Spray your pan with baking spray or non stick vegetable spray before filling with the cake batter to prevent your cake from sticking. You can also use a parchment paper circle in the bottom of the pan for easier removal. Simply lay the parchment paper circle on top of the sprayed pan and fill with batter. The parchment paper does not need to be sprayed again.

Using a parchment paper circle is a great way to get a nice, smooth finish on your top cake layer. Simply peel the parchment from your cooled cake and youre ready to go.

To make this delicious frosting, youll need a large mixing bowl or a large bowl for a stand mixer.

  • Add cocoa to large bowl or bowl of stand mixer. Whisk through the cocoa well to remove any lumps.
  • Then, add softened butter to the bowl with cocoa. Cream together the butter and cocoa powder until well-combined.
  • Next, alternately add sugar and milk to the cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer onto a HIGH speed for about a minute. Repeat until all sugar and milk have been added. This is important so please make sure to mix it just as described in these instructions. It makes the frosting into fluffy, delicious perfection!
  • Then add your vanilla extract and espresso powder and combine well.
  • If your frosting appears too dry, add more milk, only one tablespoon at a time until it reaches the right consistency.

    To me, making the best moist cake comes down to one ingredient: oil. It’s an absolute must for this recipe, and here’s why. First, oil is liquid, and is liquid at room temperature, unlike butter. This means, because science, that the cake is going to have a more moist sensation, and remains moist for longer. Because butter solidifies at room temperature, the cake, as it cools, tends to get more crumbly. Second: butter is actually 80% fat and 20% liquid . When the dry ingredients interact with the butter then, they’re mixing with both fat and water. Water + flour = gluten, meaning that you’re cake is going to be relatively tough.   • Preheat oven to 350 degrees
  • Grease and flour THREE 8 inch cake pans
  • In a mixing bowl, add the dry ingredients: sugar, flour, cocoa, baking soda, baking powder, and salt. Whisk for 1 minute to blend.
  • Add softened butter a few pieces at a time while the mixer is on low speed. Mix until the dry ingredients look like coarse sand and the dry ingredients are moistened. Scrape the bottom and sides of the bowl.
  • In a separate bowl whisk the eggs, milk , oil and vanilla until blended.
  • Method is important when using the Reverse Creaming Method. With the mixer on low speed, SLOWLY add approximately 1/2 of the egg mixture to the dry ingredients. Increase the speed to medium and mix for 1 1/2 minutes at medium speed. Don’t mix above medium speed. Scrape the bottom and sides of bowl. Add the remaining egg mixture in 2 pourings, beating for 20 seconds after each pour. Scrape the sides and bottom of bowl.
  • Slowly add the cup of hot coffee and mix another 30 seconds until blended. The batter will be very runny. Don’t worry!

    How To Make Chocolate Cake:

    Mix Dry Ingredients. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.

    Addwet ingredients:. Eggs, buttermilk, oil and vanilla and mix until well combined.

    Add boiling water. Stir to combine . Pour batter into prepared pans.

    Bake 30 to 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Allow cakes to cool in the pan for a few minutes before inverting onto a cooling rack. Cool completely before frosting.

    Assemble and Frost: Place one cake layer on serving tray. Spread a generous amount of frosting on top. Add second cake layer. Frost top and sides of cake with remaining frosting.

    I remembered reading about a style of cake known as a Depression Cake. Not depression as in a negative emotional state, but depression as in Great Depression. No milk, no butter, no eggs and no fancy electric mixer needed.

    I found a recipe and made a few changes this wasnt The Great Depression after all.

    The main change was substituting coffee for half of the water in the recipe. Coffee gives a richer deeper flavour to chocolate cakes but you cant taste any trace of the coffee in the finished cake at all you wouldnt even know it was there.

    Essentially, you mix together the dry ingredients and then add the vinegar, vanilla and oil. Using a fork, you mix all this together until it is well combined. Its like a dry crumbly pastry dough at this stage. To be honest, it looked a lot like soil actually.

    Then you add the cold water and coffee and mix vigorously. Mix, mix, mix. Get those arm muscles into it. Its actually not too hard to get the bake batter to a good lump-free consistency .

    Simple Chocolate Cake Batter

    Into the spring form tin and pop into the oven. One bonus of so little baking equipment was that cleaning up was a breeze.

    The smell of chocolate cake baking filled the house. Mouths were watering. Hungry family members made tentative forays in the kitchen to check on the progress of the cake and calculate when their first slice would be served.
