The impossibly light, moist and tender crumb of this cake makes it the very best gluten free vanilla cake youve ever had.
Really, I think it makes it the best vanilla cake recipe, period. But it does happen to be gluten free, after all.
Between September and February of any given year, there are birthdays upon birthdays in my family. Everybody gets to choose what sort of cake theyd like to celebrate with, but if you drag your feetthen I choose.
And I usually go old school, like this gluten free vanilla cake recipe or my one bowl gluten free chocolate cake. Every once in a while, I really get down to basics with my flourless chocolate cake.
But a chocolate cake as rich and fudgy as that flourless cake is only appropriate if the birthday boy or girl is a true chocolate lover.

Tips For Making A Great Gluten Free Cake Recipe
Make sure you whip it good! As I said, this recipe uses the reverse mixing method which is the same way I make my famous vanilla cake recipe. Reverse mixing makes a nice tender crumb but you also have to remember that there isnt any gluten in this cake so its SUPER important that you do that first bit of mixing for the full 2 minutes to develop your structure.
Make sure your eggs, butter and milk are room temperature. Everyone always forgets this step and it can cause the cake to get a wet gummy layer at the bottom or worse, collapse. No bueno.
How To Bake A Perfect Gluten

Mixing
There are two important steps to this recipe: how you cream the butter, shortening, and sugar and how you add the dry and wet ingredients.
Lets talk about creaming the butter, shortening and sugar. Combine the three ingredients in the bowl of a stand mixer. Then you beat the ingredients for five minutes. How serious am I about five minutes? Very serious. In fact, Id love it if you used a timer.
During this time, the mixture goes from a thick paste to a light, white and fluffy mixture. Since a thin layer of butter and shortening always clings to the side and bottom of the bowl, stop the mixer at least once during the five minutes and scrape the bowl.
I know this step seems long and putzy but, trust me, its worth it. #dontskipitplease
After beating the butter, shortening, and sugar, add the egg whites one at a time. Again, dont rush this. If mixed correctly, the batter should look like fluffy frostingwhich is what weve basically made here.
Up next, the flour, sour cream, and milk. Add 1/3 of the flour and allow it to mix into the batter. Then add the sour cream. Let it mix into the batter. Once youve added the sour cream, alternate between adding the milk and the remaining flour.
Is this putzy? Yes! It is! But its worth it.

Bake the cakes in a preheated oven until a cake tester inserted in the center of the cake comes out clean. A few damp crumbs might stick to the cake tester or toothpick but you shouldnt see any wet batter.

How To Bake Without Gluten
The key to great gluten free cake is experimentation. Trying new flours such rice, tapioca or potato are great ways to add texture to your cakes in the absence of gluten. There are plenty of gluten free self raising and plain flours available on the market which will help you make great gluten free cakes. Yes, you can! Its really easy to freeze cakes. Once your cakes are completely cool, wrap the cakes with plastic wrap , wrap again with aluminum foil, and then place in a freezer bag.
The cake can be frozen for up to 3 months. You can defrost the wrapped cake at room temperature for 2-3 hours or overnight in the refrigerator. I have found that it is better to thaw the cake at a slower rate in the refrigerator.

- Make your frosting ahead of time too, or save any leftover frosting! It can be stored in an airtight container in the fridge for up to a month, or in the freezer for up to 3 months. Be sure to give it a good stir once it thaws to get the consistency nice and smooth again.

While I strongly advise against over mixing batter in other recipes, and even design my recipes to have as little mixing as possible, gluten free batter is different.
The whole reason you dont want to over mix your batter is that it develops thick strands of gluten, which can lead to dense, tough cake. But when youre using gluten free flour, this isnt a problem.
In fact, overmixing gluten free flour can actually give the cake better structure! This helps the cake layers rise better as they bake, and gives the cake a more tender crumb.
The incremental structure helps prevent the cake layers from crumbling as theyre bitten into.
Does Baking Powder Have Gluten
Another one of the frequently asked questions. Baking powder is a mixture of three ingredients: baking soda , an acid and a starch to absorb the moisture and keep it from clumping together.
The starch is where the gluten question comes in. However in my experience, the starch is usually rice flour or cornstarch, which dont contain gluten.
So its safe to say that baking powder in general doesnt contain gluten, but it might be produced in a facility where gluten in processed or be a special brand that uses a gluten-containing starch. Therefore always make sure to carefully read the label and check the ingredients list.
Things To Keep In Mind As You Make This Gf Funfetti Cake
- Properly measure your gluten free flour. Either spoon it into the cup measure, then level with a knife or use a kitchen scale.
- Make sure your ingredients are at room temperature to help them mix together better.
- Dont level your cake layers until they are completely cooled.
