  • Use only egg whites. Save your yolks for another recipe.

    How To Bake A Perfect Gluten

    Mixing

    There are two important steps to this recipe: how you cream the butter, shortening, and sugar and how you add the dry and wet ingredients.

    Lets talk about creaming the butter, shortening and sugar. Combine the three ingredients in the bowl of a stand mixer. Then you beat the ingredients for five minutes. How serious am I about five minutes? Very serious. In fact, Id love it if you used a timer.

    During this time, the mixture goes from a thick paste to a light, white and fluffy mixture. Since a thin layer of butter and shortening always clings to the side and bottom of the bowl, stop the mixer at least once during the five minutes and scrape the bowl.

    I know this step seems long and putzy but, trust me, its worth it. #dontskipitplease

    After beating the butter, shortening, and sugar, add the egg whites one at a time. Again, dont rush this. If mixed correctly, the batter should look like fluffy frostingwhich is what weve basically made here.

    Up next, the flour, sour cream, and milk. Add 1/3 of the flour and allow it to mix into the batter. Then add the sour cream. Let it mix into the batter. Once youve added the sour cream, alternate between adding the milk and the remaining flour.

    Is this putzy? Yes! It is! But its worth it.

    Bake the cakes in a preheated oven until a cake tester inserted in the center of the cake comes out clean. A few damp crumbs might stick to the cake tester or toothpick but you shouldnt see any wet batter.

    Do Gluten Free Cakes Taste Different

    They do have a different taste to the non gluten free cakes I make because I use different recipes. Gluten free baking is not just a question of taking any recipe and replacing the wheat flour with gluten flour! It would be easy, but it doesnt work that way. Gluten free flour, because of its chemical components, gives cakes that are a lot flakier and a lot drier than non gluten free cakes if you dont adapt the whole recipe to accommodate for it which is something I do. So yes, if you try a non gluten free vanilla cake and a gluten free vanilla cake, both made by me, you will notice a difference in taste but you wont be able to tell which is gluten free. My customers often have a little panic during consultations because they think I have forgotten they required gluten free cakes thats how good they are!

    This cake is the epitome of what a vanilla cake should be to me. It tastes like a cake made from cake flour, yet it is gluten-free and not made with vegan butter or processed oils . You know, the ultra tender, cloud-like softness that dream cakes are made of. Since when did gluten-free cakes have to be SO dense, gummy and chewy. I dont like my muffins, cupcakes or cake to be chewy! I have always felt that way, even with regular all-purpose baked goods. I remembered how soft and delicate the crumb was on my own wedding cake years ago, but I truly didnt think I could achieve that with NO eggs, NO gluten and NO oil. Especially when I had so many flops in the kitchen while testing.

    What Are The Types Of Flour Substitutes

    Rice flour rice which has been finely ground to make a flour consistency

    Sorghum flour a grass-family flour that originated in Africa and Asia. Rich in protein and fibre.

    Buckwheat flour a pseudocereal which does not contain wheat! Flour made from milled buckwheat

    Potato starch the starch extracted from potatoes!

    Tapioca flour roots of the cassava plant ground to a starch

    Corn flour ground starch from corn

    Ground almonds finely milled almonds

    Xanthan gum a polysaccharide used to bind cakes together

    How To Make Gluten Free Vanilla Cake:

    Step 1: Add the dry ingredients to a bowl and whisk to blend.

    To measure your gluten free flour, I recommend using the spoon method or leveling method. In a perfect world, people weigh their flour, but most do not own a kitchen scale. To make a scale even trickier, every gluten free flour blend has a different weight.

    Put the measuring scoop into the flour and fill. Do not pack the flour. Use a knife to scrape along the top to remove the extra flour.

    You can also use a spoon to fill the measuring cup. Use a knife to level along the top to remove the extra flour.

    Step 2: In a smaller bowl, add the wet ingredients and whisk to blend. Pour the wet ingredients into the dry ingredients and mix well.

    NOTE: If you are making a white cake, see the FAQ below for specific directions. They are a little different!

    Step 3: Your gluten free cake batter will be creamy like in this photo. Sometimes different gluten free flour blends behave differently depending on how much starch is in the mix. You may need to add a little extra liquid if your batter is too thick.

    Step 4: Add the vanilla cake batter to your layer cake pans and bake. For these little layer cake pans, I baked the cakes for 20 minutes. If you are using larger cake pans, you will need to bake the cake longer.

    Step 5: To make the gluten free cream cheese frosting, add softened cream cheese, butter, powdered sugar, and a bit of water to a bowl and mix well until thick and creamy.

    How Much Vegan Buttercream Do I Need

    Another great question! This will really depend on the style of cake youre doing. For instance, a naked cake will need only about 3 batches of vegan buttercream for a 4 tiered cake, but a traditionally frosted wedding cake will need about 6 batches . And a heavily decorated in icing wedding cake will need even more.
