Cake Baking & Serving Guide

Posted by Erika | Mar 1, 2021

Whether you need to know how many servings your cake will yield or how much batter or icing you need to fill your pan, this cake sizes and cake serving chart will help you figure it out!

Make sure your cake is the right size for any party with this cake size chart. Based on recommendations from our own test kitchen, this chart will help you determine how many servings youll get from your cake, as well as how much batter and icing youll need to get the job done!

A few things to keep in mind:

Bake Time And Temperature

When baking your cake, always follow the rules on your recipe for oven temperature and bake time. The numbers provided here are a general guide but may not be suitable for all recipes.

Times and temperatures may also vary depending on your oven performance or the altitude in your area. For best results, always check for doneness at the shortest bake time listed.

Nordic Ware Commercial Sheet Pans

Okay… aside from traditional cake pans, these Nordic pans are also called sheet pans. These are not usually used for tiered or layer cakes – but rather for things like jelly roll cakes or petit fours. The most popular thing I’ve used them for on the blog is petit fours – and that is a super popular recipe for me. Here is part of my collection:

I also use these pans to bake cookies, bars, bread, biscuits, roasting veggies, broiling bacon, and a million other things. They are seriously good for so many things!! I have 20+ of them and I still can’t ever have enough!

Oooh, you can also get lids for them which is thebomb.com. I love to store unfrosted cupcakes on them with a lid to keep them fresh until I’m ready to decorate.

The Nordic Ware sheet pans are diffrent from the Magic Line pans in that they don’t have straight up and down sides or sharp corners and they’re only about 1 inch deep vs. 2-3 inches. Nordic Ware Sheet pans also come in quarter sheet, half sheet, and full sheet sizes, but I’m going to give you the dimensions in inches.

Because I’m a rebel like that

Below are the four sizes of Nordic Ware Sheet Pans I have:

Although I don’t use them for anything related to cake decorating, I had to share the fourth size and tell you a little story behind them.

Months and months ago Richy took me out to eat on a date. We tried a new restuarant and they served our appetizer on these itty-bitty sheet pans.

Is 12×18 Sheet Pan Considered 1/2 Sheet Or Full Sheet Pan

Wilton Performance Pans Aluminum Sheet Cake Pan ...

Updated 15 Jun 2012 , 10:28pmby CWR41

and how many slices would I get if I used this sz pan? thanks so much!

Yes, that would be considered a 1/2 sheet. There are people who think a 9×13 OR 12×16 are a 1/2 sheet alsoIf the cake you make w/the 12×18 is 2″ deep/tall then to figure servings you would figure 6 times 9 = 54.If the cake is 4″ tall then you use the wedding cake size of 1x2x4 and get 108 servings.

A 12 X18 sheet pan is the standard half sheet for professional bakeries and cut into 2 x 2 inches serves 54 people.

thank you so much, doing some research and noticed that the full sheet pans do not fit into the standard sized oven, so I will have to go with this 12×18 pan,

that’s great info, was wondering what the bakeries use

Full Sheet = 16×24 .Additional full sheet info:A commercial Bun pan is 18″ x 26″ , and because they are tapered for nesting or making them stackable, the inside measurement is 16.5″ x 24.5″.A commercial full sheet is 16″ x 24″. They are baked in 16″ x 24″ bakeable cardboard trays that fit into the Bun pans which are used during baking for support and handling purposes.A true commercial full sheet serves 96 .

…….. information on sizes and commercial full sheets: 1/4 Sheet = 9×13 ……No. A 1/4 sheet is 8″x12″x2.If a 1/4 sheet is 9×13 why do they not make a board and box to fit it?? The board and box is made for a 12×8.

The Best Sheet Cake Pans

February 13, 2018 by Rose

I’ve owned a dozen different brands of sheet cake pans. In every size and brand you can imagine. And after seven years in the cake decorating business, I’ve come to know which ones I love and consider the best sheet cake pans.

With all the pans I’ve bought, they’ve varied from super cheap pans from the dollar store to really expensive, heavy duty pans.

I own at least one of every popular brand of pans on the market – and I have an opinion on them. I won’t go into all of that today, but I’m hoping my trial and error with pans will help you buy the best ones the first time around.

The ones I love are not the most expensive , but they’re the best quality I’ve found and they’re a great value.

