It was great to hear that they thought the cake was just as good after their last bite as they thought it was with their first.
Heres another great thing about this recipe. The cake batter really can be made in a bowl without the use of a heavy duty mixer. Of course, that just makes things easier, but this is easily a recipe my Grandmother would have enjoyed making in her tiny kitchen with a whisk and a bowl. And Im sure it would have turned out perfectly, too.
Im not going to kid you, this makes a very rich, moist chocolate cake recipe. So if you are a faint of heart chocolate cake person, this is not the cake for you.
Based on the Old Fashioned Hersheys recipe, I sort of went a bit heavy-handed with some changes testing cake after cake until I got it just the way I wanted it, but the end result was oh so worth it. The crumbs left on the plate gave that away.
How Do You Make Strawberry Flavored Cake
So how do you make a strawberry cake with real strawberries? You start by making a strawberry puree. How do you make a strawberry puree for cake? Im glad you asked!
To make a simple strawberry puree, youll take 1 quart of strawberries, clean them, cut off the stems, and put them in a food processor until they are all nice and pureed. You should end up with about 3 cups of puree. Now some stop there, but I decided to get a more intense strawberry flavor for this homemade strawberry cake and buttercream, I wanted to make a strawberry puree reduction. That means I took the fresh strawberry puree and placed it in a saucepan. I turned the stovetop on to medium-low heat and allowed the strawberry puree to simmer for about 30-45 minutes until the puree has reduced down by half, or about 1 ½ cups. Why do this? It cooks out some of the moisture of the strawberries, but keeps all that berry-bursting flavor. This is the reduced strawberry puree that you will use in the cake and in the buttercream. Be sure to plan ahead on this part. Youll need the reduced puree to cool completely before you make the cake. I often make prepare the puree the day before I will be baking the cake.

How To Use Fabric Cake Strips
1. Soak a fabric baking strip in a glass or bowl of water. Its best to leave the strips to soak for a while as they are not very absorbent. I always squeeze them a few times when submerged to really soak the inside.
2. Wring the strips out before applying so theyre not dripping wet but still quite damp.
3. Adjust the strips to fit snugly around the cake pans. Most cake strips come in sets of different sizes so if youre using a scale to measure out the cake batter in each pan make sure to zero each pan out first.

You can also grease your pans with a cooking spray, or line them with parchment paper, but greasing and flouring the pan allows for a quick release and keeps all the moisture in.
- Grease and Flour Method: To grease and flour the pans, simply take room temperature butter and rub it alllllll over those pans. Like a massage. Then spoon flour into the pan, twisting it around until the grease is completely coated around the pan. Bang against the counter to release any loose flour and dump it out, leaving a thin layer around the entire pan.
- Parchment Paper Method: You can line the whole pan with parchment paper or cut out a circle of parchment paper to just line the bottom of the pan and then grease and flour the sides! This will give you a cleaner cake and a super easy release.
Divide the batter evenly between the two pans. Bang the pans against the counter to get rid of any air bubbles.

Why Do Cake Layers Dome
When you bake cake layers the outside heats up and baked more quickly than the center, which is insulated by the rest of the batter surrounding it. So basically the outside of the cake layer bakes first the inside of the cake layer has more time to rise and by the time the inside is set and baked through the outside is starting to dry out and burn.
