Homemade Cake Flour Recipe

When I got ready to bake up Madelines Birthday Cake Cupcakes last week for our family party night, I noticed that I was out of cake flour. I didnt want to head out for another errand just to pick up a box of flour after spending the morning at various craft and party stores picking up the remaining items on my party list.

I was also out of buttermilk, but I already knew a good homemade buttermilk substitute. A quick message to my friend Shaina on Skype was returned with the answer I needed. Okie dokie, then, I said and proceeded to bake up some scrumptious cupcakes for my birthday girl using this easy DIY cake flour substitute.I wouldnt use this all the time, but it is nice when youre in a pinch.

I was pleasantly surprised by the speed at which my order was filled. I ordered on Saturday and my 3 x 5lbs bags of flour arrived on Tuesday. I was previously looking at the supermarkets and at the bloated prices on Amazon. Bakers Authority seemed like a great alternative and they delivered. All flour came in nice resealable bags that were also individually bagged in clear plastic with a knot. Nothing spilled, the one silver bags seal was opened a bit but since the bag was folded over for shipping nothing spilled out. The silver bags made it easy to wipe down upon arrival giving a little extra peace of mind. I weighed the bags and everything was 5+LB, dont know the weight of the bags themselves but there was plenty of extra weight on the scale to compensate. Will definitely order again, thank you.

Tools & Ingredients Used:

I made every effort to replicate each batch as perfectly as possible, using the same exact tools and ingredients whenever applicable. I used a kitchen scale to measure ingredients to ensure 100% accuracy. Each batch was baked separately but in the same oven at the same temperature for exactly 20 minutes.

I used Bleached Gold Medal All-Purpose Flour for the control batch and DIY cake flour. The two brands of cake flour I tested were Swans Down Cake Flour, which is bleached, and King Arthur Cake Flour, which is unbleached. Lastly, I baked the batches in my Wilton Cupcake Pan, using a large spring-loaded scoop to fill each cavity evenly with batter.

All the cupcakes were baked on the same day to be photographed together. Before I reveal some of those photos, lets cover the basics you need to know.

Cake flour is very finely milled from soft wheat from the heart of the wheat endosperm. This helps to give cake flour its very fine silky soft texture. That fineness is actually why cake flour should be sifted before use as its more likely to clump together.
