  • Mix up the White Chocolate Sauce
  • TO MAKE THE VANILLA BATTER:

  • Preheat your oven and place your baking rack one rung below the middle.
  • Make the raspberry flour by blending the crushed freeze dried raspberries and ¼ cup of flour.
  • Grease and dust a 10-cup Bundt pan with the raspberry flour.
  • Combine the flour, baking powder, and salt together in a small bowl and set aside.
  • Whisk together buttermilk, eggs, vanilla, and vinegar and set aside.
  • Roughly crush the fresh raspberries in a medium-sized mixing bowl and set aside.
  • In a large bowl cream together butter and sugar until very light and fluffy.
  • Combine creamed butter, dry, and wet mixtures until batter is smooth.
  • TO MAKE THE RASPBERRY BATTER:

  • Add about ¼ of the vanilla batter, and a ¼ of flour or raspberry flour blend to the bowl with the crushed raspberries. Stir together with a fork until well combined.
  • Layer up your pan with half the vanilla batter, then all the raspberry batter, then the rest of the vanilla batter. For each layer, drop the batter around hte pan in small spoonfuls then use a spatual or knife to spread into an even layer.
  • Bake for 45-55 minutes until the cracked ring around the center of the cake is dry, feels fully set, and springs back when gently pressed.
  • Cool for 10 minutes, then un-pan and cool fully on a wire rack.

    • Grease the Bundt pan: Its very important, especially when using fresh raspberries, to coat the pan generously.     For starters, the bundt cake pan you use makes a HUGE difference. Ive tried a variety of bundt pans and believe me when I tell you that all bundt cake pans are created equal.

    We used an ancient bundt cake pan when we made this in New Hampshire.

    And while the cake tasted delicious, it didnt come out of the pan so great. Look how terrible this cake looks.

    We used this Nordic Ware Bundt Cake pan when we got home and made it again and it turned out perfectly! Ive used this Nordic Ware Bundt Cake for a ton of different recipes and it gives me great results every time.

    Nothing Bundt Cakes Cream Cheese Frosting Recipe

    Once raspberry cake is cool, you may frost the cake. Or if you prefer to not have the traditional Nothing Bundt Cakes cream cheese frosting, try making my Basic Vanilla Buttercream Glaze.

    Beat butter and cream cheese 2-3 minutes on medium-high speed until light, creamy and fluffy. Scrape down the sides of the mixing bowl. Add vanilla extract or vanilla bean paste and a pinch of salt.

    With your mixer on low speed, slowly add the powdered sugar alternately adding a little milk or cream. Whip on high for 2-3 minutes until light and fluffy. If mixture seems too stiff, keep whipping and add a few drops of milk at a time until desired consistency. Alternately, if too runny, add ¼ cup additional powdered sugar at a time.

    Spoon frosting into a piping bag and fit with a round tip or snip off ½-¾ inch of the plastic bag and pipe.

    For pretty fingers of frosting, frost from the outside of the bundt cake, up and over, for a nice thick finger of frosting.

    If desired, decorate with some chopped or grated white chocolate and fresh or frozen raspberries.

    Note: If using frozen raspberries on top, wait until youre ready to serve before adding them or they will bleed onto the cake as they thaw.

    This recipe yields a little more frosting than you will need. Refrigerate leftovers, then bring to room temp and slather on baked canned or homemade cinnamon rolls, on coffee cake or on these carrot cake cupcakes.

    Using berries in cakes, and bundt cakes, in particular, can be tricky, as they tend to go to the bottom. It depends a lot on the type of batter, the denser they are the better they hold the berries in place. Most of the time.

    For this recipe, I use raspberries because they pair fantastically with white chocolate. And it’s that time of the year when we want to see some holiday colors, isn’t it?

    I like to use frozen berries as they can be kept year-round. Besides, they will be hidden inside this white chocolate bundt cake. Fresh one can also be used simply mix them with a few tablespoons of the allotted flour in the recipe before adding them to the batter. That way they will move less when the cake is baked and will be better distributed.

    Variation: feel free to use other berries, such as blackberries, blueberries, or strawberries. They also pair wonderfully with white chocolate.

    How To Make A White Chocolate Raspberry Bundt Cake

    Preheat your oven to 350 degrees.

    Grease your bundt cake pan with butter or spray with cooking spray.

    Mix cake mix, instant pudding mix, sour cream, eggs, 1/2 cup butter and water in a large bowl. You can use a stand mixer or a hand mixer for this.

    Add the white chocolate chips and mix well.

    Pour your raspberries into a small bowl.

    Add 1 Tablespoon of flour and mix til your raspberries are well coated.

    Now back to your cake mix

    Pour half of the batter into your prepared bundt pan.

    Spoon half of the raspberry filling into separate clumps on the batter in the bundt pan. Use a knife to swirl your raspberries through the batter.

    Pour the rest of your cake batter into the bundt pan.

    Add the rest of your raspberry mix and repeat the knife swirl again.

    Put cake in preheated oven and bake for 45-50 minutes at 350 degrees.

    Youll know your scrumptious white chocolate cake is done when its golden brown and a toothpick comes out clean.

    When your bundt cake is finished cooking, remove it from the oven and allow it to cool for 10-15 minutes.

    Remove from cake from the bundt pan and place on a serving plate.

    I find the best way to do this is by putting the plate upside down on top of your bundt pan and then flipping the whole thing together.

    Let your cake cool.

    When your cake has fully cooled, wrap well with plastic wrap and place it in the fridge or freezer to chill for 2-3 hours.

    For this recipe, I was torn between adding fresh berries to the batter, worried that it might make the cakes a little tart. So in its place, I added strawberry jam to the batter and left the fresh slices for layering afterward.

    Furthermore, I used pastry flour rather than all-purpose and I think it made a huge difference in the consistency of the cakes themselves. They are ultra light and moist.

    How Long Does It Take For A Cake To Cool

    It takes about 2-3 hours for a cake to cool completely, but a bundt cake should only cool 5-10 minutes in the pan before removing it. If you coated your bundt pan with sugar before baking, it’s important to remove the cake within 15 minutes of removing it from the oven, or else the sugar may harden and act like glue preventing your cake from sliding out easily.

    I recommend letting the bundt cake cool for at least one hour before glazing it with the white chocolate ganache. This prevents the ganache from melting off a warm cake. If you can let it cool for 2 hours, that’s even better.
