How To Make Easy Gluten Free Angel Food Cake

  • First the dry ingredients gluten free flour, cornstarch, sugar, baking powder, and salt are sifted together a couple times to keep the cake light and airy instead of dense. This is especially important when using gluten free flour, which has a tendency to be heavier.
  • Next the egg whites are beaten with cream of tartar and extracts. Once they are foamy, gradually add the sugar, a couple tablespoons at a time. This gives time for the sugar to absorb into the egg whites and to not become grainy. Beat until all the sugar has been incorporated and stiff, glossy peaks form.
  • Now the gluten free flour mixture gets folded into egg whites, a few tablespoons at a time until it is all gently mixed.
  • Spoon the batter into an UNGREASED angel food cake tube pan and smooth the top with a rubber spatula.
  • Bake the cake on the LOWER-MIDDLE rack for 50-55 minutes, or until the top is golden brown and the cake springs back when pressed.
  • After the cake is finished baking, invert the cake pan onto the counter cool completely before serving, at least 2 to 3 hours.

    Ube got me through one of the weirdest days of 2020. Now, I know what youre thinking: what day WASNT a weird day in 2020. Touché. But the 9th of September 2020 was a particularly bad day. The 8th of September, a fire started at the north end of Ashland, Oregon, where Kendra , my parents, my grandmother, dear friends, and a few aunts and uncles and cousins all live, and tore through most of the Rogue Valley like, you guessed it, wildfire, demolishing thousands of homes in its path. September 9th started with more terror, additional spot fires, and thousands of displaced families, and my dad and sister stuck up in Canyonville in the ONLY tiny motel that had any room after all those displaced families evacuated Jackson County. It wasnt until 3pm on the 9th that my dad and sister managed to be allowed back into the Rogue Valley and got home safe and sound.

    I enjoy baking, although I usually dont bake desserts from scratch/homemade. I want to share more cooking and recipes on the blog so hopefully Ill be able to experiment with some homemade goodies But for now, Im sharing Aldis Live GFree Angel Food Cake mix. My family shops at Aldi quite a bit because most all of their products are labeled gluten free and lactose free, along with having their Live GFree line of products. Since its Celiac Awareness Month, they release special products only during the month of May. Today I baked their angel food cake mix. It is easy to make and taste just like a regular angel food cake!

    The directions are simple and it doesnt take long to make at all. Since it uses 12 egg whites, we used the egg white beaters from Aldi. Do not oil the pan- the directions do not say to. You want the angel food cake to climb up the sides like a regular gluten angel food cake.

    While the angel food cake is baking, be sure to check on it while its in the oven. It will get pretty high up and look like it will overflow, although ours did not. You will need to loosen the sides, so a rubber spatula works well.

    Gluten Free Baking Tips For Making The Best Angel Food Cake

    • Leave the tube pan ungreased so the cake can climb the sides as it bakes
    • Sifting the dry ingredients a couple times first is crucial for making the texture airy
    • Use a very large bowl for the egg whites, at least 5 quarts. You will need plenty of room for the egg whites to volumize and room to fold in the flour mixture.
    • Be sure to bake the cake on the LOWER RACK of the oven so the top doesnt become overly brown before the middle is cooked.

    How To Beat Egg Whites

    Stiffly Beaten Egg Whites

    Read the recipe through to the end before proceeding. You will need to let your egg whites sit for half an hour to come up to room temperature for greater volume when beating. Separate them while they’re cold and save the yolks for another purpose.

    It’s very important that you not get any yolk into your egg whites. Be sure to follow those instructions closely.

    What Is The Best Type Of Cake Pan To Make Angel Food Cake In

    Angel food cake needs to be baked in a tube pan so the cake can rise up the side of a smooth surface. I highly recommend getting an angel food cake pan that has a removable center and has three attached feet along the rim to elevate the cake after you invert it to cool. I bake with a 10-inch Wilton Angel Food Tube Cake Pan.

    I have not tried baking angel food cake in a bundt pan because without the right type of pan the cake will fall.

    Because angel food cake does not use creamed butter, it gets its volume from the beaten egg whites. This means the cake actually needs to climb the sides of the pan in order to rise.

    If the pan is greased, then instead of clinging and climbing, it will slide down resulting in a flat cake with no fluff which is definitely not what you want.

    So no matter how tempted you may be do not grease that pan!

    No Substitutions This Time

    This cake doesnt have an ingredients and substitutions section, like almost every other recipe on the blog, though. It only calls for flour, confectioners sugar, and egg whites, and you simply cant make it without egg whites.

