I developed and published a pineapple upside down cake recipe several years ago. Its certainly loved by many, but the cake is prone to overflowing because theres quite a lot of batter. Additionally, it can taste overly wet and the instructions were never written very clearly. As a cookbook author and baker, Ive certainly improved my craft over the years!

My improved pineapple upside down cake recipe, written below, is much softer than my original. Using creamed butter instead of melted, cake flour instead of all-purpose flour, all white sugar instead of brown sugar + white, and using egg whites guarantees a huge textural difference. I adapted it from my white cake. My new recipe doesnt yield as much cake batter, so we dont have to worry about overflowing.

The pineapple cherry topping remains the same. You dont mess with perfection.

How Do You Pick A Good Pineapple

To pick a good pineapple go for one that looks plump and fresh . Then smell the bottom of the pineapple, it should have a distinctive pineapple scent . And also I tend to favor Dole pineapple, they always seem to taste the best.

To tell when its ripe the color of the pineapples exterior should be yellow, it should be somewhat soft, and one of the center leaves should be easy to pull out.

But as mentioned before it doesnt have to be perfectly ripe for this recipe, but it should be hard and super green either.

Can I Make A Layered Pineapple Upside

Sort of. You can make a yellow cake mix according to the boxs directions but add a full can of crushed pineapple in place of water. Add some diced maraschino cherries, if you like. Bake in two 8 round pans and layer with buttercream frosting and rings of pineapple between them, along with more maraschino cherries.

Whipping Up This Cake Is As Easy As 1

1: Melt your butter in the bottom of a 9×13 pan and sprinkle the brown sugar across the melted butter. I love the tartness of salted butter but you might prefer unsalted butter. If you prefer to use a round cake pan, use a 10-inch cake pan.

2. Place your pineapple rings and maraschino cherries on top of the brown sugar.

3. Make your yellow cake mix according to directions, replacing the water with the reserved pineapple juice. I used a stand mixer with the paddle attachment but you could certainly mix by hand in a medium bowl or use a hand mixer.

Once youve got it mixed, pour the cake batter over the fruit and bake in a preheated 350 degree oven for 42-45 minutes or until the cake springs back to the touch.

Run a knife around around the sides of the pan then cool for a few minutes on a wire rack. Flip the cake onto a heat-proof dish or tray and leave the baking pan on top for five minutes so any excess liquid can drain down. Remove the pan and allow the cake to cool for 15 minutes before slicing and serving.

The top of this cake is ooey, gooey, caramelly, and delicious! The sweet pineapple flavor will leave you hankering for the tropics!

There is nothing to fear with this step! And most importantly, I have NEVER had problems with the pineapple sticking to the cake pan and as you can see, I do not use a non-stick pan!

  • Cover cake pan with a plate or serving platter

  • Flip with confidence now is not the time to hesitate!

  • Lift the cake pan off slowly and voila!

  • PRO TIP: If, when lifting off the inverted cake pan , you can tell that the base is sticking, tap the base gently and/or shake gently. This will help loosen it. That said, with the amount of butter used in the base to make the caramel sauce that soaks into the pineapple topping, it is highly improbable that youll encounter sticking issues. But stranger things have happened in life!

    This is not a very tall cake. It stands around 4cm/ 1.6 tall using a 23cm/9 cake pan. A smaller cake pan would make it stand taller but it would take too long for the middle of the cake to cook before the caramel on the base becomes too brown, I think.

    Also, at this height, you have a nice ratio of cake to caramelised pineapple.

    • Unsalted butter to soften butter I like to microwave in short bursts on a plate, about 5 seconds per side and rotate until just soft not melting.
    • Light brown sugar and granulated sugar be sure not to swap the brown sugar for more white for best flavor.
    • Fresh pineapple it doesnt have to be perfectly ripe. Mine was a bit under-ripe this time and it worked well paired with the sweetness of the sugar topping.

    • Baking powder be sure your baking powder isnt out dated so the cake rises properly. And of course dont over-mix the batter.
    • Salt salted butter will work too, just omit the salt in the recipe.
    • Eggs no need to use room temperature eggs here, I just add them cold.
    • Vanilla extract vanilla bean paste would be a good substitute here.
    • Milk use any fat percentage but skim. Stick with cows milk for best results, unless theres an allergy.

    • Preheat oven to 350 degrees. Spray a 9 by 2-inch cake pan with non-stick cooking spray.
    • In a mixing bowl whisk together brown sugar and 1/4 cup melted butter then pour into prepared cake pan and spread into an even layer, set aside.
    • Spread pineapple chunks in rows over brown sugar layer . Set aside.
    • In a mixing bowl whisk together flour, baking powder, and salt, set aside.
    • In the bowl of an electric stand mixer whip together granulated sugar and softened butter until pale and fluffy .
    • Mix in one egg, then mix in second egg and vanilla.
    • Mix in flour in 3 additions alternating with 2 additions of milk.
    • Pour and spread batter evenly over pineapple layer. Bake in preheated oven until toothpick inserted into center comes out clean, about 35 40 minutes.
    • Remove and let cool on wire rack 10 minutes. Run an offset spatula or knife around edges to ensure its loosened then invert onto a serving platter.
    • If topping with whipped cream let cool completely. Garnish with cherries if desired.
