Milk Bar Ice Cream: Cornflake Chocolate Chip Marshmallow, Pie, Birthday Cake & Cereal Milk Review

It’s officially ice cream season! But, who are we kidding? It’s really ice cream season all year long. I love trying new kinds, flavors, and brands. So when Milk Bar recently released their new ice cream sold in grocery stores, I couldn’t wait to try it. Currently, Whole Foods is carrying it. I was able to find two of the four flavors. The four flavors are Cereal Milk, Birthday Cake, Milk Bar Pie, and Cornflake Chocolate Chip Marshmallow.

I got to try the Birthday Cake and the Milk Bar Pie. The pints were each right under $6. I really liked the bright colored packaging and how the pints had a tab under the lid. There was even a printed signature from Christina Tosi, the owner of Milk Bar.

The Birthday Cake ice cream is described as B’day cake flavored ice cream with B’day crumbs and B’day frosting. My pints were a little bit melted since I was taking a few photos outside first. But a little melted ice cream in a pint is perfect. It was super creamy and sweet and I loved the chucks of the B’day crumbs. I’ve had the Milk Bar Birthday Cake before and this ice cream really resembled it, but in ice cream form.

What Is Milk Bar

Christina Tosi opened the first Milk Bar in 2008.

Famed pastry chef Christina Tosi opened her first bakery in New York City in 2008, selling inventive, offbeat treats like Compost Cookies , Cereal Milk Soft Serve , and the cult favorite Milk Bar Pie.

More than a decade later, Milk Bar now operates bakeries in New York City, Los Angeles, Boston, and beyond, and ships its baked goods all over the country. Packaged cookies have also started popping up on shelves at nationwide retailers.

Besides her cookies and soft serve, some of Tosis most popular creations include delightful layer cakes and cake trufflesbites of cake coated with a super-thin layer of chocolate and rolled in sand, which is a super fine mix of sugar, flour, and baking powder.

It makes sense for Milk Bar to make milk ice cream. These are currently only available at Whole Foods. If this becomes successful, I imagine there will be Milk Bar Ice Cream Bars. Well, at least I hope there is because Milk Bar Ice Cream Bar has a nice ring to it.

Milk Bar Birthday Cake

This is a ridiculous cake for ridiculous times. This past weekend marked 50 days into the Michigan stay at home order. Other than a daily walk around the neighborhood, the kids have not left the house for 50 days: no school, no church, no stores, no friends, no sports, no driving practice.

Im still going to work seeing kids, and doing all the shopping. No one else at home has been to grocery store to see the dystopian scenes of empty shelves, people wearing makeshift masks and face shields, directional paths to walk through the stores, and 6-foot markers everywhere.

Sometimes, the ridiculousness is too muchlike the couple I saw this weekend wearing bras as facemasks, and welding face shieldstrying to make a decision on what box of tea to buy. Sometimes its just so sad watching the elderly walk warily around stores, struggling to reach an item and feeling like you shouldnt help.

Many items are in short supply, but one thing we have plenty of right now, is time. We have time to learn sourdough bread that takes 3 days, time to take a week making the nine components in a single bowl of Ivan Orkins Shio Ramen, time to learn how to juggle and play the harmonica. Time to watch Netflix, and Disney Plus, and PBS. Plenty of time.

What Do I Need To Make This Milk Bar Cake

Ok yes heres the thing you will need a few things to make this cake that you may not have on hand. Ill be perfectly honest its got some unique tools and ingredients but its all worth it.

  • 6-inch cake rings You will use these to cut the cake rounds out and then to stack the cake. You might be able to try baking this in a 6-inch cake or 8-inch cake round but you would need to adjust the baking time.
  • Jelly roll pan You need to use a specific sized jelly roll pan so the batter fits. You need a 10×15 jelly roll pan.
  • Acetate Cake Collar This is used to wrap around the cake rings to create that look that is the Milk Bar cake.

If you dont want to get all these things but want to experience the wonder that is the Milk Bar cake you could try baking in a 6-inch cake pan and then frost without the cake collar. I havent tried this method, but I think it would work. It wont have the same look but no one will care once they take a bite.

Not being able to travel during the pandemic meant not being able to get my annual Milk Bar fix. But, thanks to their new Milk Bar Ice Cream pints, I could finally get their ice cream at home. So, how does it compare to their in-store soft serve? Lets discuss.

Since 2017, Ive been to Vegas at least once per year well, at least through 2019. And one constant of my visits is getting a cup of Cereal Milk soft serve with hot fudge from Milk Bar Las Vegas at the Cosmopolitan of Las Vegas. I cant explain it, for some reason their savory-sweet soft serve matches incredibly well with their dark, rich, chewy hot fudge. So, when they announced that theyd be selling pints, I got excited.

How Do I Make A Milk Bar Cake Ahead Of Time

I get it. This cake is not for the faint of heart. So here is a breakdown of the components and their make ahead schedule:

Cake crumbs: Up to a week ahead of time. Store at room temperature. You can also store these in the freezer for 1 month.

Cake: You can store this, cooled and wrapped, in the fridge up to 5 days.

Frosting: Store in the fridge up to 1 week ahead of time. Bring to room temperature before using.

Whole Cake Assembled: Store in the fridge, covered up to 5 days. Freezer, covered, up to 2 weeks.

If The History Channel created a Food That Built America 00s Edition episode, Milk Bar and its founder Christina Tosi would be top billing. I mean, cmon: you cant deny Compost Cookies, Cereal Milk Soft Serve with Cornflake Crunch, and Crack Pie were unlike anything wed ever seen until she burst onto the scene.

The first Milk Bar bakery opened in NYC in 2008, and I would have kind friends haul back packages of cookies for me until I could see that neon pink cursive sign for myself years later.

So, whats the big deal? Tosis James Beard-winning culinary genius is tapping into nostalgic flavors like cereal milk and creating the perfect * chefs kiss * balance of sweet and salty. Ive found this true in all her delicious desserts at her flagship bakeries to her newest grocery store items.

The latest to hit shelves are Milk Bar Ice Cream Pints in four glorious flavors that are sure to make OG and new fans giddy. Heres the rundown:

I figured they all be legit because of the Milk Bar brand. However, I also had a good feeling because the receipt detailed Frozen Custard, which signaled to me that this would be full flavor compared to an airy, less than 10% milkfat frozen dairy dessert.
