Yield 2 mini angel food cakes, 2-4 serving
Number Of Ingredients 6
- 4 egg whites, at room temperature
- 1 pinch salt
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
Steps:
- Preheat oven to 375 degrees F. Sift flour with 1/3 cup sugar 3 times.
- In a large bowl, beat egg whites and salt with electric mixer until foamy add cream of tartar and beat until soft peaks form. Gradually beat in the remaining 1/3 cup of sugar and beat until stiff peaks form fold in vanilla. In two additions, gently fold in flour mixture until just combined. Divide batter between the two pans place on sheet pan.
- Bake 20 to 22 minutes or until browned and toothpick inserted comes out clean. Invert pans on cooling grid to cool. Loosen cakes from pans with spatuals remove from pans.

- 1/2 teaspoon salt
- 1 teaspoon grated orange zest
- 1 teaspoon orange extract
- 6 drops red food coloring, optional
- 6 drops yellow food coloring, optional
Steps:
- Place egg whites in a large bowl let stand at room temperature for 30 minutes. Sift flour and 3/4 cup sugar together twice set aside. , Add the cream of tartar, salt and almond and vanilla extracts to egg whites beat on medium speed until soft peaks form. Gradually add remaining sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Gradually fold in flour mixture, about 1/2 cup at a time., Gently spoon half of batter into an ungreased 10-in. tube pan. To the remaining batter, stir in the orange zest, orange extract and, if desired, food colorings. Gently spoon orange batter over white batter. Cut through both layers with a knife to swirl the orange and remove air pockets., Bake on the lowest oven rack at 375° for 30-35 minutes or until lightly browned and entire top appears dry. Immediately invert pan cool completely, about 1 hour., Run a knife around side and center tube of pan. Remove cake to a serving plate.

How To Make This Recipe
1. Freeze a mixing bowl for 20-30 minutes until it’s cold to the touch. Add cold heavy cream, confectioners’ sugar, and vanilla to the bowl.
2. Beat on medium-high until soft, medium peaks have formed, about 4 – 6 minutes. You’re looking for a light and fluffy whipped cream. The peaks should stand up firmly, but still have a slight curl on the tip.
3. To make the trifle cups, begin by cutting the angel food cake into 1-inch cubes. I’d recommend using a serrated knife so the cake doesn’t get smashed while you’re cutting it.
4. Fill each dessert cup up of the way with cake.
5. On top of the cake add a mixture of blueberries, blackberries, and raspberries.
6. Add a scoop of whipped cream to finish off each trifle. I like to use an ice cream scoop for this. Top with a slice of strawberry and any additional berries you have leftover.

How To Make Gluten
1. In the bowl of a food processor, process the gluten-free flour and powdered sugar together until smooth, about 30 seconds.
2. Sift the flour/powdered sugar mixture into a bowl and set aside.
3. Process the granulated sugar slightly, about 5-7 pulses. You dont want to turn it into powdered sugar, just a little finer than it is normally. Set aside.
4. Place egg whites in the bowl of a stand mixer. Add the salt and cream of tartar. Using the whisk attachment, beat on medium speed until starting to foam and soft peaks form. You can also use a hand mixer.
Tip: You can separate the egg whites from the egg yolks or simply buy carton egg whites for this recipe.
5. Add the pure vanilla extract and almond extract and continue whipping on high speed.
6. Add the granulated sugar slowly, about 2 tablespoon at a time to the egg whites while they are whipping.
7. Continue whipping until stiff peaks form.
8. Slowly fold in the dry ingredients ¼ a cup at a time with a rubber spatula. Do this carefully and slowly so you dont deflate the egg whites. This is the key to good traditional angel food cake!
9. Spread the angel food cake batter in a ungreased, 10-inch round angel food cake pan.
Tip: An ungreased 10-inch tube pan is key for this recipe. You need a special round angel food pan for best results so the cake can have enough room to expand. Unfortunately a bundt pan wont work the same.
