Its fun to make, too you boil a whole orange before puréeing it with a little lemon to make a smooth paste, which forms the base of your cake. Dont forget to top with a fragrant rosemary and cardamom drizzle.

What Cake Pan Size It Best

I love using 8 inch round cake pans or 9×13 pan for a sheet cake. Each recipe has notes listed if you want to use a different size pan, but I always refer to this post about cake pan conversions! How To Make A Gluten

  • Add sugar, flour, cocoa, baking soda, baking powder, and salt to a large mixing bowl.
  • Mix until combined and no lumps of cocoa remain.
  • Add the eggs, sour cream, oil and vanilla.
  • Beat on medium speed for 1-2 minutes. Add hot water and stir until combined. If desired, stir in chocolate chips.
  • Poor into a non-stick bundt cake pan. Tap sides to help it settle.
  • Bake as directed. Allow to cool for 10 minutes in the pan, then loosen the sides of the cake with a rubber spatula. Invert the cake on a cooling rack and allow it to settle onto the cooling rack. You can frost this gluten-free chocolate bundt cake, drizzle it with melted chocolate, or enjoy it as-is.

    My family devoured this gluten-free bundt cake. Well, at least they tried to. I did end up giving about half of it away to friends .

    Choose Your Decorations And Garnishes Wisely

    Sometimes, your garnish or decorations can make or break the cake. You can make a gluten-free cake mix taste better by choosing a decoration that counters the bad part of the mix.

    If you dont like the flavor of the cake mix, then choose a very flavorful garnish, glaze, or frosting.

    Or, if you think the cake is very dry, choose a moist fluffy and light frosting, drizzle the cake in a thin flavored syrup, or add some glaze.

    Mixing Batters Longer Provides Structure

    While traditional recipes often warn against overmixing to avoid building up excess structure in delicate batters so that they dont turn rubbery, we found the opposite to be true of gluten-free batters. In fact, we often find ourselves trying to get the batters to have more structure so that they have a better rise and a nicer chew, and can support stir-ins, such as blueberries. The Gluten-Free Blueberry Muffins below show the difference between an undermixed batter and a well-mixed batter in terms of both overall height and the ability to support berries evenly throughout the muffin.

    If you need to lower the potency, you can substitute some regular milk in the place of cannabis milk. To increase the potency, make your cannabis milk more potent .

    Another alternative is to divide the cake into smaller pieces . Therefore the smaller serving size would decrease the overall potency. If you wanted to increase the potency you can divide the gluten free cake into larger portions .

    Notes On Ingredients And Substitutions For This Gluten

    • Gluten-free Flour Blend: I have tested this with, and recommend, gfJules gluten-free flour or King Arthur Measure for Measure Flour Blend. My friend Megan tested this cake with Bobs Red Mill 1 to 1 baking flour and said it worked great. Other high quality gluten-free flour blends should work well in this too! Try your favorite!
    • Xanthan gum: Omit this if your flour blend contains guar gum or xanthan gum already.
    • Applesauce: applesauce is used here to cut the amount of oil needed, increase the flavor, and keep the cake moist. If you only have sweetened applesauce, you can use that and cut the sugar in the recipe a bit. Or you can replace the applesauce with additional oil.
    • Unsalted butter: You can use salted butter, and then just adjust the salt in the recipe to only 1/4 tsp instead of 1/2. To make this cake dairy-free, then use oil instead of butter. I prefer using an oil with no taste, like a corn or canola oil.

    If you like coconut, nuts, raisins, or pineapple, feel free to stir in any of those into the cake batter!

    Why did I call this gluten-free carrot cake easy? The hardest part is getting the carrots washed, peeled, and shredded. The rest is simple mixing together!

    Wash and peel your carrots before finely shredding them. A food processor or food chopper is best for finely shredding them.

    You can save time by buying baby carrots too! Then you can just drop them right into the food chopper.

    This gluten free chocolate cake is pretty much exactly that. Quick and easy to make, with an overabundance of cocoa powder and chocolate, without being overly sweet. It walks that line between the bitterness of dark chocolate and the creamy sweetness of milk chocolate and it does it well. Very well.

