Make A Flax Egg

Flax eggs are super quick and easy to make and require only 1 ingredient! Youll need ground flaxseed, water, and 5 minutes to make yourself a flax egg. Simply combine 1 Tablespoon flaxseed meal with 3 Tablespoons water, stir together and place in the fridge fro 5 minutes. After 5 minutes the flax will have absorbed the water and congealed into a thick, viscous texture reminiscent of an egg! Use your flax egg as directed in your recipe!

What Is Xanthan Gum And Why Do I Need To Use It

Wheat flour contains gluten and gluten is the binder, it holds the mixture together creating that soft fluffy texture we all love. When you are not baking with gluten that binder needs to be replaced. Typically xanthan gum is used as the binder. It works very well and has become the staple for gluten free baking.

Other binders that work well are guar gum and psyllium husk. Psyllium husk is a grain free alternative and it works, but not as well as xanthan gum.

In this recipe you can use your favorite nuts, but I have found that pecans or walnuts are my favorite for this. Feel free to use either, or blend both, but make sure to chop them up fine.

I thought it was about time that I share this gluten free chocolate cake recipe – I’m not sure why it took me so long, it is such a joy to make! My favourite part of this bake is decorating with the luscious, silky smooth dairy free chocolate ganache!

The Moist & Rich Gluten Free Vegan Chocolate Sponges

Gluten Free Chocolate Cake Recipe (dairy free, low FODMAP)

The gluten free vegan chocolate sponges are incredibly easy to make: all you have to do is melt the chocolate and oil together, combine them with the wet ingredients, sift together the dry ingredients, and then mix it all together into a luscious, chocolatey batter. Yes, thats all there is to it.

Its very important that you keep the ingredient ratios as theyre listed in the recipe below Ive optimised the recipe to give gluten free vegan chocolate sponges that taste just like the regular equivalents. So, theyre perfectly moist and soft and rich, but without being too delicate or too crumbly.

That means that you can easily handle, level and stack them without having to worry about them cracking or crumbling! Just make sure that theyre completely cooled to room temperature before you level them and start assembling the cake. Hot or warm sponges are much more delicate, so resist the temptation to handle them too much before theyre fully cooled.

Of course! Ive frozen it for up to 2-3 months no problem. Ideally, slice up the cake first before freezing that way you can simply defrost slices as and when you need them.

Plus, itll thaw a lot quicker. When you want to eat it, each slice should take around 4 hours to defrost at room temperature.

How To Make Gluten Free Coffee Cake

  • Preheat oven to 350°F and grease a 9Ã13 baking dish with butter or cooking spray. In a stand mixer, cream together the butter and white sugar until just combined. On medium-low speed, add the brown sugar and vanilla extract. Add one egg at a time until just combined. Be careful not to over-mix the wet ingredients.
  • In a separate medium bowl, whisk together the dry ingredients until evenly combined.
  • Set the mixer on medium and add the dry ingredients and sour cream. Then slowly pour in the milk. Stop the mixer and use a spatula to scrape the sides and bottom of the bowl, then mix again until combined. Add the cake batter to the prepared baking dish, using a spatula to spread it evenly.
  • In a separate bowl, mix together all of the topping dry ingredients with the melted butter until everything looks wet, then evenly sprinkle topping over the cake batter.
  • Bake uncovered for 30-35 minutes, or until a toothpick comes out clean.

    Easy 3 Ingredient Cherry Dump Cake

    Like I said before, no bowls, no mixing, only 5 minutes! Letâs make a Cherry Dump Cake.

    In a 13Ã9 inch cake pan, dump 2 cans of cherry pie filling and spread evenly. Over the top of the cherry filling, pour a gluten free vanilla cake mix evenly over the top. Take ¾ cup of refined coconut oil , and place small lumps all over the cake mix. These pieces of coconut oil or butter will melt in the oven and cook into the cake mix as it all comes together.

    Bake this cake at 350 for 40 minutes. About half way through , check the cake and fill in any big dry cake spots you see with a little bit of coconut oil or butter again. Let it finish baking until the top is golden brown and cherry is peeking through the top. Let it cool , and serve with ice cream or our FAVORITE coconut whipped cream from Minimalist Baker. Enjoy!

    • To make your own buttermilk: Add 1 tablespoon of white vinegar or lemon juice to milk or dairy-free milk and allow to sit for a few minutes.
    • In a medium-sized bowl add gluten-free flour with xanthan gum, salt, baking soda, gluten-free baking powder, cocoa powder, and cinnamon. Stir to combine the ingredients.
    • In a large bowl cream the softened butter and sugar with a mixer, until fluffy.
    • Add the eggs and pure vanilla extract to the butter mixture and mix until fully combined.
    • Add the flour mixture to the butter mixture and mix until fully combined. Scrape down the sides if needed.
    • Add the homemade buttermilk to the cake batter and mix until fully combined.
    • Add the boiling water to the cake batter and mix until fully combined and smooth.
    • Pour half of the batter into the first greased 9-inch cake pan and then pour the rest of the batter into the second greased 9-inch cake pan.
    • Bake on the middle rack for 30-35 minutes. Please watch your cakes because all ovens are different.
    • Check the center of the cake by inserting a toothpick to make sure it is done. You will also see the sides of the cake pulling away from the side of the pan.
    • Allow the cakes to cool fully before frosting. I like to cool cakes on a baking rack.
    • Store leftovers in an air-tight container.

    My Favorite Pans For Gluten Free Carrot Cake And Cupcakes

    This recipe is designed to be made either in 2 8-inch round cake pans, or the standard wells of a 12-cup muffin tin. I always recommend baking in cast aluminum, which conducts heat well but not too well, and is light in color so it doesnt burn the outside by attracting too much heat in the oven.

    Since the recipe calls for 4 eggs, you can easily cut the ingredients in half, right down the middle, and make either 1 cake or just 12 cupcakes. The cupcakes do freeze really well, though, if you make the whole recipe but dont have a need for all 24.

    If your pan is 9-inches in diameter, rather than 8-inches, it will make shorter cakes that bake faster. Begin checking at 25 minutes.

    Keep in mind that theres no truly standard size well in a standard 12-cup muffin tin. So you may get more or fewer cupcakes than the recipe states.
