How to Make The Best Vegan Vanilla Cake

Preheat the oven to 350°F and grease a non-stick 10-12 cup bundt pan. Stir the soy milk and vinegar together in a glass measuring cup and set aside to curdle. This is your vegan buttermilk.

In a large bowl, add the flour, sugar, cocoa powder, baking powder, baking soda and salt. Whisk well to combine. Now add the oil, applesauce, vanilla and milk/vinegar mixture. Mix on medium speed with a hand mixer until well combined, scraping the sides and bottom of the bowl as needed.

Lower the speed and carefully pour in the hot coffee, continuing to mix into the cake batter until combined. The batter will seem very runny at this point but it will bake up perfectly.

Pour into the greased bundt pan and bake for 40-45 minutes or until a toothpick inserted comes out mostly clean.

Let the cake cool in the pan for 15 minutes, then invert onto a rack. Let cool completely before glazing.

Now, for the fun part make the ganache!

Add the chocolate to a medium sized bowl. Place the soy milk in a glass measuring cup or microwave safe bowl and microwave for 1 minute, watching to make sure it doesnt bubble over.

Pour the warm milk over the chocolate and let sit for 2-3 minutes. Do not stir yet! You can use full fat coconut milk instead for a richer, thick glaze, like I do in this Vegan Chocolate Ganache recipe.

Make sure to place a piece of parchment paper under the cake on the rack to catch any drips.

I used cake pans which are 7 inches round. The layers on this cake are not very tall, but I think its a perfect size and you get 10 nice sized slices out of it. You can also make this cake as a three layer 6-inch cake, or a single layer 9-inch cake.

To get an incredible pillowy soft crumb, yet moist cake, we will use the reverse creaming method. I first heard and read about it on Yupitsvegan‘s blog. The method is surprisingly simple and easy.

You start by sifting together your dry ingredients andsugar. Then, you add the fat directly to the dry ingredients and mix well until all is covered and you’re left with a sandy, coarse meal. Only afterward add any other type of liquid, beating on low to incorporate until just combined.

This way, the fat molecules coat the flour and prevent the flour from coming in direct contact with liquid, which in turn, prevents gluten from forming. The gluten is what may have made your other egg-free cakes dense and chewy before. This fantastic method turns this easy vanilla sponge cake into an absolute fluffy delight!

Sweet Potato Spice Cake With Vanilla Cashew Cream

Try to find all organic ingredients for this tasty cake!

  • 1 cup melted coconut oil
  • 2 ¾ cup gluten free all-purpose flour
  • 1 cup evaporated cane sugar
  • 1 cup unsweetened apple sauce
  • 2 baked sweet potatoes, peeled and smashed or 9.2 oz canned organic sweet potatoes
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg powder

Preheat oven 325° F and lightly grease a 10-inch round cake pan. In a large mixing bowl, combine flour, cinnamon, ginger, nutmeg, baking soda and salt. In another bowl, add the mashed sweet potatoes, coconut oil and sugar, and combine with an electric mixer until smooth. With the mixer on, add the apple sauce and vanilla until you have a creamy consistency. Fold the dry flour mixture into the wet ingredients and combine with an electric mixer or large spatula until smooth. Make sure you have no lumps.

Pour batter into the prepared baking pan. Bake about an hour until a toothpick, inserted in the center, comes out clean. Let cake cool in pan on a rack. Once cooled, transfer to cake plate.

Vanilla Cashew Cream

  • 2 cups soaked organic cashews
  • 1 cup filtered water
  • ½ cup date paste
  • 2 tsp vanilla extract
  • a pinch of sea salt

Place water, cashews, date paste, vanilla and salt into blender and blend until creamy. Drizzle or dollop on cake and add a dash of cinnamon powder before serving.

That cake above? Its my favorite cake. Given how enthusiastic I am about vegan cake in general, that statement is a big deal.

If you want the perfect sponge cake for your layer cake, there are 5 important things to keep in mind:

Tip 1: Follow the recipe exactly!

When I get feedback that recipes failed, it usually turns out that ingredients were either forgotten or other ingredients that I didnt recommend were used. Therefore, it is important to stick to the recipe as instructed. This is the only way I can guarantee that the vegan sponge cake will be perfect!

Tip 2: Sift the dry ingredients!

To avoid lumps, it is important that you sift the dry ingredients beforehand. This way they combine faster with the wet ingredients, so you have to stir the batter less, resulting in a fluffier cake.

Tip 3: Do not overmix the batter!

Stirring too long creates gluten, so the batter becomes tough and sticky. This leads to the fact that the cake can not rise well and thus becomes less soft and fluffy.

Tip 4: Do not overbake the cake!

If you bake the cake too long, it becomes dry. So to keep it nice and moist, it is important not to leave the vegan cake in the oven for too long. Its best to do a chopstick test after 22 minutes: as soon as it comes out clean, you can take the cake out of the oven. Otherwise, leave it in for 2-3 minutes longer.

Line two round cake pans with a square or round piece of parchment paper, and spray very well with oil.

Beat the vegan butter, oil, sugar, and lemon zest together in a large bowl.

Pour in the aquafaba and vegan buttermilk and mix one last time.

Add the dry ingredients into the wet and mix until theyâre just combined.

Why Is My Vegan Cake Dense

This happens for a few reasons. Sometimes, if your ingredients arent room temperature , it will throw off the texture in the cake and cause it to be gummy rather than fluffy and moist.

The easiest fix is: patience! Make sure that youre allowing all of your ingredients to come to room temperature.

Another reason this can happen is if you dont sift your flour. Make sure that you do this! Otherwise, youll end up with a gummy mess!
