This is definitely a bonus option but I always trim off the brown from my cakes because I think it makes a prettier slice. Its honestly pretty easy to do and also makes the cake very slightly smaller so you have less of a chance of having brown show through your buttercream.

Turn your cake upside down so the bottom is at the top. Slide your knife just under the brown skin and slowly cut it off in one piece. Keep your knife nice and flat for best results. Do the same thing to the sides.

You can see the difference.

If the brown doesnt bother you then you can definitely skip this step.

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 12 oz milk chocolate chips

Instruction:

Step 1. In a bowl, mix flour, baking soda, and salt until well-combined. Set it aside.

Step 2. In a separate bowl, beat butter, brown sugar, sugar, and vanilla together until become inseparable. Then, add the egg and continue to beat until everything well-combined.

Step 3. After that, combined the dry and wet mixture in a bowl, slowly. Then, add the chocolate chips by gently stirring them in.

Step 4. Spread over the dough on a lightly greased crockpot with the side a little higher than the middle part. Before closing the lid, put some paper towels underneath your lid and pull on the sides at the same time so it is snug and cook on high for 1,5 hours.

Step 5. Once the middle part is set, remove the insert and flip the cake in a cooling rack for 20 minutes before placing it on the cutting board. Enjoy!

How To Assemble And Frost A Layer Cake

Once your cake is baked, cooled, and leveled its time to frost. Evenly frosted layers and using a very stable frosting are two important factors in a stable layer cake. By following these simple steps, you can still frost beautiful cakes.

  • Step 1: Place a dollop of frosting on a cake board or the plate that youre stacking your cake on. This helps to prevent the cake from sliding around. Place the bottom layer center on the cake board.
  • Step 2: Pipe a layer of frosting using a piping bag to ensure its even . Pipe from the outside edge into the middle. You dont have to use a piping tip, you can snip off the end of the bag as well. Use an angled spatula to smooth it out.
  • Step 5: Add the final layer of frosting. You can do this by hand, but I find its easiest to continue to use a piping bag fitting with a large open round piping tip, or for larger cakes, I use my cake icer tip- but note that this requires a lot of extra frosting.
  • Step 6: Scrape it evenly using a cake scraper or angled spatula at 90 degrees or perpendicular to your cake. Its best to use a turntable to rotate the cake and hold the cake scraper still. You dont need to apply a lot of pressure and youll likely make a couple passes in order to get it nice and smooth.
  • Step 7: Frost the top using the remaining frosting. Continue to use the scraper or angled spatula to remove any excess frosting.
  • Step 8: Decorate using extra frosting then add sprinkles, fruit or décor.

The flour to use for your Nigerian CakeYou MUST use plain flour for you to have success with the Nigerian Cake recipe detailed on this page. I do not know what using a self-rising flour will do to your cake if you use it. The problem with self-rising flour is that they never state the amount of the leavening agent they added to the flour. This is why I prefer plain flour so that I have more control over the amount of baking powder that I add to the cake recipe.

For my US audience whose butter comes in sticks. I don’t know the weight of 1 stick of butter. Bring it out from the fridge the day before you make your Nigerian cake. This way, it will be soft enough for creaming on the day you’ll bake the cake.

SugarIf you think your granulated sugar is too coarse, you can grind it with a dry mill before adding it to the butter for creaming. You only need to grind it a little bit to reduce the size of the grains of sugar. This reduces the creaming time.

How To Prepare The Pans For Baking

Youll notice the outside edges of the cake are also a little darker without them. The bake even stripes should be WET when apply them to the outside edge of the pan.

When you are almost done with the creaming, prepare your cake pan by rubbing the insides with soft butter. Then put some flour into the greased pan, making sure the flour touches every part, then pour out the flour.The greasing and flouring of the insides of your cake pan will prevent the cake from sticking to the pan thereby making it easy for you to bring out the cake from the pan when done, without denting the cake.

This is what I like to do so that I am not rushed to decorate. Do not freeze your cakes solid if you plan on using them the same day or it will just take a really long time to defrost them.

    If you do freeze your cakes, place them on the counter still wrapped until they are defrosted.

    Chilling your cakes is super important so that you can trim them and handle them without them breaking. The chilling causes the butter inside the cake to get nice and hard but will get soft again when the cake comes to room temperature.

    It should appear lighter in color and double the sized in volume once it has been creamed properly. This can take 5 to 10 minutes.

    How To Get Smooth Frosting On Your Cake

    Now were going to apply the final coat of buttercream to our cake. Use your larger offset spatula to apply some frosting to the top of the cake and smooth it down flat the same way we smoothed out the layers of buttercream between the cakes. Now apply some frosting to the sides of the cakes. Make a nice thick coat.

    Now comes the fun part. Use your bench scraper to slowly scrape away the excess frosting. Wipe the excess back into the bowl. Hold the scraper straight up and down with the base against the turn table. Once you get to the board, youre done! If you have any low spots just add some more buttercream and continue scraping until the sides are nice and smooth.

    Use your small offset spatula to clean up the top edge by slowly dragging the buttercream from the outside edge towards the center in a smooth motion.