Now I know when people talk sheet cake pans, they may not all be talking about the same thing so I’m going to cover a couple of different kinds. Let’s get started…

Can I Make 2 Boxes Of Cake Mix At Once

When you use boxed cake mix to make a large cake, you will double both the mix as well as the amounts of all ingredients listed in the directions on the box and adjust the baking time accordingly. This little bit of extra effort will be well worth it when you serve the cake and all your guests can enjoy it.

Cake Decorating, How to Ice a 1/2 Sheet Cake In Butter Cream

Updated 2 May 2009 , 12:16pmby Danielle1218

Hi Everyone,I swear the pan I used last night to bake a cake was bigger than my 1/2 sheet. Can someone tell me the measurements that are on the bottom of a wilton 1/2 sheet pan. The pan I used took 3 boxes of cake mix and was so dence, that I had to throw away the cake. I added chocolate pudding powder to my chocolate mix. I think that had something to do with it. But I swear i am missing a pan and it is my 1/2 sheet.

I refuse to use the terms “half” and “quarter” sheet. But, that said, a half sheet is generally the 12×18 . It takes 3 mixes. I tried the “add pudding and an extra egg” once …. my official taste testers told me “don’t you EVER do that again!” They said it was too dense and heavy …. they hated it.

Thanks a bunch, I am going to give in another try. Do you bake yours at 325? and for how long. I ususally put a rose nail in it. I am going to do chocolate again, but I don’t want it dry. Thanks againJen

In a home oven, I bake at 325 with baking strips. In my comm’l convection oven, I bake at 275 with baking strips.

How Long Does It Take To Bake A Cake At 350 Degrees

Bake at 350 degrees? Pan Size ~ The general rule of thumb when baking is the bigger the pan, the lower the temperature. You bake a chocolate 9 round cake for about 30-35 minutes at 350 F. But, if you were putting the same recipe in a 14 pan you need to lower the temperature to 325 F for 50-55 minutes.

Wedding Cake Baking Time And Batter Amounts

The chart below is based on Wedding Cake Baking Time And Batter Amounts for 2-inch Deep Pans from the Wilton Test Kitchen your results may vary depending on oven performance or altitude in your area. For large cakes, always check for doneness after they have baked for 1 hour. For pans 10 inches and larger, we recommend using a heating core to insure even baking. See also Baking Pan Substitutions Chart

Use this chart as a guide when baking wedding cake tiers. Batter amounts for the 2 in. cakes on the chart are for pans 2/3 full of batter. An average 2-layer cake mix yields 4 to 5 1/2 cups of batter.Icing amounts are very general and will vary with consistency, thickness applied and tips used. These amounts allow for top and bottom borders.

Serving amounts are based on wedding-sized portions of approximately 1 x 2 x 4 in. Other cake sizes: 1.5″x2″x4″ 2″x2″x2″

NOTE: Cakes from 3 to 6 in. high, baked in the same size pan, would yield the same number of servings because they follow the same pattern of cutting. Cakes shorter than 3 in. would yield half the number of servings indicated for that pan. Number of servings are intended as a guide only. The number of cake servings and serving sizes listed are intended as a guide only and offer a small portion of wedding cake. If cake is the only dessert and/or portions larger than 1″x 2″ are served, then you will have less servings than the chart indicates.

Pan Shape

Traditional Sheet Cake Pans

Performance Pans 9x13 Sheet Cake Pan

Anyway, for traditional “sheet cakes”, I love Parrish Magic Line Pans. Actually, this is my favorite brand for all traditional cake pans ! They’re quality pans that bake evenly and beautifully. Magic Line pans also hold up for the long haul and do not warp even after thousands of runs through my oven.

Best of all, Magic Line pans also have super sharp corners for sheet and square cakes and I love that feature! With our recent move, I’ve had to split cake work between the new house and the old one. I didn’t have all of my sheet pans in one place to take pics for this post, so I only have the one size pictured.

But I actually have these three sizes:

A couple of times I’ve needed an odd size in between those and I’ll just slide two together… and have a 13×18 or 20×15. That’s what I did for this huge bank order a few years ago…

I baked 4 12×18 sheet cakes, then I stacked them 2 layers deep and pushed them together for a huge 24×18 cake that was over 4″ tall. That cake was a beast.

Taller Or Shorter Cakes

Cakes that measure 3 to 6 inches high, baked in the same size pan, would yield the same number of servings because they follow the same pattern of cutting. For example, a 6 in. round cake that measured 6 inches high would yield the same amount as a 6 in. round cake that measured 3 inches high, since theyre both cut the same way.

Cakes that are shorter than 3 inches would yield half the number of servings indicated for that pan.