    There are recipes on the web for vegan angel food cake, Im sure. But thats just an entirely different recipe.

    After The Cake Is Baked

    Angel food cake must be cooled in the pan, upside down. The easiest way to do that is if your tube pan has 3 or 4 little feet that extend just beyond the lip of the pan. Theyre designed for this purpose.

    If your pan doesnt have feet, simply invert the pan over the neck of a long neck bottle. The neck goes into the hole in the center of the tube pan.

    Once the cake has cooled, youll need to separate it from the sides and the neck of the pan. Run a knife or offset spatula between the pan and the cake. Youll disturb the surface of the cake a bit, but thats meant to happen.

    Fold In Remaining Sugar And Flour

    Remove your egg white mixture from your standing mixer. Then, using a spatula, slowly and gently fold in the remaining sugar and flour until all of the flour mixture is incorporated into the egg white mixture. You can fold it by adding a little bit of the sugar-flour mixture, then folding the egg whites onto themselves. Repeat until all the flour-sugar mixture is incorporated.

    Now pour the batter into a non-stick angel food cake pan . Its a round pan with a hole in the center and a detachable bottom. The carved out center gives the cake more surface area to cling to as it rises.

    Do NOT grease the pan. The cake needs plenty of surface area to grab onto to help it properly rise.

    If you dont have an angel food cake pan, a non-stick 9 springform pan with an oven-safe glass inserted in the middle could work. I have not tried this technique and found it easier and more reliable to simply invest in an angel food cake pan.

    Are Angel Food Cakes Gluten Free

    Traditional, from scratch or store bought, angel food cakes are not naturally gluten free because the recipe contains flour. However, by following this recipe you will still be able to enjoy the same light, fluffy, homemade cake, but in a gluten free version!

    If you are dairy free, youre in luck. Angel food cakes do not require butter or milk, which means it is a naturally dairy free cake. This recipe uses gluten free flour, so it is both gluten free and dairy free.

    What Makes This Gluten Free Angel Food Cake Special

    Impossibly light but never dry, angel food cake is made for warm weather weekends. Slice it thick, and serve it with seasonal berries and cream.

    Cube it, and serve it as a parfait. And if you ask my kids, serve it for breakfast: its practically health food since its made almost entirely of miles of whipped egg whites.

    How To Make This Cake Without A Tube Pan

    If you dont have a tube pan, I dont recommend using another similarly-shaped pan like a bundt pan . Instead, you can divide the batter between two high-sided nonstick loaf pans, and start checking for doneness after 20 minutes.

    Youll need to cool the cake upside down on top of a wire rack, which wont elevate the cake as much as it should. You will have a harder time getting the cake out of the pan, but it shouldnt be impossible.

    You can also try making our recipe for gluten free pineapple angel food cake, which is a bit heavier, and made in a round cake pan. Not only that, but you dont even have to sift the dry ingredients for that cake!

    But even with the sifting, this recipe is so simple and never fails to impress. Let the celebrations begin!

    Tips For Making Gluten Free Angel Food Cake

    Angel food cake really is a finicky recipe. You’ll want to follow the instructions exactly and not substitute any ingredients.

    If gluten free angel food cake is underdone, it will collapse. It’s better to overcook your angel food cake than pull it out of the oven too soon.

    I don’t recommend using liquid egg whites because not all liquid egg whites are the same. After the eggs are broken and separated, the whites go through pasteurization which changes the consistency of the egg whites. Some people have good luck with some brands, while others don’t.

    When whipping the eggs, keep whipping them until stiff peaks form. Don’t overbeat them.

    Don’t grease the angel food cake pan. After this gluten free angel food cake bakes, let it cool for 10 minutes in the pan, then invert the pan onto a plate. As the cake coils, it will shrink away from the pan and settle onto the plate.

    Ingredients In Gluten Free Angel Food Cake

    Egg whites – Egg whites are the main ingredient therefor I don’t have an egg-free version at this time.

    Powdered Sugar – Adds sweetness.

    Granulate Sugar – Adds sweetness and moisture and helps to stabilize the egg whites.

    Gluten Free Flour – I used Bob’s Red Mill 1-to-1 Gluten Free Baking Flour. I don’t recommend Bob’s Red Mill All-Purpose Gluten Free Flour or Namaste in this recipe.

    Cream of Tartar – Cream of tartar is used to add volume and stabilize and whiten whipped egg whites.

    Vanilla Extract – Use pure vanilla extract.

    Almond Extract – Adds flavor. Don’t worry if you don’t’ have any on hand. You can leave it out.

    Salt – Flavor enhancer.
