    Dryness is typically the biggest complaint bakers have when making a cake from scratch, so I thought this FAQ deserved its own space. There are three main causes for a dry cake: over-measuring the flour , over-mixing, and over-baking.

    • Do not over-mix your batter! Mixing the batter properly can be tricky and this is often where most mistakes are made with homemade cakes. To avoid over-mixing, thoroughly cream together the wet ingredients, particularly the butter, sugar, oil, and eggs. I highly recommend using an electric mixer for this step! However, once you get to the point of combining your wet and dry ingredients, you need to be gentle and fold by hand using a spatula. Alternate adding the dry ingredients and the buttermilk, folding thoroughly, but not aggressively. The batter will be smooth and mostly cohesive there may be some small lumps remaining, but thats fine! Also, remember that while over-mixing can make your vanilla cake both dry and dense, under-mixing has its own risks and should be avoided as well!

    SAMS NOTE: Under-mixing your cake batter, not baking the cake for long enough, or opening the oven door too frequently while the cake bakes can cause the cake to sink as it cools.

    This recipe calls for only a couple of ingredients that youll probably have to shop for. Otherwise the cake batter comes together with pantry staples to make a gorgeous dessert! Heres what you need for the cake:

    • Cake flour this flour is found next to the all purpose flour at the grocery store. The finer texture results in a supremely soft and moist cake layer.
    • Sugar regular white sugar
    • Salt a half teaspoon salt is all you need.
    • Buttermilk room temperature. If you dont have buttermilk you can make your own by adding either vinegar or lemon juice to regular milk
    • Vanilla a teaspoon vanilla extract adds a rich layer of flavor to the chocolate
    • Eggs fold the beaten eggs into the cooled chocolate mixture then add to the rest of the ingredients
    • German chocolate squares melted and cooled

    Alternate adding the remaining dry ingredients with the wet. This way, the batter better absorbs all of the liquids without having to overmix the dry ingredients .

    To start, make sure your flour, baking powder, and salt are sifted together. With the mixer on low , add in half the flour mixture. Continue to mix until the last streaks of flour begin to disappear. With the mixer still running, stream in the milk. Now is a good time to add the vanilla extract, too. Once the milk is mostly absorbed, stop the mixer and scrape down the sides and bottom of the bowl.

    Turn the mixer back on to low speed, and add in the remaining dry ingredients. Once they begin to incorporate, bump up the mixer to medium. Only mix the batter together until it is smooth and the last visible bits of flour disappear. It is important not to overmix your batter or the cake may turn out dense, dry, and with tunnels running through the crumb. If you want some extra insurance, stop the mixer while there are still a few streaks of flour remaining and mix the rest of the way by hand with a rubber spatula. This way also makes sure that no dry pockets are left at the bottom of the bowl.