    The gluten free chocolate sponges are melt-in-the-mouth soft, and each bite feels like taking a sip of luxuriously rich hot chocolate. Just, you know in cake form.

    The chocolate buttercream frosting is fluffy and rich, its chocolate factor coming from both a generous helping of cocoa powder and a whole lotta melted dark chocolate.

    And when you combine the two well, its basically every chocoholics dream come true.

    When it comes to decorating the cake, I went with the rustic minimalism of buttercream swirls you can easily create with an offset spatula or even the back of a spoon.

    Gluten Free Cake Vs Regular Cake: Do Gluten Free Cakes Taste Different

    Many gluten free flours do have a bit more of a flavor than traditional white all-purpose flour. This is especially true if you are using a nut or bean flour, like almond flour or chickpea flour. However, the Bobs Red Mill flour I recommend does have a fairly neutral flavor. And when you are combining it with berries and sweet whipped cream , it actually tastes quite yummy.

    As with all gluten free baked goods, you might notice a bit of a grainy texture. But in this case, when it has absorbed the moisture and flavor from the berries and cream, it ends up moist and tender. And it is certainly better than many of the store-bought, commercially produced gluten free cakes.

    Cakes are one of my favorite things in the world to make, eat and photograph. You may think that a gluten free cake cant possibly be as good as a gluten containing cake, but seriously, any one of these recipes will prove you wrong!

    How Do I Make Chocolate Buttercream Frosting

    This delicious chocolate buttercream frosting is just softened unsalted butter, powdered sugar, cocoa powder and melted chocolate, all whipped together into fluffy submission. Oh, and a generous pinch of salt trust me on that one.

    Salt calms down the sweetness of the powdered sugar, and lifts up the chocolate to shine in all of its glory. Its the kind of baking magic that makes you all warm and tingly inside, like youre a part of a secret society of people who understand that salt has a place of honour in a chocolate frosting.

    Makes 42 ounces

    Be sure to use potato starch, not potato flour. Tapioca starch is also sold as tapioca flour they are interchangeable.

    24 ounces white rice flour

    7 1/2 ounces brown rice flour

    7 ounces potato starch

    3 ounces tapioca starch

    3/4 ounce nonfat milk powder

    Whisk all ingredients together in a large bowl until well combined. Transfer to airtight container and refrigerate for up to 3 months.

    Make the Gluten Free Cake

  • Preheat your oven to 350°F and line cake pans with parchment paper.
  • Whisk together the dry ingredients in a bowl and set aside.
  • Cream the butter and sugar, then add egg whites and vanilla.
  • Add the flour mixture, milk, and yogurt. Beat until combined.
  • Divide between the prepared pans.
  • Bake for about 20 minutes and cool.
  • Make the Strawberry Filling

  • Toss the sliced strawberries with a bit of sugar and allow the juices to release.
  • Chill your bowl, beaters, and cream.
  • Whip the Cream

  • Whip the cream, powdered sugar, and vanilla to soft peaks.
  • Assemble the Cake

  • Top the first layer of cake with whipped cream, berries, and another layer of whipped cream. Top with another layer of cake and repeat. Then place the final layer of cake on the top.
  • Cover the entire cake with whipped cream. Garnish with strawberries or even White Chocolate Covered Strawberries, if desired.
  • Refrigerate until ready to serve.

    Tips For Baking The Best Gluten

    • Line the bottoms of the 9-inch cake pan with parchment paper. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly!
    • Use gluten-free cooking spray to grease your cake pans. I like gluten-free coconut oil cooking spray.
    • Make sure to take the time to soften the butter.
    • Allow the cakes to cool in the pans for 15 minutes and then finish cooling on a cooling rack.
    • Allow the cakes to completely cool before your frost them.

    How To Make This A Corn Free Gluten Free Vanilla Cake

    In place of cornstarch, try arrowroot or even potato starch. Either should work fine. Were really using cornstarch to make our all purpose gluten free flour blend into more of a gluten free cake flour.

    If you are using a higher starch all purpose gluten free flour blend like Cup4Cup , replace the cornstarch in this recipe with an additional 54 grams of your flour blend.
