Cake Decorating, How to Ice a 1/2 Sheet Cake In Butter Cream

Deciding which sheet cake size suits your occasion best can be challenging and once you have established the number of people attending you must look carefully at how many servings you require to satisfy the guests. Several factors affect the how you determine how many people a sheet cake feeds. Generally the following guidelines can apply when choosing a sheet cake size:

  • Quarter Sheet Cake: This cake serves 12 to 20 people and is perfect as a finale for a neighborhood block party, a child’s party or small office celebration. Most home chefs can handle this size easily and have no problem creating double and even triple layers to delight their guests.
  • Half Sheet Cake: This cake serves 18 to 40 people and is the treat you will see when attending a store launch at your local grocery store or a fancy party for a couple reaching their 25th year of marriage. The surface provides a large area for decoration and writing a more detailed message. These cakes are substantial but still light enough to handle with a little care and planning.
  • Full Sheet Cake: Approximately 48 to 96 people are easily served with this spectacular confection. Multiple layered full sheets are quite challenging to manipulate without a great deal of room, a calibrated oven that creates even layers, and a game plan to store and transport the finished product. These cakes are perfect for grand occasions requiring company logos or extravagant embellishments of icing and spun sugar.

How Big Is 1/2 Sheet Cake Confused

Updated 2 Feb 2007 , 6:35pmby vdrsolo

Please help… I’m so confused! All of this time I though a 1/2 sheet cake was approx 11×15 so that’s what I’ve been selling my customers. But I’ve been looking around today and saw someone say that a 1/2 sheet was approx. 12×24. I got worried that I’ve been selling my customers short so I called the ‘legal’ lady in town but she closes at 1pm. Out of desperation I called Kroger to see what my customers are expecting their 1/2 sheet cakes to be and she told me that a 1/2 sheet is two 9×13 together – making it 18×26. Of course, a light came on and I was like, ‘DUH’ because it makes alot of sense – since a 1/4 sheet is 9×13. Can someone please tell me if this is right or not? What are you selling as a 1/2 sheet?

I don’t know the answer, but I would like to know too. Here is a bump!

1/2 is approx. 12×18 but it varies from place to place. 1/3 is approx. 11×15 and 1/4 is 9×13 HTH

In my area the measurements are 9/13 = 1/4 sheet

I found this on Yahoo – “A full sheet cake is 18″ x 24″, and will serve 70 to 80 people. A 1/4 sheet cake is 9″ x 12”. That means a 1/2 sheet should be 12″ x 18″ and serve 35 to 40 people I think.

Indydebi – that isn’t a bad idea. I think maybe I’ll go that route from now on. Thanks for the advice, everyone!

Let The Cake Cool Before Frosting

When you make a sheet cake, you will want to let the cake cool completely before topping it off with frosting. It’s best to plan a minimum of at least 30 minutes for cooling time once the cake is out of the oven. This avoids troublesome and melting buttercream.

How Many Servings Are in a Sheet Cake?

Heres how to do the math.

Planning a party? You dont want to find yourself with too little or too much cake. Prepare accordingly with this super simple 3-step way to calculate just how many servings your sheet cake pan will produce.

First things first: Youll need to measure your pan. Here are some common sheet cake pan measurements:

  • Full sheet cake: 18 x 26
  • Half sheet cake: 13 x 18
  • Quarter sheet cake: 9 x 23

OK, this is where things get slightly more complicated. If youre not a math whiz, you may want to grab a calculator.

Lets say youre using a full-sized sheet cake pan:

1. Find the area of your pan .

To find the area, multiply the width by the length.

18 × 26 = 468

2. Now, lets say each of your slices will measure 2 x 2.Find the slices surface in the same way you found the pans surface area.

2 × 2 = 4

3. Still with me? Good. Heres the final step: Divide the pans surface area by the slices surface area.

468 ÷ 4 = 117

And there ya have it! A full-sized sheet cake pan will produce 117 2 x 2 pieces.

Is your pan smaller? No worrieswe did the math for you.

A half-sized sheet pan will make 58 servings and a quarter-sized pan will make 30 servings.

If you suspect your guests will try to sneak slightly larger pieces of cake , just perform the steps above with different slice dimensions.

Help! My frosting was super lumpy after I added in the confectioners sugar. What did I do wrong?

Absolutely nothing. When you first add the confectioners sugar to the rest of the frosting, it will look super lumpy. This is totally normalI promise! Just keep whisking everything over medium-low heat until the lumps smoothen themselves out. If, after 5 minutes, your frosting still looks super lumpy, dont panic! Instead, turn the stovetop up to medium and whisk continuously. The higher heat will help smoothen the frosting.

