One: Make The Cake Crumbs
These are surpringly easy and can be made up to a week ahead of time. Just dont snack on them all week before you get to the cake assembly! Trust me it will take willpower.
Start by combining the dry ingredients- sugars, flour, baking powder, salt, and sprinkles
Then add the oil and vanilla. The mixture will become moist and crumbly.
Then spread the mixture onto a baking sheet. I lined mine with parchment paper, but you could use a silicone baking mat. You want to break up the crumbs with your hands.
Once during baking, and then once they cool you want to break up the crumbs a bit. The crumbs will still be soft when you take them out of the oven but will crisp up as they cool.
The cake crumbs can be stored up to a week ahead of time at room temperature in a container or frozen up to a month.

Lots of me and birthday thoughts before the recipe, jump over if you want to head straight to the recipe .
So, its my birthday, no. 45, on this gorgeous green planet. I think because I have reached the mid-forties hump I left off the exclamation point on the end. Its not that Im not excited, well, I am, just not as much as say my 21st or 40th twenty-one for officially becoming an adult/feeling free, and forty for throwing the feeling of people pleasing out the window and embracing the who cares approach just not BOOYAH! excited.
However, birthdays are fun.
I love all the extra special perks of breakfast served in bed , dinner out , cake, lots of cake . A free Happy Birthday drink from the fabulous gals at my local Starbucks, happy birthday! phone calls with their best wishes, a mocktail made by my thirteen year old and every year since hes nine , hearing my twin boys sing happy birthday along with everyone , birthday lunch with my girlfriends, gathering over plates, and plates of food and drinks, birthday hugs & kisses, notes/birthday cards, and the loving morning birthday kiss from my hubby the guy who makes my everyday stresses feel lighter with his simplicity. I cherish these moments and am grateful. Very grateful.

The mini-version of our wildly-popular layer cake comes down to three components: moist banana cupcake, creamy chocolate hazelnut frosting, and a chocolate crumb garnish. Milk Bar Gluten Free Cake
Building the Cake
For this youll need a 6 cake ring, a pan lined with parchment or silpat, and 2 strips of acetate cut 20 inches long and 3 inches tall .
Have a silpat or parchment lined sheet ready.
Use the cake ring to carefully cut two circles in the cooled chocolate cake.
Place the cake ring on the sheet and insert one of the rings of acetate. Make a layer of cake with all the scraps left around the circles, using the back of your hand to tap down.
Give the layer a good soak of vanilla milk. Then give it a good swirl of chocolate fudge sauce, smoothing out with the back of a spoon. Cover with 1/2 of the chocolate crumb and press down to make even. Then layer 1/3 of the marshmallows, as evenly as possible. Give another swirl of chocolate fudge sauce.
Gently set one of the cake circles on top and slightly press down to seal. Slip the second acetate ring on top, tucking around the cake layer. Repeat with layers of milk, fudge sauce, crumb, mallows and more fudge sauce, then slip the top layer of cake on evenly.
Pour remaining fudge sauce on top and layer with remaining marshmallows.
Freeze at least 12 hours before serving. 3 hours before serving, remove ring and allow to defrost in refrigerator for 3 hours.
Chocolate Fudge Sauce
- 50g / 4 Tbsp white sugar
- 110g / 1/2 cup coconut milk
Place chocolate, cocoa powder and salt in a medium bowl.

How Do I Assemble A Milk Bar Cake
When youre ready to assemble, you want to mix together the soak an easy combination of milk and vanilla. Heres how this is going to work:
Layer 1: 1 layer cake, 1/2 soak, 1/5 frosting, 1/3 crumbs, 1/5 frosting
Layer 2: 1 layer cake, 1/2 soak, 1/5 frosting, 1/3 crumbs, 1/5 frosting
Layer 3: 1 layer cake, 1/5 frosting, 1/3 crumbs
Got it? Ok lets break this down. Start by cutting out your cake circles. Flip the cake out of the sheet pan. Then using the 6 round cutter, cut two circles out of the cake. Like such
You will get two full perfect circles. And then use the cutter to cut TWO half circles out of the scraps. You will piece those together to make the final cake layer.
Its unconventional. Sure. But it works. Will there be scraps left? Sure. But this cake takes some time to assemble. Youre bound to get hungry
Then you want to start assembling. Using the same cutter, give it a wash. And then place on a baking sheet lined with parchment paper. And line with the acetate collar.
Note: The acetate collar I used had to be cut into two 3wide strips.
Place your first layer in the cake ring.
Then give it a good soak with your vanilla milk.
Then add 1/5 of the frosting.
Then sprinkle on 1/3 of those delicious cake crumbs. You want to press these down slightly into the frosting. Oh, and sneak one for yourself.
Then more frosting on top. Again, about 1/3 of the frosting. Its OK I eyeballed it as well.
Then repeat with the final cake layer and frosting

Gluten Free Pistachio Layer Cake
Since starting this blog, in addition to being the designated family baker, I have assembled a set of tried and true recipes for cake emergencies, birthday parties and everyday or snacking cakes. There is another list though that I refer to as my dream cake list. This cake recipe, along with making towering wedding cakes decorated in organic flowers are part of my dream cake category. Make The Cake Crumbles
Combine ingredients in a medium bowl, stirring to combine until it comes together in a crumbly dough. Spread them over a parchment-lined baking sheet so you have some bigger and some smaller crumbles.
Bake for 10-15 minutes until crunchy. You may want to stir them partway through baking. Cool completely and set aside for assembly. This step can be done a few days ahead, but be careful because these crumbs are hard to resist and you might find youve eaten all of them before you have a chance to assemble the cake!

How To Put It All Together
- First, crush the oreos and sprinkles as finely as you can. I either put them in a Ziploc bag and roll over them with a rolling pin or pulse them in a food processor. Whatever is easiest for you!
Tip: If you are using the Ziploc bag method, smack the cookies with your rolling pin a few times first before rolling. It might feel a bit ~aggressive~ but itll jump start the crushing process and save you so much time.
- In a large bowl, combine the almond flour, maple syrup, almond milk, vanilla, almond extract, and salt. Mix well. Add in the oreos and crushed sprinkles and mix until you form a sticky dough.
Tip: As soon as the dough starts to come together, you might need to switch to mixing with your hands to help get the dough fully saturated and combined.
- To make the topping put the oats and sprinkles in a blender or food processor and pulse until you have a fine powder. Place the powder in a small dish or bowl.
- Roll the dough into ten equal sized mini balls, about 2 tbsp each. Toss each ball in the oat mixture until they are fully coated.
- Serve whenever!
