I have been searching for this cake for about two years now. In my experience, making a White Cake at home is just never as good as the bakery. Until now. I am not kidding when I tell you that this recipe is it. The flavor is fantastic and the texture is truly perfect. Even the-pickiest-dessert-eater-ever, aka my hubby, loved it.

How To Bake The Best White Cake

To bake this cake, youll need these ingredients:

1 cup butter softened½ cup vegetable shortening5 large eggs at room temperature3 cups all-purpose flour½ cup whole milk, room temperature½ cup buttermilk, room temperature

Begin by preheating the oven to 350º Fahrenheit.

Prepare cake pansPrepare three 9-inch round cake pans with nonstick baking spray or coat well with shortening or butter and flour the pans, taking care to remove all excess flour.

Cream butter and shorteningIn a large mixing bowl or the bowl of your stand mixer, you will cream together butter and shortening until light and fluffy with an electric mixer or stand mixer.

Add sugar and eggs per instructionsThen slowly add sugar one cup at a time to the butter/shortening mixture, making sure to fully incorporate each cup before adding another. Next, add eggs one at a time, making sure to fully incorporate each egg before adding another.

Dry ingredients MilksGet a separate bowl for your dry ingredients and sift together flour, baking powder, and salt. Then in a measuring cup, pour milks and vanilla into the measuring cup and whisk together with a fork.

Final Stir and Scrape the BowlGently stir all ingredients until well combined. Then, stop the mixer and scrape down sides and bottom of bowl, making sure to that all ingredients are mixed well.

Distribute Cake Batter into PansNext, evenly distribute cake batter between the three 9 inch cake pans and place pans into oven.

My son declared this white cake recipe as perfect while Bart said, Now, thats cake. From him, thats really a compliment!

My brother-in-law called me to tell me that this was to be his birthday cake every single year until the year he dies. We had a good laugh at that, but I have to remember each June to make sure to bake this cake.

My white cake recipe results in a sturdy cake. Its tender, yet moist and holds together well from cooling to frosting to slicing and serving. It just the best!

While many white cake recipes use only egg whites, I decided after lots of testing that I preferred the flavor that the whole egg lends to the cake. While the cake isnt stark white, it is still white. It also helps to follow my exact recipe instructions for mixing the cake to ensure that the cake is white.

How To Make The Perfect White Cake

To get started making this cake, first, pour the milk, egg whites, and both extracts into a bowl. Blend the ingredients with a fork. Next, in the bowl of a stand mixer, mix the cake flour, sugar, baking powder, and salt.

Add the cubed butter to the flour mixture and continue to beat on low speed for a couple more minutes. Then, add all but 1/2 cup of the milk mixture to the flour mixture. Beat at medium speed for a minute and a half before adding the remaining milk mixture to beat for one additional minute.

Pour the batter into the prepared pans. Bake for 27-30 minutes, or until an inserted toothpick comes out with a few crumbs, but no wet batter. Let the cakes cool in the pans for about 5 minutes before flipping them onto a wire rack to cool to room temperature.

Can I Make This Cake Into Cupcakes

Yeskind of. You will need to adjust cooking times dramatically. Start checking at 15 minutes you want to cupcakes to no longer appear wet in the center and to spring back when touched. If the edges are brown the cupcakes may be overdone.

Do not fill the cupcake liners more than 2/3 full the cupcakes do not create a big dome, they will be a bit flatter. If you want the PERFECT WHITE CUPCAKE, I recommend my Elegant Cupcake Recipe.

How Do You Get A Truly White Cake

  • Egg whites in the recipe. There should not be egg yolks in a white cake recipe.
  • Butter color. I try to use pale butter. There are many brands of butter that have the most glorious, rich, and vibrant yellow tones. I dont use those when trying to make my cake white. You can also whip the butter on its own for 3-5 minutes to lighten its color.
  • Imitation clear extract. Vanilla can add a dark tinge to your batter, taking away from a vibrant white. Imitation clear vanilla extract helps to keep the batter colorless.