Help! I made the frosting too soon and it set and developed a crust on top before the cake was done. What can I do to fix it?

Ah, yes. Throughout this blog post, I repeatedly warn you that the frostings surface has a tendency to crust if made too soon. But dont worry, its fixable! Simply keep the frosting in the saucepan over medium-low heat, and whisk continuously to dissolve the crust. Continue whisking over very low heat until the frosting is ready to be poured over the cake.

Is 12×18 Sheet Pan Considered 1/2 Sheet Or Full Sheet Pan

Updated 15 Jun 2012 , 10:28pmby CWR41

and how many slices would I get if I used this sz pan? thanks so much!

Yes, that would be considered a 1/2 sheet. There are people who think a 9×13 OR 12×16 are a 1/2 sheet alsoIf the cake you make w/the 12×18 is 2″ deep/tall then to figure servings you would figure 6 times 9 = 54.If the cake is 4″ tall then you use the wedding cake size of 1x2x4 and get 108 servings.

A 12 X18 sheet pan is the standard half sheet for professional bakeries and cut into 2 x 2 inches serves 54 people.

thank you so much, doing some research and noticed that the full sheet pans do not fit into the standard sized oven, so I will have to go with this 12×18 pan,

that’s great info, was wondering what the bakeries use

Full Sheet = 16×24 .Additional full sheet info:A commercial Bun pan is 18″ x 26″ , and because they are tapered for nesting or making them stackable, the inside measurement is 16.5″ x 24.5″.A commercial full sheet is 16″ x 24″. They are baked in 16″ x 24″ bakeable cardboard trays that fit into the Bun pans which are used during baking for support and handling purposes.A true commercial full sheet serves 96 .

…….. information on sizes and commercial full sheets: 1/4 Sheet = 9×13 ……No. A 1/4 sheet is 8″x12″x2.If a 1/4 sheet is 9×13 why do they not make a board and box to fit it?? The board and box is made for a 12×8.

Icing a Quarter Sheet Cake with an Easy Icer and adding two borders!

    Updated 5 Oct 2006 , 6:26amby jayla

Could someone inform me what size is considered a 1/4 sheet cake, 1/2 and full?

    At the bakery I worked at we used the following:1/4 sheet – 9 x 131/2 sheet – 11 x 153/4 sheet – 12 x 18Full sheet – 16 x 24

I have a 12x18x2 and it says “half sheet cake pan” on it. So I would consider two of these a full sheet cake and half of one of these as a 1/4. You’ll find different places use different measurements…..always make sure your customer knows what YOU consider to be a full, half and quarter sheet.

Where i work our 1/4 sheet is 9×13, our 1/2 sheet is 12×18 and our full sheet is 18×26

Are there cake boards and boxes to hold a 18 x 26 inch cake? And where is the best place to buy them?

How To Decorate A Half Sheet Cake

    Half Sheet Cake

Half sheet cakes are most commonly decorated with buttercream frosting or ganache. Given its flat surface, you can easily achieve a smooth-frosted look by spreading your frosting evenly on all five sides of the cake, though i personally prefer a more textured rustic look.

After youve covered up all sides of the cake, you can use the remaining frosting to give your cake a nice border. You can do so by piping along the edges of the cake using your choice of a piping tip. I suggest a 1M star tip or a 6B french star tip.

The border will act as a nice frame for any writing or edible printed picture you want to put on the cake. If a bordered look isnt your cup of tea, another easy way to decorate your half sheet cake is to pipe rosettes all over it. This is a super easy way to give your homemade cake that professional look.

As with any cake, youd always want to present it on a cake board. I always recommend using a waxed, grease-resistant board to prevent your cake from sliding.

Make sure to size up a little when choosing your box and your board to prevent damaging your cake. Trust me, you do not want all that hard work you put into piping the borders and frosting to go to waste. Go for something that is around 19 x 14 x 4.

Let Your Cold Ingredients Come To Room Temperature

Most sheet cake recipes will call for refrigerated products like eggs, butter, milk, or yogurt. Unless the recipe specifies otherwise, it’s a good idea to take these ingredients out of the fridge first thing. At room temperature, they’ll mix and incorporate into the batter much better. The end result yields a cake that is lighter and more tender, which is what you’re looking for in an ideal sheet cake.

Making Your Own Half Sheet Cakes

If you want to save a trip to the grocery store or bakery, you can make your own half sheet cakes at home. You can either use sheet cake recipes, that call for a 13-inch by 9-inch pan, or use cake mix.

If you use a boxed cake mix to make a half sheet cake, you will need three boxes of cake mix. For the two-layer cake, youâll need six boxes of cake mix and two 13-inch by 9-inch pans. It is always best to cook layer cakes at the same time so they both get an even bake.
