The ingredients! In the original recipe it was noted Use only the freshest ingredients! a combination of ripe fancy cherries, fresh succulent pineapples, plump raisins, crunchy almonds, walnuts, seedling pecans and just the right amount of bourbon, rum and brandy! Our bakers also know that it is the slow bake which includes a secret process, plus allowing the cakes to mellow to perfection, that makes their Grandmas recipe so special. Yes, our fruitcake is made to be eaten!

Grandma’s Prized Blue Ribbon Fruit Cake

Grandma Little was a wedding cake maker and did so until the age of 76. I have been entrusted with her handwritten recipe collection. In it I have found her personal fruitcake recipe and believed to be her mother’s recipe. This cake has won countless awards and was used for every wedding cake made . I share this with you and in so doing remember Grandma Little, a woderful woman who loved baking as much as I do. She is dearly missed, with this recipe, her memory lives on in my home.

8 ounces crushed pineapple, well drained
16 ounces raisins
3 1/2 cups plain flour
2 teaspoons salt
  • Chop all the dried fruit and nuts. Place in a bowl and set aside.
  • Cream the butter, sugar and honey.
  • Mix the rum, orange juice and eggsin a bowl.
  • Add the wet ingredients alternatley with the sifted dried ingredients. Stiring well after each addition.
  • Add the fruit and nuts. Stir well to combine.
  • Pour into two 9 inch round cake tins or one large 30xm square tin, greased and well lined up to the rim.
  • Bake at 130oC for 4 hours, turning once.
  • Cool in tin.

Can I Freeze Fruit Cake

Once the cake is completely cooled, wrap in several layers of cling wrap to seal it well, and then in aluminum foil. I even put my fruit cake in a freezer bag after all this wrapping, because Im super obsessive about avoiding freezer burn!

Store in the freezer for up to 6 months. Thaw in the chiller overnight, then unwrap, and bring to room temperature when youre ready to enjoy it!

BEATRICE Beatrice Bakery is celebrating an impressive milestone this year.

Grandmas Fruit and Nut Cake, the bakerys No. 1 seller, has been around for 100 years.

The recipe didnt originate at Beatrice Bakery Company, but the company is keeping the tradition alive with thousands of fruitcakes produced each year, making their way to holiday celebrations around the country.

It was 1917 when the Lantz brothers immigrated to the United States and settled in St. Louis, where they opened a bakery. Their grandmothers fruitcake recipe proved to be a hit with area residents, as well as a treasured family heirloom. When the brothers retired from the baking business, they needed to find a bakery that would carry on the tradition.

The Beatrice Bakery bought the recipe in the 1960s with a promise to never change it and, since 1963, the same ingredients have gone into the fruitcake, using the same cooking techniques and even some of the same equipment.

Keeping the recipe the same was not only a promise, but one of the reasons Grandmas Fruit and Nut Cake has such staying power.

This recipe was passed down through the years and given to me by my Grandmother, Elizabeth Lydiard. We called her Grandma Betty. She passed away in 2001. She would have been thrilled to see it here on Just a Pinch. I have no idea how old this recipe is but my Grandmother was born in 1910. My mother and I perfected the mixing process in 2006 as we found adding the fruit last made it easier to mix. It has been said ancient Egyptians placed fruitcake on the tombs of loved ones, perhaps as food for the afterlife. But fruitcakes were not common until Roman times.

Maturing The Cake With Liquor/alcohol

  • Once the cake has cooled, brush generously with 2 tbsp brandy or choice of liquor. Wrap and seal in several layers of cling wrap, and keep in an air-tight container. Place in a cool, dry and dark space like a pantry cupboard.
  • Once a week, or every 4 to 5 days, brush the cake with liquor to keep it moist and extend its shelf life. With a pastry brush, brush 1 2 tablespoons of rum or brandy all over the surface and sides of the cake.

Yes, you absolutely can! The quantity of the pre-mix should not exceed the total quantity of the individual dried fruits, by weight.

Different brands of pre-mixed fruit can vary in sugar content. Some can be cloyingly sweet. You should still macerate the fruit pre-mix in liquor or juice to soften and moisten them, as well as to rid of excess sugar.

Grandma Leone’s Fruit Cake

Don’t get this cake confused with the traditional fruit cake. It is so much more. This recipe has been handed down for 3 generations and I now want to share it with all of you. Don’t get nervous with all the ingredients. Everything gets hand-mixed in 1 great big bowl.

1 ½ tablespoons baking powder
1 tablespoon baking soda
1 ½ cups canola oil
4 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F . Grease two 8×8-inch baking pans.
  • Bring water and raisins to a boil in a saucepan cook until raisins are plump, about 2 minutes. Drain and cool raisins reserve raisin water.
  • Mix 3 cups flour, cinnamon, baking powder, baking soda, and salt together in a bowl. Place pecans and 2 tablespoons flour in a resealable plastic bag close and shake bag until pecans are coated. Pour pecans into a colander and shake off excess flour.
  • Whisk sugar, oil, eggs, and cooled raisin water together in a bowl fold in candied fruit. Stir flour mixture, 1/2 cup at a time, into sugar mixture until fully incorporated fold in raisins and pecans. Fill the prepared pans a little over half full.
  • Bake in the preheated oven for 40 minutes. Lower temperature to 325 degrees F bake until a knife inserted in the center of the cake comes out clean, about 1 more hour.

The Story Of Our Famous Fruitcake

Beatrice Bakery 3-lb Grandma’s Fruit & Nut Ring Cake on QVC

Our recipe dates to 1917 and has been a beloved tradition ever since. The handmade goodness was first introduced to the public in St. Louis, Missouri by two German immigrant brothers. The Lantz brothers owned and operated a bakery where they discovered a family fruitcake recipe in their grandmothers cookbook. The recipe took off, and the Lantz brothers soon found themselves searching for a bigger facility to produce their grandmothers recipe. In 1964, their search took them to Beatrice, Nebraska, and the current facility, nestled in Americas heartland.

The Nebraska bakery changed names and ownership several times before becoming nationally known as Beatrice Bakery Co in 2002. Despite the changes, the original fruitcake recipe remained the same.

We have been featured on QVC, Food Networks UNWRAPPED Holiday Favorites episode, A& E Biographys The House that Santa Built, on ABCs THE VIEWs Holiday Candies, Cookies and Cakes segment and received editorial recognition in Midwest Living magazine.
