After I ate my mothers cake, I took a ferry to Smith Island and met with Mary Ada Marshall, says Murphy, the patroness of Smith Island cakes and the person who spearheaded the idea of making it the state dessert.

WEST OCEAN CITY An fledgling West Ocean City-based bakeryhas struck a deal to distribute handmade miniature Smith IslandCakes to 29 Giant grocery stores in Maryland, Delaware, andNorthern Virginia.

The Original Smith Island Cake Co., a patisserie located at theOcean City Factory Outlets, brought its 3-inch layer cakes to aGiant Food vendor fair earlier this year, where store and districtmanagers gave the thumbs-up.

The mini-cakes won’t have 10 layers like their namesakecounterparts, but are baked individually and hand-assembled toyield four modest slices or two generous ones.

The bakery already has doubled production, including Saturdays,to meet an expected demand of nearly 2,000 mini-cakes a week, saidKim Brady, the bakery’s cafe manager. She delivered their veryfirst orders of original yellow cake, coconut, red velvet, and theseasonally-flavored pumpkin cake.

Next month, the seasonal flavor will be chocolate mint.

Brady said Giant at first wanted to feature the mini-cakes inabout seven stores.

“We ended up starting in 29, and they wanted us to do more,” shesaid. “We just said, well, we don’t want to bite off more than wecan chew at this point. We want to make sure we can handlethis.”

The bakery opened in May 2009. Brady said today business isbooming, thanks to several wholesale accounts. The business in Junealso began shipping its baked goods across the U.S.

This decadent cake can contain anywhere from 8 to 15 pencil-thin buttery yellow cake layers that are layered with chocolate fudge icing that sets like fidge. Smith Island Cake has also been know to be called Frosting with the Cake. The number of layers is determined by the baker. When most people look at a Smith Island cake, they see a delicious dessert. For Brian Murphy, founder of the Smith Island Baking Company, its a multilayered series of calculations. I call myself the spreadsheet cowboy, says Murphy, a former commodities trader who moved to his native Eastern Shore with his family after launching the business in 2009. Everythings a math problem.

The bakery churns out 30,000 of its from-scratch cakes a year, as many as 250 a day. Each consists of eight layers, which meanswe can do math, too!that Smith Island cranks out some 240,000 cake tiers every 12 months. Much of the work is done by hand, a daily dance that Murphy describes as ballet on wheels.

Smith Island cake wasnt actually created by the Smith Island Baking Company. Its a watermans confection born in the 1800s, as deeply rooted in Chesapeake Maryland culinary lore as the blue crab . There are many variations, but they generally all consist of eight to ten layers of cake and icing.

Murphy launched his company on Smith Island itself, but five years ago he moved it to an abandoned grocery store in Crisfield on the mainland, where he wouldnt have to worry about transporting supplies roughly ten miles offshore. Post-Covid, he hopes to start offering tours and tastings that could draw visitors to his new hometown and Somerset County. People only come to Crisfield on purpose or by accident, he says. We want to give them a reason to come on purpose.

There is still a few dozen residents on Smith Island, which is Marylands official dessert. Most of the residents are watermen and their families. There is no doubt that Smith Island Cake dates back to the 1800s. These multi-layered cakes were sent to watermen by island residents for oyster harvesting in the autumn.

We Are The Imperfect Custodians Of A Maryland Treasure

Of course, the cakes history dates back to a time long before there were mixesor even ovens. Back in the 1800s, theyd make them from scratch, probably in a skillet over a firethey didnt have ovens back then, says Murphy. How many layers they made is up for debate. Some say they made layers because it looked beautiful that way, others say it was a contest. They made this fudge frosting that supposedly lasted for months and thats the storybut how long does dairy at room temperature last? Even if the cakes origin story is an old wives tale, he says, Its a beautiful romance.

Because of this variation in recipes, when it came to creating their own recipe, the bakerys staff suggested having the local women bring in cakes and the employees would judge which was best. I said, I know Im no expert on anything but that will be the best way to make these women hate each other forever, jokes Murphy. Lets just start from scratch.

Against the backdrop of a white board that keeps track of the time, the production process , the goals, and inspirational posters like one that says, Bake like a champion, Murphys team cranks out cakes from roughly 8:30 a.m. to 4:30 p.m., five days a week.

Murphy disappears through a door in the small storefront and heads back to bake, no doubt dreaming of new ways to spread this slice of Maryland history.
