Its taken me several years to perfect my paleo baking and I think Ive finally got it nailed. But Im sure many of you will have questions regarding the ingredients, so lets dive into those.

The Perfect Birthday Cake
This recipe is the perfect way to kick-off my birthday month with a deliciously decadent chocolate birthday cake.
Now, its a birthday tradition of mine to always have a mint chocolate something on my actual birthday. Previously, I made these Mini Skillet Brownies with Fresh Mint Chocolate Chip Ice Cream. But its quite involved. So Im thinking something slightly easier this year. My birthday is the last day of the month, so Ive still got a few weeks.

The Creamy Buttercream Frosting
Now, Id be remiss if I didnt mention that the chocolate buttercream frosting is equally impressive. Like lick the bowl impressive. Its also vegan, dairy-free and paleo, depending on how you make it.
Ive separated that recipe into its own post, so that you can easily search for it and use on other cake or cupcake recipes in the future. But together, Im not kidding when I say that this is by far the best paleo chocolate cake recipe out there. It may even be the best chocolate cake recipe. Period.

How To Make Gluten
- Preheat your oven to 350°F.
- Line a muffin pan with cupcake liners or spray with gluten-free cooking spray.
- In a large bowl, cream the softened butter. Add the sugar and beat until smooth.
- Add eggs and vanilla extract and mix until fully combined and smooth.
- Add gluten-free flour, baking powder, and salt and mix until combined.
- Pour in milk and mix for 2 minutes on medium until batter is smooth.
- Scoop the cake batter into the lined muffin pan. I always use a greased ice cream scoop when making cupcakes and muffins. It measures out the perfect amount and is less messy than trying to spoon batter into the pan.
- Bake cupcakes for 25 minutes. Please watch your oven because all ovens are different. I like to check my cupcakes with a toothpick to make sure they are done also.
- Allow cupcakes to completely cool before frosting. I like to use a baking cooling rack.
- In a large bowl, cream the softened butter until smooth.
- Add the pure vanilla extract and mix until fully combined.
- Add the confectioners sugar 1 cup at a time and mix until fully combined.
- Add the milk and beat until smooth and spreadable.
- I like to line a piping bag in a tall glass and then add the frosting. It makes it easier and less mess to fill. My favorite frosting tip is the Wilton 1M.
Why Did My Gluten
There are several reason why gluten-free cakes sink, one is from over beating the batter and adding too much air.
Also, cakes often will sink when there is too much moisture. This is more common in humid climates where added moisture can collect naturally in ingredients such as flour.
When this occurs, the center of the gluten-free vanilla cake rises rapidly and then falls during baking.
In higher elevations, the leavening agent works twice as hard and may cause the batter to rise rapidly and sink before itâs had a chance to set up.
All these tips are relevant to most cake recipes, not just this gluten-free vanilla cake recipe.

Tips For Baking The Best Gluten
- Line the bottoms of the cake pan with parchment paper. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly!
- Use gluten-free cooking spray to grease your cake pans. I like gluten-free coconut oil cooking spray.
- Make sure to take the time to soften the butter.
- Allow the cakes to cool in the pans for 15 minutes and then finish cooling on a cooling rack.
- Allow the cakes to completely cool before your frost them.
Can You Freeze Cake
Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.
Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.
I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.
For most people with severe food allergies, using a mix out of the box isnt an option, so this version allows you to select your favorite gluten-free flour.
Youll also find that the use of chocolate non-dairy milk gives this cake a moist, rich texture that will bring everyone back for seconds. You can find this dairy-free option in the refrigerated section of your grocery.

Chocolate Tart With Graham Cracker
In case you missed it, my Mom whipped up this GF/DF Dirt Cake for my birthday this year, and it was a smash hit with me and the grandkids After posting about it, many of you asked for the recipe, and Im thrilled to spread the GF/DF Dirt Cake love!
Also, any recipe that causes Lincoln to start giggling in utter delight after his first bite is a recipe that needs to be shared. Hes already requested it for his birthday next week which will definitely blow the disaster that was his first birthday cake, and box mix cupcakes I made for his 2nd birthday, out of the water. He loves this Dirt Cake SO much!
I know this recipe is very specific, so if you dont have a gluten or dairy-free dessert-loving person in your life, I still highly recommend the original Dirt Cake recipe for a summer get together, birthday treat, or even as a fun, Halloween-themed dessert. That said, if you or someone you know has Celiac Disease and/or a dairy/gluten intolerance/allergy, than you know its hard to find safe desserts that dont taste like theyve been modified to be allergy-friendly. This recipe, however, is even better than the original. Its all about the homemade 5 minute pudding recipe, man.
Also, just throwing this out there, this is definitely not a healthy version of Dirt Cake. Simply a creamy, velvety, and chocolatey version that will blow the socks off the gluten/dairy-free person in your life. You have to let me know if you give it a try.
Tips For Baking Gluten
- For uniformed sized cupcakes, I always use a greased ice cream scoop. It makes it nice and easy to get the perfect amount in the baking pan.
- I also like to use cupcake liners to keep the cupcakes from sticking to the pan.
- Allow your cupcake to completely cool before frosting them. I like to use a cooling rack.

When it comes to vanilla cake, I dont know where to start. Ugh. Since going gluten and dairy free I had not enjoyed vanilla cake. After trial and error of soooo many recipes I had found, and none of them working out. Then I was wasting money on every box brand I could find I could find at the store.
