While many ice cream cakes are madeof just ice cream, thats never been my favorite way to enjoy them. I like real cake layers in mine, and thats exactly how I designed todays ice cream cake recipe! Punctuated with fun sprinkles and frosted with stabilized whipped cream, never has a cake screamed its time to party so much since my Zebra cake!

My ice cream cake recipe consists of fudgy, rich chocolate cake layers and an incredibly easy ice cream center . The cake layers themselves are a slightly scaled down version of my chocolate cupcakes . The cake layers were specifically designed to be frozen and eaten cold, unlike most of my cake recipes.

Ive included many recipes notes and a video below, and I definitely recommend you watch the video if youre nervous about assembling your cake. I like to use an acetate cake collar to make things easy, but I also include instructions in case you dont have or dont want to buy one.

Rather than utilizing more crude oil, half the amount of melted butter should be used. Adding additional egg to a product will improve the density of the final result. My favorite flavors of ice cream to use here are cookies and cream or strawberry. But other great choices would be mint chocolate chip, cookie dough, chocolate, caramel, peanut butter, cherry, coffee, cheesecake, pistachio or vanilla bean.

Then another variation here is to spread the whipped cream over the top and sides of the cake, or for a thicker layer only spread it over the top.

Using different flavors of ice cream, kinds of cookies or fillings can really allow you freedom in creating a unique and super delicious ice cream cake. Here are a few ideas! The sky really is the limit here.

  • Mint Chocolate Chip: Mint Chocolate Chip ice cream + crushed thin mint cookies + hot fudge filling
  • Butter Pecan: Butter Pecan ice cream + chopped pecans and shortbread cookies + butterscotch filling

Vanilla No Churn Ice Cream

In a small bowl whisk together sweetened condensed milk and vanilla, set aside.

In a large bowl whip the cream until stiff peaks form, add a little whipped cream to the vanilla/sweetened condensed milk mixture, , then fold in the rest of the whipped cream mixture and combine gently until completely mixed.

Remove the base from the freezer and spread evenly with half the vanilla ice cream . Cover with plastic wrap and freeze.

  • I highly recommend this red velvet cupcake recipe from Buttermilk by Sam. And it is so chocolaty and moist and is just the right size for this ice cream recipe!
  • Use the good cocoa, and if you can find it, use cocoa rouge it is naturally a deep red color which means you can use less food coloring.
  • similarly, use the good extracts. All natural, highest quality.
  • And about that food coloring I am not a fan of artificial anything, so I always use a natural food coloring especially in something like this where you are using quite a lot. This is totally up to you. This is the one I use: Watkins Natural Red Food Coloring
  • This recipe does require an ice cream maker. I have not tried it without one and I cant recommend you try to make it without one.
  • Making the ice cream base the night before and letting it chill overnight before churning is the way to go. You want it completely chilled before churning.

Now that weve talked about that, lets talk about how long this will take you. Making an ice cream cake is not a lot of work I dare say its easier than a baked cake. But it does take time almost entirely hands-off time, but still. If you want an ice cream cake for a birthday party, I would start at least three days ahead.

You need a day to create the first layer, which has to freeze until solid. Then the next ice cream layer, and after that, it freezes overnight so its stable enough to remove the springform ring. Then you frost the cake with whipped cream, and its really best to let it sit in the freezer one more night before serving. Youre always fighting the clock when working with ice cream, so give yourself plenty of time to let things chill out between steps.

Last but not least: freezer space. You need a lot. Enough to slide a whole sheet pan into the freezer. Upright freezers are best for this side-by-side and bottom-drawer freezers make it tough. Clear your freezer and do a test run with the pans before getting started.
