Next, its time to create the batter. Cream the softened butter and sugar together in the bowl of your stand mixer . Beat this duo together until light and fluffyabout six minutes. Then add the eggs one at a time and beat until well combined. Then stir in the lemon zest, juice and extract. The combination of all three will really make the flavor pop!

In another bowl, combine the flour, baking soda and salt. Give it a quick whisk. Then add in this mixture alternatively with the sour cream. Beat until just combined. If you overmix, you can make the cake tough.

How To Make Sure Your Cake Doesnt Stick To The Bundt Pan

Even a non-stick pan needs to be greased so that the cake will release. Here are tips for making sure your cake doesnt stick:

  • Use cooking spray to thoroughly coat the inside of the pan.
  • Another method is to brush on melted shortening with a pastry brush, making sure to brush into all the grooves and around the tube in the middle.
  • Wait until the batter is mixed up before you prepare the pan, otherwise the oils will collect in the bottom of the pan if it sits too long.
  • Allow the cake to cool for 10 minutes in the pan on a wire rack before you remove from the pan.
  • Use a thin knife to run along the edges of the outside and around the center tube to loosen the cake after it comes out of the oven.
  • Carefully invert the cake onto a wire rack to finish cooling. You may need to give it a gentle shake. If the cake doesnt fall out immediately, run a knife around the edges once more.

This past week, I craved a cake I’ve only had a couple of times. Isn’t that bizarre? Parents will sometimes drop off goodies to the main office randomly for staff to munch on — and when they have brought a Nothing Bundt Cakes bundt cake, my day is absolutely made. The bundt cakes are so moist, fluffy, and flavorful…I just don’t know what’s not to like.

  • Youll need a set of four 5 inch bundt pans or similar for this recipe. You can also use smaller size bundt pans if thats what you have, just be sure to reduce baking time in this case.
  • Plain greek yogurt can be used as substitute for the sour cream, I have used both successfully in various cake batter.
  • Icing thickness and tanginess can be adjusted as desired by varying the amount of powder sugar.
  • I made this recipe with homegrown lemon and store-bought lemon. For some reason the homegrown lemon zest fragrance wasnt as powerful as the store-bought lemon. I think the lemons from my aunts tree dont have a much oil in the skin, so just something to watch out for

Lemon cream cheese frosting has to be one of my all time favorite frostings. Its like the perfect blend of sweet and slightly tart. Its made of cream cheese, butter, powdered sugar, lemon zest, lemon juice, lemon extract, vanilla extract, milk and an optional pinch of salt.

The ingredients are combined in your mixer, then spread over your cake.

How To Store A Bundt Cake

Due to the cream cheese frosting, I suggest storing this lemon bundt cake in the refrigerator. That said, this cake doesnt last long around my friends and family, so sometimes there isnt even anything left to store!
