To Make Birthday Cake Truffles You Will Need:

I recreated the MILK BAR BIRTHDAY CAKE TRUFFLES (momofuku) Step by Step Tutorial Recipe
  • some leftover cake: for birthday cake truffles, use leftover sprinkle cake
  • a binder: for birthday cake truffles, I used milk flavoured with a little vanilla, but you could also use booze, or even lemon curd, passion fruit curd, or grapefruit curd, or even a fudge sauce
  • a coating or hard shell: for birthday cake truffles, I used white chocolate. I’ve also used dark chocolate or milk chocolate. The chocolate coating will seal the cake truffles and preserve them. Covering the truffles in melted chocolate also allows you to coat them in something crunchy
  • a crunchy coat: for birthday cake truffles, use leftover Milk Bar birthday cake crumbs or milk crumbs, but you could also toast leftover cake to make cake crumbs, or chopped toasted nuts, coconut, sprinkles, ground buttered popcorn brittle, ground homemade graham crackers, etc.

For the sprinkle cake and birthday cake crumbs, I used leftovers from making the Milk Bar birthday cake. This recipe is inspired by the carrot cake truffle recipe from the Milk Bar book available on I highly recommend ordering this book if you don’t have it yet!

How Does It Taste

This isnt your average cake. If youve never tried the 6-inch Milk Bar Birthday Cake, you might think it wont be enough for celebrating with more than one or two other people. It looks kind of small, you might say to yourself. I could take this down faster than you can sing two rounds of Happy Birthday. But you would be mistaken.

With three spongy, rainbow sprinkle-infused yellow cake layers, each held together with thick, cream cheese-tinged vanilla frosting, then topped with more frosting and dotted with crunchy cake crumbs , its deceivingly dense, and easily serves 8 to 12 people.

What Is Special About Milk Bar Cake

A layer of ovaltine soak keeps the milk bar chocolate malt cake moist and juicy for even eating while maintaining moistness. Each slice offers an extra layer of moist chocolate fudge with every bite. A chocolate sensation has entered your mouth after tasting this cake. I would definitely recommend this cake if you dont have much of a choice.

How To Store And Freeze These Energy Balls

To store: these birthday cake energy balls will stay fresh in a sealed container in the fridge for up to 1 week.

To freeze: place the vegan energy balls in a sealed container for up to 6 months in the freezer. When youre ready to eat one, I recommend letting them soften up a bit at room temperature.

The birthday cake is made up of four parts: birthday cake, birthday cake soak, birthday cake frosting, and birthday cake crumbs. Dont leave out any of these! You want the full experience and its so worth the time of each step.

There are also a handful of items that you may not be familiar with and/or cant find at your local grocery store:

  • Clear vanilla extract you should be able to find the McCormick brand at the grocery store, or Joanns and Michaels usually carry the clear vanilla extract in their cake isles. Milk Bar says the clear vanilla extract is NOT interchangeable with the typical brown extract because the clear vanilla isnt actually flavored by vanilla and gives the cake a more guilty tub-of-frosting, box cake flavor.
  • Glucose you might actually find this at Joanns and Michaels, as well. If not, check a specialty baking store .
  • Citric Acid you can actually use fresh lemon juice if you cant track down a bottle of citric acid.
  • Acetate sheets another specialty item, but if youre already at a craft store getting clear vanilla extract or glucose, grab a sheet of thick plastic from the stenciling or quilting section. You can make your own strips.

Make sure to follow Milk Bars tips about mixing times, and dont rush the process. Youll be combining a lot of fats with liquids and want the mixture to be completely homogeneous. There should not be any streaks of fats or liquids when youre done mixing the batter.

We had once served slices of cake to order but after hemming and hawing with our endearing staff of counter employees over the correct way to slice and serve a multi-layered cake, we decided to get smart and make cake truffles with all of our leftover cake and cake-layering scraps. Now, instead of committing to a whole slice of cake, you can get a bite or two or three. You can choose to follow the recipe, or get crazy without our guidance, using leftovers to concoct your own. Helpful tips:

The fresher the cake scraps, the better. At Milk Bar, they stick to one flavor of cake scraps at a time.

