German Chocolate Cake Consists Of Three Components

Because its a bit more labor intensive than a two-part cake, I like to do it in stages. I make the cake early and freeze it. Then I just thaw it in the fridge the night before frosting it.

You can make the coconut pecan filling a day or two in advance store it in an air tight container. Bring it to room temp by leaving it on the counter for an hour or two before youre ready to frost the cake.

I like to make the buttercream the day of, as that just always seems to work the best.

You can make the buttercream in advance and store it in the fridge , but you have to bring it to room temp and whip it again before using.

How To Freeze The Cakes For Later Use

These cakes freeze very well! Freezing them in advance makes the assembly much easier, especially since theres a three step process to the German chocolate cake.

To freeze, wrap each cake individually in cling wrap, and cover with a layer of tin foil. Freeze for up to 2 months.

To use after freezing, allow the cakes to thaw in the fridge for 24 hours. Take them out of the wrapping and set them out on a tray at room temperature for 2 hours. Frost as desired.

Layer Cakes And Leftovers

When my mom made her German Chocolate Cake it had three layers and was served without icing. This quinoa chocolate cake recipe only makes two layers. You can make your cake with just two layers . I wanted my cake to look the way my mom made hers so I made a three-layer cake.

To get three layers I simply made the recipe twice. I used three layers and put the extra layer in the freezer, perfect for emergency use. You could use that batter to make cupcakes instead. Here is my suggestion for that kind of food emergency.

The filling recipe makes a generous portion, too much really for the three-layer cake. But the recipe uses a whole can of evaporated milk and I like recipes that use the whole can . The excess filling also keeps in the fridge for weeks so I dont think its a problem. Then one night, the night of a food emergency, when you are looking in the fridge youll see it. If you have that single cake layer in the freezer you can make yourself a few pieces of layered cake. Simply cut the cake into four, six or eight wedges. Use the leftover filling and make a few pieces of layered cake. Now thats what I call leftovers!

What Is German Chocolate Cake

Many people actually dont know that German Chocolate cake is not German. Its actually named after the baker, Samuel German, who was credited with inventing this delicious creation in America in 1852.

I discuss this a bit more in my cookbook, but its often confused that German chocolate cake originated in Germany. Quite the opposite!

Its a one bowl delicious, moist chocolate cake layered with a sticky pecan coconut custard filling made with evaporated milk and eggs.

However, the original creation is obviously not vegan so we must veganize both the chocolate cake and the custard filling, which is actually quite easy.

And even better yet, this chocolate coconut pecan cake can easily be made gluten free as well!

How To Make Dark German Chocolate Cake:

  • Sift the dry ingredients together in the bowl of your mixer
  • Whisk together the eggs, milk, oil, and vanilla then mix them into the dry ingredients until combined
  • Divide batter between two buttered round cake pans and bake about 25 to 35 minutes until toothpick comes out with a few crumbs cool the cakes in their baking pans
  • Make caramel for the filling, cooking the sugar and water until it gets to a medium caramel color, 5 to 15 minutes depending on the heaviness of your pan
  • Very carefully stir in the cream it will bubble up vigorously and splatter stir in the nuts and coconut and keep warm
  • Place one layer of cake on a serving plate top with half the caramel mixture, spreading out to just barely reaching the edges of the cake

    I discovered that German chocolate cake isnt German at all! Its just called that because of the American chocolate maker and baker that invented it. Basically, its a standard chocolate layer cake topped with coconut pecan frosting. Coconut, pecans, and chocolate? Sign me up!

    But as always I had to put my own personal spin on the traditional recipe. Instead of making the frosting coconut and pecan flavored, I actually put coconut and pecans right in the chocolate cake batter to enhance the flavor even more!

    • Add your eggs and sugar to a mixing bowl and mix on high for 3 minutes until it becomes a little light and frothy.
