I tried a couple different options for these crunchies. One option was using golden Oreos as a cookie base and then flavoring some of them to be strawberry. The other option was playing around with using pudding mix strawberry and vanilla to add flavoring. Ultimately I didnt think either of those gave the right flavor.

I ended up deciding on completely homemade crunchies. Youll need:

  • All purpose flour
  • Vanilla extract

Youll use some flour, sugar and butter in each of the flavors of crunchy. Then youll add freeze dried strawberries for the strawberry crunchies and the vanilla extract for the vanilla ones. You basically make a crumble with each flavor and then bake them in the oven to crisp them up. After cooling, you can crumble them up further, if needed.

While freeze dried strawberries might be a little harder to find , they add the most real strawberry flavor and is definitely the way to go.

It comes in quart-size cartons. I keep a supply in my freezer. When I need a quick batch of whipped topping, I thaw a carton out, whip up the amount I need, and Im ready to go! Its great for spreading out smoothly and also for piping swirls, borders, and dots it isnt the best frosting for a lot of detail. Frosted cakes and treats need to stay refrigerated, but pastry pride holds up to freezer burn better than heavy cream. But it does take time almost entirely hands-off time, but still. If you want an ice cream cake for a birthday party, I would start at least three days ahead.

You need a day to create the first layer, which has to freeze until solid. Then the next ice cream layer, and after that, it freezes overnight so its stable enough to remove the springform ring. Then you frost the cake with whipped cream, and its really best to let it sit in the freezer one more night before serving. Youre always fighting the clock when working with ice cream, so give yourself plenty of time to let things chill out between steps.

Last but not least: freezer space. You need a lot. Enough to slide a whole sheet pan into the freezer. Upright freezers are best for this side-by-side and bottom-drawer freezers make it tough. Clear your freezer and do a test run with the pans before getting started.
