    Whipped cream is best for ice cream cakes as it doesn’t crack or change consistency when frozen. You can also easily color it or make sweeter by adding more sugar.

    How To Make A Chocolate Chip Cookie Dough Ice Cream Cake:

  • Use a food processor to crush a package of store bought chocolate chip cookies. You want to make sure you buy the crunchy cookies because they work best for a cookie crust.
  • Stir together the cookie crumbs and melted butter and press in bottom of a springform pan.
  • Place a carton of chocolate ice cream on your counter for 15-25 minutes, or until softened enough to stir.
  • Spread on top of the cookie crust. Place in freezer.
  • Place cookie dough ice cream on counter and let soften. Spread on top of the chocolate layers.
  • Spread Cool Whip on top of the cake and freeze for at least 4 hours or overnight.
  • Use a knife dipped in hot water and run it around the outside edge of the cake to loosen it from the pan. You will need to rewet the knife a few times as you do this.
  • Add Cool Whip swirls with mini cookies around the top of the cake. Sprinkle mini chocolate chips in the center.

    How To Make Ice Cream Cake

  • Take a 9 inch round pan that you’ll eventually use for the cake and line with plastic wrap. Spread the ice cream evenly into the pan and cover. Freeze for at least 8 hours or overnight.
  • In a medium bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda and salt. Set aside.
  • In a large mixing bowl, beat together the buttermilk, vegetable oil, greek yogurt, eggs and vanilla extract until smooth. With mixer on low speed, slowly add the dry ingredients and mix until the flour in incorporated. Pour the hot coffee in and mix until just combined.
  • Line two 9 inch round pans with parchment paper, then butter and flour them. Pour the batter evenly in the pans and bake at 350°F for 22-27 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 5 minutes before running a knife around the edge to remove and transfer to a cooling rack.
  • Now make the whipped cream frosting. In a large bowl with the whisk attachment, whip the heavy cream, powdered sugar and vanilla extract on medium-high speed for 3-4 minutes or until soft peaks form.
  • Once cakes are cool, you’ll want to assemble. Place one cake on serving plate. Invert the ice cream on the cake layer and remove the plastic wrap. Top with last cake layer.
  • Spread whipped cream frosting over the top and sides of the cake. Top with some cookie dough and chocolate drizzle if desired. Freeze for at least 2 hours or until firm before serving.

    Chocolate Chip Cookie Ice Cream Cake

    Speaking of summer, we enjoyed our first weekend out on the boat last weekend. The hubs had technically been out the weekend before without me, but well just pretend it was his first too.

    We spent Saturday evening out and brought Jessie. She loved being out there as the sun was going down less hot. Then we went out with some friends for a bit on Sunday.

    As usual, I got my first bit of sunburn. Not too bad, but a bit. I did use sunscreen, but that stuff comes right off in the water and right now the water is still so refreshing we had to swim. Not too cold, but cool. Im sure in just a few weeks itll get warm. Gotta enjoy it while we can!

    So this cake was actually born out of a love for chocolate chip cookie ice cream sandwiches. You know the ones you can buy in the freezer at like, the gas station. Sounds glorious, right? But I always loved those as a kid so I decided itd be fun to make a giant one!

    Sadly this doesnt look like a sandwich. Well, it did the first time around. Problem was, the cookie gets pretty frozen. Cutting through one cookie on the bottom and eating it is fine. But two? Two makes an ice cream cake that goes everywhere when you try to cut it. Sad, but true.

    So I remade it with one cookie layer and the ice cream. Much easier to eat and totally delicious! Youll still probably not want to use a plastic fork.

    No matter which way you go with the ice cream, this baby is delicious! Such a fun treat thats sure to be a hit!
