Okay, so the original recipe calls for walnuts and raisins. I dont normally like raisins in baked goods, but I dont mind them in this cake. If you dont like them, leave them out it will not be a problem.

Now about the walnuts. I like the flavor and texture walnuts add to this recipe, but I noticed that the walnuts in this recipe when cooked in a bundt pan have a tendency to sink to the bottom. This isnt a huge issue but some of them will stick to the pan and leave little divets in your cake . My suggestion is to chop them smaller/finer then you normally would and that will help them not sink so much.

Simple to make with only three ingredients with a variety of uses. Great to use over Bundt cake because it sets up nicely. The extra sauce may be refrigerated and reheated to serve over ice cream or your favorite dessert. I came up with this once when I didn’t have any confectioner’s sugar to make a glaze for a Bundt cake.

1 cup semisweet chocolate chips
1 teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, combine the sweetened condensed milk and chocolate chips. Cook, stirring constantly, until the chips are melted and the mixture is smooth. Do not allow it to bubble. Remove from the heat and stir in vanilla. Cool slightly before drizzling over a cake. If you want to make this ahead, it can be cooled and reheated in the microwave.

Preheat oven to 350 degrees. When it is completely mixed in, fold in carrots and raisins. Sift together flour, baking soda, baking powder, salt, cinnamon and nutmeg. How To Frost Mini Bundt Cakes

I watched a news clip from a local morning show recently, and one of the managers from Nothing Bundt Cakes was on the show sharing how they frost their cakes! It isnt rocket science, but I still found it helpful.

  • The first thing you need is a good frosting. Dont worry, Ive got you covered . Cream cheese frosting is creamy and perfect for frosting bundt cakes. I find it easier to work with than buttercream frosting.
  • Youll also need a #12 frosting tip and a disposable icing bag. Trim the bottom of the icing bag just enough to be able to slide the tip inside. Alternately, if you have a frosting coupler you can use one. I like using a coupler because I think it creates a better seal without any frosting leakage from the bottom.
  • Begin icing from the BOTTOM and work your way up, ending in the center of the bundt hole. Frost on each side of the ridge. You can see in the photo above that I am icing the right side of the ridge. After that I iced the left side. Any excess frosting falls into the bundt hole. Since my craving didn’t allow me to place an order in advance, I scoured the interwebs for the Nothing Bundt Cakes secret recipe that makes the cake so moist. I knew the recipe had to have pudding for sure — and I also didn’t really feel like making a cake from scratch because #kids. Thanks to some pantry staples, we ended up with our take on their classic vanilla bundt cake, with the addition of some chocolate chips because, again, #kids.

Feel free to leave those out if you want to stay true to the OG classic vanilla recipe.

Step Four: Make The Glaze

Melt butter in a small saucepan over medium heat and then add in brown sugar and stir until the sugar has melted.

Add in the confectioners sugar and take off the heat.

Keep mixing until thick and then add in milk to create a loose glaze. If its still looking a little too thick, keep adding a 1/2 tsp of milk at a time until you reach the desired consistency.

Note: This glaze hardens quickly, so only make it right when the cake has cooled and youre ready to pour it over the bundt cake.

Tips For Making Amazing Cakes Using Cake Mix

You dont need to do all of these. Just making one change will elevate your cake!

  • Add 1 c. of sour cream to the batter.
  • Add 1 small box of pudding mix to the batter.
  • Use milk instead of water.
  • Use butter instead of oil.
  • Add a teaspoon of your favorite extract.

Its really that easy.

For our mini bundt cakes today we are going to just stir in 1 cup of sour cream and add a packet of pudding mix.

I use a box of vanilla pudding in the carrot cake recipe that I linked above, as well as a box of banana or vanilla pudding mix in my bakery style banana bread. Experiment with different flavors of pudding mixes to see what you like!

Easy Carrot Cake : The BEST carrot bundt cake recipe

1 3.4 oz instant vanilla pudding mix, dry1 c sour cream4 large eggs separated into 4 egg yolks and 4 egg whites1/2 c oil1/4 c water or pineapple juice if using crushed pineapple1 c shredded carrots1/2 c crushed pineapple

Preheat oven to 350 F. Using an electric mixer, beat the cake mix, pudding, sour cream, egg yolks, oil and water for 2 mi. Stir in carrots and pineapple. In a separate bowl, beat egg whites until white and frothy. Fold or mix egg whites into the cake batter until well blended. Pour cake batter into a greased Bundt cake pan . Bake for 45 50 min. Let cool for 20 min. Remove the cake from the bundt pan and place it on a serving plate or cake stand. Wrap the cake well with plastic wrap and let it sit in the refrigerator overnight or for several hours before frosting and serving. You can completely cover the bundt cake with the frosting or you can frost it as follows. Spoon all of the frosting into a gallon size plastic bag. Squeeze the air out and seal it. Cut a corner off of one end of the bottom of the bag. Squeeze the frosting out in thick long strips starting at the outside of the cake and ending in the center. Fill the center of the cake with the remaining frosting. Keep refrigerated.

Okay, it’s time to get started making our Nothing Bundt Cakes copycat recipe. There are two sections of this recipe: the bundt cake and the frosting. We’ll start with the cake ingredients.
