Easy Copycat Dairy Queen Ice Cream Cake
As a kid, I rarely had the same birthday cake twice. I like all kinds of cake too much to stick with one. Regular cake, cheesecake, ice cream cakes you name it. The only one I didnt need to have for my birthday was a cookie cake, because I knew I could depend on my dad for that one at his birthday. So naturally, Ive tried quite a few cakes including ice cream cakes.
So, these days I feel like Im a bit of an ice cream cake connoisseur. Theres definitely something to love about all the different kinds available, but when it comes to a Dairy Queen ice cream cake, that middle layer of chocolate fudge along with the chocolate crunchies is pure heaven. Often, Id just dig that right out from between the ice cream and eat it alone. So darn good!
When I started playing around with ice cream cakes several years ago, I did a fair amount of experimenting with that middle fudge layer and finally perfected it. Ive shared it before, but never for this copycat cake so Im excited to share it with you today.

An Order Messed Up On Purpose Went Viral
One TikTok user wanted a Dairy Queen cake for her birthday, but with a fun twist asking for a purposely messed up birthday cake . Lila asked a Dairy Queen employee for an ice cream cake with all of the spelling out of wack.
“All I care about, I want you to spell everything as wrong as you can,” she told the employee, according to her TikTok. “I want you to put ‘Happy Birthday Lila’ but, like, ruin it. I just want you to really have fun with it and, you know, like, have a great time.” The decorator then had an idea and asked Lila if she could swap out the name, to which she agreed. The hilarious result was “Hpappy Birday, Bob!”
“She was so proud of herself. It was the cutest thing in the entire world. Although it’s often called an ice cream cake, the truth is that Dairy Queen’s version of the treat isn’t technically considered ice cream by U.S. Food & Drug Administration. That’s due to the level of milk fat contained in the mix. To be considered ice cream, a product must have a minimum of 10 percent milkfat. Yet, according to Dairy Queen’s FAQ, their soft serve only meets half of that requirement at 5 percent.
According to Dairy Queen’s FAQ, the fast food company’s product actually used to be considered “ice milk” until the FDA nipped the category. As of now, Dairy Queen’s ice cream falls under the reduced-fat ice cream category, with the franchise making sure to note that its 5 percent butterfat soft serve doesn’t mean that the resulting product is 95 percent fat-free. So, don’t expect its ice cream to be a low-calorie option for days where you’re watching your intake.

I vividly remember my first piece of ice cream cake.
With sparklers aglow, the dessert made a festive entrance at my grade school friend Marys summer birthday party. As I dug in with my plastic fork, the crunchy cookie layer sandwiched between two classic ice cream flavors and topped with creamy icing seemed too good to be true.
As a mom, I shared my love of this frozen treat with my children, serving it regularly for my elder sons June birthday. As my younger son grew older, he didnt let the small detail of a February birthday stop him from requesting this perennial favorite that truly knows no season.
Though I would never complain about a store-bought cake, they can be expensive, especially when serving a crowd. Likewise, doing-it-yourself allows for customization in terms of ice cream flavors and add-ins it also allows for allergy accommodations, especially where worries of peanut cross-contamination and gluten are concerned.
When I started making my own ice cream cakes, I found them to be surprisingly simple. They do require advance preparation, but this can be done in steps that are all very easy.

While the previous layers firm up in the freezer, remove the vanilla ice cream again and let it soften on the counter. Once the chocolate layers have firmed up, spoon the remaining softened vanilla ice cream over the other layers. Use the offset spatula to smooth the vanilla ice cream evenly over the other layers. The vanilla layer should come to the very top of the springform pan.
Once thats done, freeze the cake for at least four hourse, though overnight is best.
Editors tip: Reserve 1/4 cup of vanilla ice cream to use after freezing your cake. You can use the leftover vanilla to fill and smooth out any thin patches or spots that get damaged after removing the outside ring of your springform pan.

How To Store And Transport Ice Cream Cake
This should be considered an extreme sport! As noted above, investing in a simple cake carrier will be your secret to success. Prior to starting your ice cream cake, we recommend clearing an area of your freezer that is large enough to allow the cake carrier to fit and sit level inside. If you have a drawer freezer, make sure your freezer opens wide enough .
You can safely and successfully transport an ice cream cake using a large cooler or insulated food carrier. The trick is to make sure the vessel you are using is large enough to fit your cake carrier along with several ice packs or bags of ice. For best results, we recommend letting your ice cream cake freeze for 24 hours in the freezer before transporting it to make sure everything is as frozen as possible. We also suggest packing your cake at the very last minute before your departure.
Dont forget to make sure you have a place to store your cake when you arrive at your destination. Your best bet will be to have a freezer to transfer your ice cream cake to when you arrive to keep it frozen until youre ready to serve.

Dairy Queen Ice Cream Wedding Cake
For between $23 and $30, you can get an ice cream wedding cake. Some locations offer a fun tuxedo design which would make a great grooms cake. They also have many celebration and flower designs that could be personalized with wedding colors.
