You know I had to make another ice cream cake before the end of summer! AND you know in this house, peanut butter rules! So it is not surprising this peanut butter ice cream cake happened right after my birthday ice cream cake. This cake has been declared the BEST creation of the summer by Mr J and I must say, it is hard to argue with him. Its pretty darn good.
I mean, what is there not to like? A chocolate cookie crust + peanut butter stampede ice cream + a layer of peanut butter cups + another layer of peanut butter stampede ice cream + chocolate ganache or drizzle and more peanut butter cups = a peanut butter lovers dream!! Insanity! At least that is what I was informed when I was given a strict warnings to only share this cake with a select few because the hubby wanted to keep it all to himself.

Tips For Making Ice Cream Cake
Since this cake is literally just all ice cream, and no cake, its important to have your freezer ready. A cold freezer with space for your springform pan is essential.
Youll freeze each layer of the cake in between additions. Doing this makes it easier to spread it each, and ensures less melting.
Using a springform pan makes serving the cake a breeze and I hiiiighly recommend using one . Pop off the outside and either remove the cake from the bottom or be a rebel like I can be and gently cut it on the pan.
You can see the layers beautifully then, and it removes the stress of getting each piece out of a pan.
Soften the ice cream a little before spreading in on each layer. I recommend taking the ice cream out of the freezer for about 10 minutes before adding it to the cake.
The slightly softened ice cream will spread easier, resulting in a more uniform layer and saving you some muscle work. It also helps when you mix the peanut butter cups and vanilla ice cream.
Add the final layer of fudge before serving. Ive found that letting the cake completely freeze through solidifies the cake more and when the final layer of fudge is put on, it easily does so. If not, it tends to slip and slide around, leaving a strange-looking top to the cake.
You can then freeze the fudge for another 30 minutes or go ahead and serve. Of course, after youve added your toppings.

1. Bake the brownies according to recipe directions in two 9-inch round pans.
2. Cool completely, and remove from the pan.
3. Place one brownie round in the bottom of a 9-inch round springform pan lined with parchment paper.
4. Top with the softened ice cream and smooth with a spatula.
5. Place the second brownie on top.
6. Freeze overnight.
7. When ready to serve, remove the cake from the pan, and pour the fudge sauce on top.

I made this cake for Little Boy #1s birthday party a couple of weeks ago, and I had to share it with you because it was so very GOOD and EASY to put together. He always requests an ice cream cake, and while the cakes from our favorite ice cream shop are good, they can be a little pricey! Homemade is the way to go here.
Ive made ice cream cakes before, but what I love about this one is that you make it in a springform pan. This makes it foolproof. Your cake turns out round and even every time. This cake has a layer of fudge and chopped peanut butter cups inside that I didnt take a picture of. Because I didnt want to serve an ice cream cake with a piece cut out. Youll have to just trust me theyre in there.
I also love the versatility here. You could really use any kind of crushed cookie, any flavor of ice cream, and top it with your favorite kind of chopped up chocolatey candy.
My best tip for making this ice cream cake nice and smooth is to use a metal spatula dipped in hot water over the outside of the cake. This will slightly melt that outside layer of ice cream and smooths out any bumps or uneven spots.

Nope, its not made with cartons of ice cream. But no, it doesnt involve cooking custard and churning in an ice cream machine either.

An Oreo Cookie Crust Is Delicious
Of course, you can make the crust with any cookie you like.
A peanut butter cookie, such as a Nutter Butter, would be delicious. Simply pulverize about 18 to 20 cookies, add some melted butter and vanilla, and the press into the base of a 9-inch springform pan.
But we think a good ole Oreo cookie crust just cant be beat with this amazing ice cream cake. And you dont even have to remove the cream filling of the cookies!
Now, its time for stage 2Making the ice cream!
Be sure to follow your manufacturers instructions for churning ice cream, but all you really have to do is pour the chilled custard into the ice cream chamber, and then churn away!
After about 50 to 60 minutes, youll have a soft, but ready-to-eat ice cream. However, youre not done yet. Youll need pour this into your prepared pan. And then you guessed it, into the freezer it goes for at least 6 to 8 hours, or even better, overnight!
Peanut Butter Cup Ice Cream Dessert
My husband is a big fan of chocolate and peanut butter, so when we celebrated his birthday a couple weekends ago, I wanted to incorporate peanut butter cups into his cake. I also wanted something that would serve a crowd and that I could make a few days ahead of time. My family has always enjoyed an Oreo version of this, but this was our first time doing it peanut butter style!
So instead of an Oreo crust, I used Nutter Butters. And I used vanilla ice cream, but you could also change that out for chocolate.
A thick layer of homemade fudge covers the ice cream, followed by a whipped cream topping.
Last but not least, I added a heavy sprinkling of roughly chopped miniature peanut butter cups. Make this for the peanut butter cup lover in your life and I guarantee theyll love you for it!
