What Is Coffee Cake

There are many varieties of Coffee Cake depending on what part of the world you are in. My grandmas recipe is an American Coffee Cake which is more of a crumb cake that has cinnamon on top. Yes, we are Canadian, but we have lots of American influences here in Canada.

The British Coffee Cake is a sponge cake that is flavoured with coffee. I havent tried that style yet. All the coffee cakes Ive made dont actually have coffee in them.

This is another of our southern favorites. Grandma used to make this, wed eat it warm with a little butter on top

• Mix oil, buttermilk, egg and vanilla.
• Add flour, sugar, soda, cocoa and salt.
• Mix all together well and add coffee.
• Pour into lightly greased and floured 8X13X2 sheet pan .

• Preheat oven to 350 degrees F. Liberally grease a 9×13 rectangular baking dish with cooking spray set aside.
• In a large bowl, combine the flour, sugars, baking soda, baking powder, nutmeg, cinnamon, and salt and whisk together until incorporated. Pour in the oil and stir to combine until moist crumbs come together. Reserve 2 cups of the crumbs.
• Add in the beaten egg, buttermilk, and vanilla to the original bowl and stir until a thin batter comes together. Do NOT overmix the batter some lumps are okay. Pour the batter into the prepared pan in an even layer. Sprinkle the top of the batter evenly with the crumbs.

It’s substantial, durable and just plain pretty, but you can also make this coffee cake in a regular 9×13 pan. It will be thinner than a cake made in a bundt pan with more of a layer of streusel rather than a swirl but just as tasty. I’ve included directions for both pans in the recipe card below.

• I use a food processor to quickly blitz the streusel mixture together. If you don’t have one, you can also make the streusel by using two forks or a pastry blender to mix the ingredients together. If you’re going this route, make sure you use chopped walnuts and room temperature butter to make incorporating the ingredients a lot easier. The streusel should look like coarse crumbs when you are done with it.

• This cake batter is THICK and does not pour well. Instead use a spatula to scrape it into the pan and a small offset spreader to easily level the batter. If the batter is sticking to the offset spreader, simply run it under hot water, dry and return to spreading.

• Everyone should own an inexpensive oven thermometer as oven temperatures vary widely from brand to brand. It’s an easy way to quickly assess if your oven runs hot or cold and you can adjust the baking temperature accordingly.

• Your cake will be baked through if a toothpick inserted in the cake comes out clean. Start checking your cake at the low end of the prescribed baking time and add time from there, if needed.

Or you could buy a yellow cake mix, nuts, sour cream and whip up a Sock It To Me Cake in your own kitchen for about $5. Same flavor and texture. Pillsbury Bake Off winner when grandma was a girl.

While Im big on dupe recipes Ive never been able to dupe My Grandmas.

Ive picked apart the recipe, the flavor comes from butter, sour cream, Madigascar vanilla and Mariani walnuts . Its not a recipe I can dupe for $5.

I dont buy them as often as I used to but they are a deelish treat for guests at the holidays.

Delivered to my door, freeze and one less thing for this girl to do!

I love to bake and am frequently told that if I want to bake they will gladly share with me. Yours is well worth a try and I will use good ingredients. Imitation or cheap vanilla hurts a good came.
