This is really my daughter Candice’s recipe. She always goes to this recipe when she feels the urge for a chocolate cake. The mayo makes this cake really moist and the icing is so creamy, not sugary sweet like the confectioners sugar types….love this cake, love the icing!!This is a easy cake to make anytime as most everyone has the ingredients always on hand and the mayo replaces the fat and the eggs!!

How To Make A Chocolate Mayonnaise Cake

This super moist chocolate cake with mayonnaise recipe is quick and fast. Just dump all ingredients into a bowl to mix, then pour into a dish to bake. Heres an overview with full instructions at the bottom of this post:

  • Prep Preheat the oven to 350°F and spray a 9×13 baking dish with oil.
  • Mix Ingredients Add the cake mix, eggs, mayonnaise, and milk to a bowl. Mix together thoroughly by hand or with an electric mixer.
  • Bake Pour the batter into the prepared baking dish. Bake it for 30-35 minutes, or until a toothpick comes out clean when poked through the center. Remove from the oven and let it cool completely.

    And theres a secret ingredient that no on would suspect: mayonnaise! Apparently this was a super popular recipe back in the day, my mom told me how much everyone loved it. So Im not sure why I hadnt heard of it until recently.

    Better later than never though because Im totally smitten with this chocolate mayo cake.

    Now pull out that mayonnaise and get baking! I know it may sound weird but it just works, this is such a dreamy cake and youll have everyone savoring every last bite! You can even add your own unique twist and try this cake with a chocolate fudge frosting or another frosting of choice.

    How To Make Grandmas Chocolate Mayonnaise Cake

    Step 1: Start by adding your dry ingredients into a bowl and mix until combined. Set your medium bowl combined with flour and other dry ingerdients to the side.

    Step 2: Then in a bowl, you will add all your wet ingredients except water. Mix until it becomes creamy. Mix in the Mayonnaise.

    Step 3: Now alternate adding water and dry ingredients mixing a little at a time. End with adding dry ingredients into the cake mixture.

    Step 4: Lightly grease and lightly flour your cake pan and pour the cake batter into the pan. Preheat oven to 350 degrees and bake until the cake is fully cooked.

    Use a toothpick to insert into the cake to see if it comes out clean with no cake batter on it. When it does place cake pan on cooling rack to cool completely.

    Step 5: Once your cake is cooled, work on the chocolate whipped cream frosting. Mix in a bowl with an electric mixer or spatula or whisk until light and fluffy.

    Spread onto cake evenly, and serve up this incredible dessert.

    • Flour All-purpose flour works perfectly in this recipe. Make sure you measure it correctly by giving your flour a stir, than spooning it into your dry measuring cup, then leveling it off. Dont measure by scooping the flour with the measuring cup this compacts the flour and results in a bit too much four in the recipe.
    • Unsweetened Cocoa Powder While regular unsweetened cocoa powder works perfectly in this recipe, I also love using Dark Cocoa Powder for an even richer chocolate taste.
    • Sugar Granulated white sugar.
    • Eggs Make sure to use large size eggs.
    • Mayonnaise I prefer to use a full fat mayonnaise for the best results. Also, make sure not to use something like Miracle Whip. Stick with a simple, basic mayonnaise.
    • Water The recipe calls or water, but you can also use a cooled cup of plain coffee, or add instant coffee to the water prior to mixing it into the cake. It will not taste like coffee, it just gives it a deeper chocolate flavor.

    My grandparents lived on a farm and lived through the Great Depression. So Im sure you understand that they would use up everything they could, since you didnt know when you be able to get that something again.

    Things like envelopes became note paper, and at some point, my Grandma must have come across an old financial ledger that wasnt being used.

    So what did she do? Yes, youre right. Thats when she started to write down her famous recipes.

    Or she would clip them from the weekly newspaper. Thats how I found so many of her old recipes, including this one from Hellmans Mayonnaise.

    Many of these recipes were from the 40s and 50s, so maybe I should have used the word vintage instead. But when I think of my Grandma, vintage doesnt come to mind.

    She was a delight, and certainly very old-fashioned by todays standards.

    I remember visiting during the summer months and staying for a week or two. We always had so much fun, playing with the neighbourhood kids, catching frogs in the creek behind their house, watching thunderstorms in the summer porch.
