The Easiest Ice Cream Cake

Ive shared so many ice cream cakes over the years some with Brownie Crusts, one with Samoa Cookies, and even one thats only three ingredients. We definitely love our ice cream around these parts.

My mom is known among our extended family and family friends for her ice cream desserts, so heres another one she made often: Oreo® ice cream cake. Its loaded with chocolate and Oreos and makes the perfect summer cool-down treat. Plus this cake requires only FIVE ingredients.

What Do I Use To Frost The Ice Cream Cake

You will find two different cakes in these photos. Notice that one of the cakes has piped borders around the top and bottom and pretty swirls on the top. The other cake uses halved Oreo cookies as a bottom border and a swirl of cookies on the top.

The cake with the pretty piping has been frosted using a non-dairy frosting called Pastry Pride, which you buy as a frozen quart, defrost, and whip up to stable, pipe-able, freezable perfection.

The cake with the Oreo border was frosted with Cool Whip. Cool Whip is a really easy option and readily available. It is not my first choice for ice cream cakes though. For one, it will not hold its shape for a piped border or fluffy swirls. For another, it becomes too soft and can even begin sliding down the sides of the cake if it is out of the freezer for too long. For simply and quickly coating the cake, Cool Whip can work if Pastry Pride is not available.

You could also use a buttercream. Buttercream will pipe well and freeze well. It does take some extra work to prepare homemade buttercream, which is why I love using Pastry Pride. Find more about my favorite frosting recipes, including some various types of buttercream, here.

Unfrosted cake layers can be wrapped tightly and stored at room temperature or in the fridge for up to two days. The frosting may be prepared one to two days in advance and refrigerated as well. Once frosted and assembled, the cake can be refrigerated for up to four days.

Note that the unfrosted cake layers and Oreo frosting can be frozen for up to three months in separate containers. Make sure to store them in airtight containers if freezing. Thaw overnight in the refrigerator and bring the frosting to room temperature before assembling the cake.

Oreo Ice Cream Cake Variations

Make a Cookie Monster Ice Cream Cake! Instead of regular Oreo Ice Cream, use blue-tinted Cookie Monster Ice Cream to make this cake. It would make a wonderful birthday treat for a special kid.

Mint Oreo Ice Cream Cake is also delicious! Instead of cookies and cream, use mint chocolate chip, or Grasshopper Pie ice cream for this ice cream cake.

Add a Layer. You can use two different types of ice cream to make Oreo ice cream cake. Try half cookies and cream and half Chocolate or Cookie Dough ice cream.

Separate the layers with a middle layer of fudge and crushed Oreos like I do in my Classic Ice Cream Cake, or you can skip that part. If you’re building layers, be sure to freeze the layers for 1 hour each for best results.

More Toppings: Oreos are a must for decorating the top of this ice cream cake, but you can also use other cookies, sprinkles, shaved or chopped chocolate, or chocolate jimmies.

How To Make Oreo Ice Cream Cake

Coarsely crush most of the Oreos and sprinkle them in the bottom of a 9×13 baking dish.

Soften the ice cream by sitting it out for a few minutes and then spread it over the top. I do this by plopping spoonfuls over the top and smearing them together with a butter knife.

Generously zig-zag some Hersheys chocolate syrup over this.

Now spread the entire container of whipped topping over this. Press the remaining Oreos into the top and then zig-zag some magic shell over the top.

To keep it looking pretty, place it in the freezer for a few minutes uncovered, to allow the magic shell to harden.

Then cover and return it to the freezer until ready to serve. This is surprisingly easy to cut.

How To Make Oreo Ice Cream Cake From Scratch

  • Allow the Oreo ice cream to soften for 10-15 minutes while you line an 8-inch springform pan with parchment paper.
  • Crush 20 Oreos, and reserve 1 tablespoon of the crumbs for later. Combine the remaining crushed Oreo cookies and melted butter. Stir to combine.
  • Press the Oreo crust into the bottom of the prepared pan. Use your hands or a flat bottomed glass to get an even, smooth layer.
  • Spoon the softened ice cream on top of the Oreo crust in an even layer. Freeze for at least 4 hours, until it’s very firm.
  • Remove the ice cream cake from the springform pan and place it on a plate to decorate.
  • Pour the fudge sauce on top of the ice cream layer and carefully let it drip down slightly over the sides of the cake. Freeze for 30 minutes.

    How To Store Homemade Ice Cream Cake

    Avoid letting the ice cream cake soften too much if you plan to re-freeze it.

    Take your Oreo ice cream cake out of the freezer, and spread hot fudge onto the ice cream. I warmed it slightly but dont make it too hot that it will melt your ice cream. Youll put it back into the freezer for another half hour at this point.

    After another half hour, youll pull your Oreo ice cream cake back out of the freezer and top with whipped topping and cookies. Pop back into the freezer covered loosely with plastic wrap until ready to serve.

    This ice cream cake has 4 layers that youll need to assemble:

    • a thick cookie crust
    • cookies and cream ice cream
    • chocolate fudge

    For the crust, youll mix together crushed cookies and melted butter, then press it into the bottom of your pan. Its super important that you dont press down the crust too tightly, otherwise, it can be very hard to slice.

    Then youll spoon cookies and cream ice cream over the crust and smooth the top. The ice cream should be slightly softened first so that its easy to spread in an even layer. I used a 1.75 quart tub . Then youll pop it in the freezer for the ice cream to firm back up.

    Pro Tip: To soften the ice cream, take it out of the freezer about 15-30 minutes prior. Add the ice cream to a bowl and give it a stir so that its an even consistency. This ensures that your ice cream cake freezes evenly.

    After the ice cream is firm again , youll drizzle some hot fudge on top and pop it back in the freezer again. Whipped cream goes on top, and then I like to sprinkle on some extra cookie crumbs. Then once again, pop it back in the freezer so that its firmed up before serving.

    Pro Tip: I actually dont recommend covering the entire cake with hot fudge. It can end up making the whipped cream almost slide off the top. Leaving some of the ice cream exposed helps the whipped cream stick.
