    Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.

    Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.

    I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.

    For most people with severe food allergies, using a mix out of the box isnt an option, so this version allows you to select your favorite gluten-free flour.

    What Do You Need For A Carvel Style Ice Cream Cake

    First things first, you need cookies. Oreo style cookies. Since my son is gluten-free, I used gluten-free Oreo style cookies from Trader Joes. There are others out there but I cant vouch for them as I havent tried them. If gluten isnt an issue, Newmans Own makes a great organic Oreo style cookie.

    Chocolate Sauce is optional but really takes this over the top! Whole Foods has an organic 365 one that is very affordable. You can use whatever is leftover to drizzle over the top!

    Next up, you need to make some homemade whipped cream. Its easy and takes minutes. I include the instructions for that below in the recipe.

    As for the ice cream, Carvel uses soft serve. I experimented with whipping the ice cream to get that softer texture before re-freezing. It does lighten up the final cake a bit and the texture is nice but overall, I do not think it is worth the extra effort, time and mess it takes so I say skip it and just use your favorite brand of ice-cream.

    How To Make Gluten

    Cherry Coconut Cauliflower Ice Cream Cake (Vegan + GF)

    There are a couple of tips and tricks to getting the right texture with gluten-free cake. First, you have to follow the recipe.

    So many people comment on recipe posts saying that they made a ton of substitutions and the recipe didnât turn out.

    Other than the dairy substitute, I havenât tried other substitutes in this recipe. If you use substitutions, you are doing so at your own risk.

    Second, you want to mix at the right time and not over-mix. When you are beating the oil, sugar, and eggs youâll want to beat it for the time listed.

    This adds air which in turn helps the cake rise. Beating any longer will cause the batter to stiffen.

  • This is the proper term for it, right? The chocolate crunchies in an ice cream cake are, in my humble opinion, the best part of it all hands down. If you dont agree, thats okay, but I still will never waiver from this sentiment.

  • For the chocolate crunchies, I used leftover brownies I had on hand , crumbled them into small pieces, and baked them until they became slightly crispy. This will happen quickly, so keep an eye on them to make sure they dont burn! I broke apart and crumbled the pieces with a spatula even more after I took them out of the oven and let them cool. Once cool, I layered the chocolate crunchies over the vanilla ice cream layer.

  • I wanted to add an extra sense of fudginess, so I melted Hu Kitchen gems in a sauce pan with coconut oil and maple syrup until it reached a low boil to create a thicker consistency and drizzled this over the chocolate crunchies. You can either skip this step, although I think it really makes it, or just use melted chocolate.

  • Once this layer is done, place back into freezer to firm.

    This should be considered an extreme sport! As noted above, investing in a simple cake carrier will be your secret to success. Prior to starting your ice cream cake, we recommend clearing an area of your freezer that is large enough to allow the cake carrier to fit and sit level inside. If you have a drawer freezer, make sure your freezer opens wide enough .

    You can safely and successfully transport an ice cream cake using a large cooler or insulated food carrier. The trick is to make sure the vessel you are using is large enough to fit your cake carrier along with several ice packs or bags of ice. For best results, we recommend letting your ice cream cake freeze for 24 hours in the freezer before transporting it to make sure everything is as frozen as possible. We also suggest packing your cake at the very last minute before your departure.

    Dont forget to make sure you have a place to store your cake when you arrive at your destination. Your best bet will be to have a freezer to transfer your ice cream cake to when you arrive to keep it frozen until youre ready to serve.

    Ingredients In Gluten Free Angel Food Cake

    Egg whites Egg whites are the main ingredient therefor I dont have an egg-free version at this time.

    Powdered Sugar Adds sweetness.

    Granulate Sugar Adds sweetness and moisture and helps to stabilize the egg whites.

    Gluten Free Flour I used Bobs Red Mill 1-to-1 Gluten Free Baking Flour. I dont recommend Bobs Red Mill All-Purpose Gluten Free Flour or Namaste in this recipe.

    Cream of Tartar Cream of tartar is used to add volume and stabilize and whiten whipped egg whites.

    Vanilla Extract Use pure vanilla extract.

    Almond Extract Adds flavor. Dont worry if you dont have any on hand. You can leave it out.

    Salt Flavor enhancer.

    Baking a gluten free birthday cake at home is much easier than many people think. Gluten free flour and other ingredients are widely available, including in all major supermarkets. Simply have a look in the free from section .

    If you are not gluten free yourself but are baking for a gluten free friend or relative please bear cross contamination in mind. You should:

  • clean any baking kit really well to ensure there are no traces of gluten left over from previous bakes and wash your hands well
  • try not to use gluten flour in the kitchen at the same time as it really gets in the air, but perhaps move the gluten free cake to another room or ensure well-covered before you start