To bind the cake scraps when forming the truffles, try different wet binders such as fruit juice, fruit purée, other flavored milks, or a moist filling .

The white chocolate shell helps to seal in freshness and flavor while also serving to glue the crunchy coating onto the outside.

You can also swap in 1 cup finely ground crumbs, crunches or toasted yellow cake mix for the Birthday Cake Sand.

I love looking back and reflecting on how much I have grown and how much my life ebbs and flows in a year to become something I feel grateful for every day! Do you like birthdays? I know they are tough for a lot of people, so I feel fortunate to have such a positive outlook and feelings about birthdays. Otherwise it can be kinda stressful!!

Today I am sharing a recipe that works off of Tuesdays post. On Tuesday I shared the cake I made for him! I made a layer cake out of a sheet pan by baking the cake on one pan and then cutting smaller circles out of it. That meant I had lots of cake left over! So what to so with leftover birthday cake?

Christina Tosi made cake truffles cool by making birthday cake truffles, using scraps from her Milk Bar birthday cake. Its also a smart, money-saving business move to take the leftover scraps that would have been thrown out and to turn them into something else that you can sell. Birthday cake truffles are like bite-sized morsels of birthday cake, easy to make and super fun to eat.

Cooking From The Book: Cake Truffles

The whole Cake Pops craze pretty much passed me by with no interest on my part, but I think its accurate to say that Cake Truffles are Cake Pops without sticks. Or Cake Pops are Cake Truffles with sticks. I have no idea which ones the chicken and which ones the egg.

After making the Momofuku Milk Bar Chocolate Chip Layer Cake, I had a whole container of cake scraps left. The obvious use, of course, would be to simply go at em with a fork. But we were sort of busy with eating the actual cake. The Cake Truffles recipe from the same Momofuku Milk Bar cookbook by Christina Tosi makes great use of these weirdly shaped bits and pieces.

Before You Start

One great thing about this recipe is that youre simply making use of leftovers, so there really are no new ingredients needed. You can also use any kind of cake, combined with whatever frosting/cake-moistening ooze, chocolate and coating you like, making it the ultimate cabinet crap recipe. In addition to the scrap Chocolate Chip Layer Cake, the Cake Truffles I made used up leftover passion fruit purée and chocolate Crumb.

This Isnt Exactly A Recipe

Because I didnt make the cake for these truffles I just used leftovers, I dont have exact measurements for this. But I promise you really can go by feel. If youre mixing the cake and milk together, you want it to be like a thick, not too wet paste consistency. You want it to be easy to roll into balls without sticking to your hands. I made about 1/2 cup of the vanilla milk and used maybe half of it total, so you dont need a ton!

This is such a fun recipe I know you will love it! Its a great way to use up cake scraps if you make a sheet cake, and to get your hands messy and have some fun in the kitchen.

This gorgeous birthday cake features three layers of funfetti cake. In true Milk Bar style, its made using one sheet pan, rather than multiple round cake pans . Ive used my favourite buttery, Funfetti Cake recipe, that produces a soft and fluffy vanilla cake every time.

Next, is that vanilla buttercream. But while I love my regular buttercream frosting, weve made it even more special by swapping milk for Greek yogurt. The real Milk Bar recipe has cream cheese in the frosting, so this is our easy way of getting that similar tang. Another secret ingredient in our frosting is a hint of baking powder. Making Cake Truffles With Christina Tosi Of Momofuku Milk Bar

The story behind Christinas now-famous Cake Truffles is amazing, but you first have to learn how she makes her cakes. Each cake layer is baked in a rectagular baking pan, and then circles of cake are cut from the pan. This process leaves cake scraps leftover, and she didnt want to waste perfectly good cake. Thus, she invented Cake Truffles.

Now so popular that she has to make extra pans of cake devoted just to Cake Truffles, these delicious creations are available in her restaurants by the single or multiple. I came home with 12, and my family devoured them by the next morning!

