How To Make Salmon Cakes Aka Salmon Patties

How To Make Homemade Salmon Fishcakes
  • Prep the salmon. If you buy salmon with the skin on, use a really sharp knife and place it right under the skin at the very end of the fillet. Make an incision and cut to make a flap so you can hold it with your left hand. With your right hand, hold the knife parallel to the cutting board and cut as closely between the salmon skin and the salmon meat, until you cut all the way across. You can choose to cut off all the gray/brown parts that are close to the salmon skin.
  • Pulse the salmon in a food processor. Cut the salmon into 2-3 inch chunks. Place the salmon into a food processor and pulse it in batches. The fish should not be mushy and pureed, rather have a coarse texture, and be flaky. I pulsed my fish about 3 pulses only.
  • Cook the onion in a skillet until tender and translucent. Cool slightly.
  • Combine all the ingredients for the salmon cakes in a large bowl. Place the salmon, cooked onion, egg, mayonnaise, capers, lemon juice, mustard, hot sauce, parsley, 4 Tablespoons of breadcrumbs, salt and pepper in a large bowl and mix to combine.
  • Shape the salmon mixture into salmon patties. An ice cream scoop is the perfect tool to portion out the salmon cakes. You can also use your hands. I like to make the salmon patties into 2-3 inch circles.
  • Dredge the portioned salmon cakes in the breadcrumbs. Use your hands to tightly pat the breadcrumbs into the salmon.
  • Ingredients For Salmon Cakes:

    1 medium onion 1/2 red bell pepper, diced 3 Tbsp unsalted butter, divided 1 cup Panko bread crumbs 2 large eggs, lightly beaten 3 Tbsp mayo 1 tsp Worcestershire sauce 1/4 cup minced fresh parsley

    *Note: Fresh salmon is best, but it can be substituted with leftover cooked salmon, or 14-15 oz of well-drained canned salmon, or three 5 oz salmon packets. If mixture is too moist to hold the patty shape, add more bread crumbs and if it is too dry, add an extra Tablespoon of mayo.

    What Other Fish Can Be Used Instead Of Salmon

    Other fish very similar to salmon, such as steelhead trout, work great in this recipe, but you can honestly use most other fish too, like cod, haddock, tilapia, snapper, trout, grouper, etc.

    Can Salmon Patties Be Frozen

    Yes! To freeze before frying or baking, form the salmon mixture into patties and place on a lined baking sheet. Freeze for 1 hour. Remove the patties from the freezer, wrap individually in plastic wrap, and store in an airtight container for up to 3 months.

    I recommend thawing the patties in the refrigerator overnight before frying.

    To bake frozen salmon patties directly from the freezer: remove the salmon patties from the freezer wrapping and place on a lined baking sheet. Bake for 30 minutes at 375 degrees F, flipping halfway through.

    How Do You Get The Salmon Patties Crispy

    Wild Salmon Cakes

    The mayo in the salmon patties helps encourage browning, but its also going to be about using a good heavy bottom skillet over medium heat and searing in oil. While olive oil is fine for searing, I prefer avocado oil because it has a very high smoke point .

    Add enough oil to coat the pan and let it preheat heat. Dont overcrowd the patties in the pan, but cook them in batches. This helps prevents them from steaming and gives you room to flip them as needed. I cook mine a few minutes per side and use a metal spatula to flip as needed.

    Can I Freeze These

    Want to freeze your salmon cakes? You can do that too! I recommend freezing them before you cook them. To do this, place the salmon cakes on a lined baking sheet that will fit into your freezer and then freeze them in a single layer for 1-2 hours. Once they are frozen through, wrap each patty in plastic wrap and place it in an airtight, freezer safe container. These will keep for 3 months.

    When you are ready to eat the patties, let them thaw overnight in the fridge. Then proceed with the rest of the recipe above, cooking them as if you had just formed the patties.

    Tips For Storage Freezing And Reheating:

    Storing- Let them cool completely before putting them into a container. This prevents sticking.

    Freezing- If freeing, place them on a plate individually and let them set up in the freezer for 30-45 minutes before placing them in a freezer safe bag and storing.

    Reheating- I love to reheat in the air fryer! I put mine in for about 3-4 minutes at 370 F. or until heated through.

    How To Make Ahead Or Freeze For Later

    To make ahead, mix and shape your patties. Lay them on a cookie sheet and cover with plastic wrap. Refrigerate up to two days before baking. You can also mix them and just put the bowl in the fridge. Shape them just before baking.

    Freeze them already baked or shape them into cakes and place on a cookie sheet. Freeze solid, then transfer them to an air tight container. Baking from frozen is allowedyou would just need to tack on an additional 20 minutes or so to the cooking time.

    1. Your first step is to preheat your oven to the “keep warm” setting. You’ll keep the first batch of cooked salmon patties in the warm oven as you cook the second batch.

    2. Now drain the salmon cans thoroughly. Place the salmon in a large bowl. Flake it well with a fork, into tiny pieces. Both the thorough drying and thorough mixing will help prevent the patties from falling apart.

    3. Add the remaining ingredients and mix everything really well.

    4. Cook the cakes in hot olive oil. I use an ice cream scoop to scoop the mixture out of the bowl. You should pack the mixture into the scoop – I press on it with a fork. It helps the cakes retain their shape. Cook the patties until well-browned and crispy, about 3 minutes on each side.

    How To Serve Salmon Patties

    You can just serve the potato and salmon patties as they are on a plate with a side or two, but they also work marvelously in bread or a bun to form a fish sandwich.

  • Mix the canned salmon with egg , along with bread crumbs, green onions, parmesan, and lime juice .
  • Form the salmon patties by hand and place them in screaming hot oil in a frying pan . The screaming hot part is necessary to get that nice crispy outside.
  • Once they are crispy and golden brown on the bottom, flip them once to get crispy on the other side . Once done, serve hot with your favorite sides.

    Believe it or not, I never really watched my Mom cook these patties. But Ive made the dish many times since my childhood and it goes together really easily.

    The first step is to just crush the crackers. I dont know how Mom did this but I use a plastic bag. Just load the crackers in the bag and crush.

    Now that you have the two important components to make the Southern salmon patties and grits meal, all we have to do is put them together.

    Put the mashed potatoes , salmon or fish of choice, egg, salt, pepper and parsley together in a bowl.

    Mix all the ingredients together using a fork to break up the fish.

    Then form into a fish cake, or patty.

    If your fish cakes are really soft, pop the bowl into the fridge for a bit, but I usually dont find it necessary. Dip the salmon patties into beaten egg, using a brush to coat them evenly. I love these stainless steel trays. Then coat in breadcrumbs.

    Place the fish cakes on a baking sheet and continue until the remaining mixture is finished.

    Fry gently over medium heat in a pan until golden brown on both sides, adding oil as needed.

    Place the potato and salmon patties on a paper-towel lined baking sheet to absorb the excess oil.

    Serve as desired, but you really only need a salad or vegetable since theres already potato in the fish cake.

    Do I Have To Fry Salmon Cakes

    No you dont. You can bake them in the oven . If youd rather bake the cakes, 350 degrees for 20-25 minutes should do the trick.

    The Salmon Cakes were delicious and I the wheels started turning as to other ingredients and seasoning I can add to them in the future. Maybe a buffalo bleu cheese salmon cake.hmmm

    How To Freeze Potato And Salmon Fish Cakes

    These potato and salmon patties freeze extremely well. Just wrap them in tin foil with layers of parchment or waxed paper in between each patty. You can then defrost in the fridge and heat them up in the oven or an airfryer works great, too.
