Box cakes are usually very moist, so youll only need to use a little bit of frosting for these cake pops. Its all about the frosting-cake ratio!

Now its time to make the cake pop mix. Start by crumbling the baked and cooled cake in a mixing bowl. Dont over-crumble your cakecoarse crumbs works fine.

Then slowly add your frosting a quarter cup at a time until the mixture holds together well when pressed. The amount of frosting will vary based on your cake . Dont go overboard on the frostingyou simply want the mixture creamy enough to be able to roll it into balls.

How to Make Cake Pops the Easy Way

Once our homemade cake pops have firmed up it is dipping time! Melt more chocolate, I usually only do one color/flavor at a time. If you are using a more shallow bowl, tilt the bowl of chocolate, then dip your cake pop into it.

Use a spoon to cover the ball if needed. Now rotate the cake stick, and gently tap the stick with your finger, this will allow the excess chocolate to drip off, and rotating ensures a nice smooth covering.

You may also use a deeper more narrow glass. With these you can usually just dip straight down and come up with it, then do the rotating and tapping.

Once done place your cake pop back into the styrofoam or cake pops stand and let the chocolate set. If using traditional chocolate you may want to put them in the fridge for a few minutes to help the setting process. If not, by the time you are done dipping the last one, most of the others will have completely set.

Shelf Life Storage And Making Ahead

  • Storing: Keep cake pops in an airtight container in the refrigerator for up to 1 week.
  • Freezing: Finished cake pops can also be frozen in an airtight container for up to 2 months.
  • Making Ahead: I like to make the cake and frosting the night before I plan to assemble cake pops to save on time. Alternatively, you can make your cake pops up to 2 months in advance and simply store in the freezer.

What Should I Do With All This Leftover Cake

1. Eat it, of course.2. Turn it into cake pops!

The real trick to cake pops is in the ratio of cake crumbles to frosting. The golden ratio that I’ve found is about 1 1/2 times as much cake crumbles as frosting. Of course, if your cake is super moist, then you’ll need less frosting.

So whether you had to lop off the tops of the cake layers to make a flat styled layered cake and only have a cup or two of cake crumbles, you’ll need about a 1/2 cup to a cup of frosting to turn it into cake pops. And if you make a whole cake but only eat a few pieces, then want to turn the rest into cake pops, crumble it all up and add some canned frosting until you reach that moist, scoopable consistency!

That said, you’re welcome to make the carrot cake recipe and use all of it to make cake pops. The ratio remains the same. You need about 1 1/2 times as much cake as you do frosting. You’ll certainly need more white chocolate or white candy melts though.

Before starting, make sure that you prep yourself a cake pop holder. Grab a cardboard box and poke holes in the bottom of it, just big enough for the lollipop sticks to stick through. I used a pair of scissors to pop the holes and tested them with the lollipop sticks to make sure that they were big enough to fit, but not so big that they just slipped right through.

After coming together, add heavy cream, a pinch of salt, and an extract of the flavour you want. For example, vanilla, almond, lemon, mint, or strawberry. This recipe works out best with heavy cream, but you can use milk though it would be that creamy. Ensure everything is well combined. Depending on the thickness of frost you want in your cake pops, this mixture is ideal for 12 to 14 cupcakes.

Once the cake pops are dipped in the chocolate and have set up, they will last in an airtight container at room temperature 3 to 4 days or in the fridge 5 to 7 days. Remember, if you put the cake pops in the fridge, they will probably crack when they come back up to room temperature.

TIPS for Success

  • To avoid cracks, NEVER refrigerate cake pops at any point. They will crack when they’re coming back up to room temperature and may seep liquid. I will say that I thoroughly enjoy them when they’re cold and the chocolate is crunchy.
  • MUST use candy gel food coloring. Regular gel food color will seize the chocolate because it’s a water base food color. Candy colors are an oil base food color.

How To Make Cake Pops: Step 3

Keep mixing until you have a fudge-like texture. To see if its ready, squeeze a little of the mixture in your palm it shouldnt crumble and it should be pliable. If you add too much frosting, the mixture will be soggy, sticky and heavy and the cake pops will just fall off the stick when you try to dip them. Wrap the mixture in cling film and chill for at least 1 hour.

How To Make Cake Pops: Step 4

The mixture should be firm but not too hard when its ready to work with. Break off a small piece of the mixture about the size of a ping-pong ball and roll into a ball with your palms. It doesnt have to be perfect. Place each ball on a tray lined with baking paper. Refrigerate for 15-20 minutes, or until they are firm.