Well Birthday Cake Truffles Of Course

I didnt come up with these myself. They are actually similar to cake pops, but I like these better. I got the idea months ago when I was watching the episode of The Chef Show and the owner of Milk Bar was on it! Milk Bar is a bakery that does insane menu items, and their most popular thing is cake truffles that they make with their leftover cake scraps! Its genius and they sell thousands of them per week.

With cake pops, typically the cake is crumbled and then bound together with frosting. This makes me extremely rich and sweet, which is partly why I am not a huge fan. However, these are crumbled cake bound together into a paste consistency with a vanilla milk . Then, I dipped them in a simple glaze and then rolled them in my famous Liv B chocolate chip cookies that I blitzed in my food processor until finely crumbled. I added some sprinkles I had on hand to make them more festive. I also rolled a few in cocoa powder for the visual aspect of these photos. But you know what? The cocoa coated ones ended up being my favourite because they were initially bitter and then immediately turn sweet as you chew into the cake. So cool!

You dont usually find cookies or cakes the refrigerated section of the grocery store, though youll often find ready-to-bake cookie dough. Milk Bar Birthday Truffle Crumb Cakes stand out from the rest of the refrigerated products that surround them because they look like already baked cookies tucked in between the pudding cups and cookie dough packages. Milk Bar Birthday Truffle Crumb Cakes which come in Birthday Truffle Crumb and Chocolate Cakes are ready-to-eat treats from Christina Tosis Milk Bar line, inspired by her well-known confetti cakes.

The truffle cakes come in packages of two and are just a bit bigger than your average candy bar. There are two cakes in each package. The cakes seem to actually be more like cake pops than regular cake, very dense and with an almost cookie dough-like texture to them. Most cake pops are shaped into balls, put on sticks and served fresh. These are flattened into discs, dipped in a white confectioners coating and rolled in streusel and sprinkles, then packaged.

The truffle crumb cakes look cute and brightly colored, but theyre just not as satisfying to eat as a real birthday cake or even a cake pop. Theyre extremely sweet, and their dense texture means that they are both chewy and a bit dry. The streusel on top adds a bit of crunch for texture, but adds even more sweetness.

How To Make Chocolate Truffles

  • Beat the cream cheese in a medium mixing bowl until it achieves a whipped consistency.
  • Blend in the confectioners sugar until light and fluffy.
  • In a double boiler or microwave-safe bowl melt the chocolate chips. Allow to cool slightly before adding to the crema cheese mixture. *see notes
  • Slowly fold in the melted chocolate along with the vanilla until combined. This is also the time to add any other extracts or the chopped nuts if desired.
  • Chill in the refrigerator for at least 1 hour.
  • Once the mixture has chilled and has a stiff consistency, it is ready to move on to rolling.
  • Use a small cookie scoop to portion out 3/4 -1 sized scoops and then roll between your hands to round it out.
  • Roll in desired coating nuts, coconut or cocoa powder.
  • Refrigerate until ready to serve.
  • Return any leftovers to the refrigerator for up to 2 weeks.

    Making The Cake Crumb

    This portion of the recipe is probably the easiest and my favorite! The Cake Crumb is what really sets this dessert apart, in my opinion. It adds texture to each bite and is extremely delicious. While this portion of the recipe is actually used at the end of the assembly, I encourage you to make it first so that it has time to fully cool before coating the crumb cakes.

    The cake crumb is actually a smaller version of the cake recipe, minus a few ingredients. When finished, it almost tastes like a sugar cookie. The main difference between the cake crumb for this version of the recipe and the original, is that you will want less large chunks in the cake crumb. This will allow a more sand-like consistency in the cake crumb and it will adhere to the white chocolate much better during assembly.

    Making the Cake

    This is the part of the recipe where I have made some modifications from the original recipe to accommodate converting it to truffle crumb cakes. The first step was to reduce the size of the cake being made to half of what the original recipe calls for. Instead of making the cake a quarter sheet pan, we have reduced the cake to fit into an eighth sheet pan.

    Dont have an eighth sheet pan? You could always double the cake to fit in your quarter sheet pan and use half. Or you could try using another cake pan with similar volume to an eighth sheet pan.
