Wedding Cake Baking Time And Batter Amounts
The chart below is based on Wedding Cake Baking Time and Batter Amount for 3-inch Deep Pans from the Wilton Test Kitchen your results may vary depending on oven performance or altitude in your area. For large cakes, always check for doneness after they have baked for 1 hour. For pans 11 inches and larger, we recommend using a heating core to insure even baking. Use this chart as a guide when baking wedding cake tiers. Batter amounts for the 3-inch deep cakes on the chart are for pans 1/2 full of batter. An average 2-layer cake mix yields 4 to 5 1/2 cups of batter.Icing amounts are very general and will vary with consistency, thickness applied and tips used. These amounts allow for top and bottom borders.Serving amounts are based on wedding-sized portions of approximately 1 x 2 x 4 in. Other cake sizes: 1.5″x2″x4″ 2″x2″x2″ NOTE: Cakes from 3 to 6 in. high, baked in the same size pan, would yield the same number of servings because they follow the same pattern of cutting. Cakes shorter than 3 in. would yield half the number of servings indicated for that pan.The number of cake servings and serving sizes listed are intended as a guide only and offer a small portion of wedding cake.

Taller Or Shorter Cakes
Cakes that measure 3 to 6 inches high, baked in the same size pan, would yield the same number of servings because they follow the same pattern of cutting. For example, a 6 in. round cake that measured 6 inches high would yield the same amount as a 6 in. round cake that measured 3 inches high, since theyre both cut the same way.
Cakes that are shorter than 3 inches would yield half the number of servings indicated for that pan.

Baking A 14 Inch Cake

I would like to bake a 14 inch round cake in a home oven.Has anyone tried this?If so do you have any suggestions? If 14 does not work I will try a 12 inch.
Make sure the pan will fit in your oven first. When I do a larger cake like that, I use at least one flower nail and sometimes use baking strips around the outside. Also, lower the oven temp to 325 degrees.
It should work as long as your oven is big enough. For that size as for any large size over 10″ I would use the bake even strips and/or flower nails. It is also best to make sure that there is enough room around the caked for air flow.Have you ever baked a large cake before? How large is your oven?
I have a standard size oven and bake 14in with no problems. I use 2 flower nails. Torting is tricky, though, unless you have an agbay!
Just baked a 14″ round for my last wedding cake, no issues. I didn’t use baking strips or a nail. I baked at 350.
Faith, you are one of my favourite baker/decorators with skill par excellent… no wonder you can bake a cake bigger than 10″ without nails or strips and at 350. I wish I could, but if I don’t use the nails and the strips at 325, the middle of the cake is undercooked while the edges are finished. I use a standard oven as well but 14″ is as big as I can go and still get sufficient air circulation.
