I planned a little surprise party for the kids with this fun recipe, since I know how much they love ice cream sandwiches. I made this ice cream sandwich cake to kick off the end of the summer and the beginning of the school year. It was such a fun way to celebrate with one of their favorite treats! And not only is this recipe super easy to make, but it uses simple ingredients we always had on hand in the house!

Drummonds ice cream sandwich cake has just a handful of store-bought ingredients: ice cream sandwiches, strawberry ice cream, cookies and cream ice cream, and a container of whipped topping.

The recipe involves some creative layering and a bit of time in the freezer. Drummond lines the bottom and sides of an 8-inch square cake pan with two pieces of aluminum foil that hang over the sides.

She begins by putting a layer of ice cream sandwiches in the bottom and breaks them as necessary to fit in all the open spaces. Drummond spreads softened strawberry ice cream over the sandwiches, adds another layer of ice cream sandwiches, and tops it with the cookies and cream ice cream.

How To Make An Ice Cream Sandwich Cake Recipe

1. First Layer: Arrange half of the ice cream sandwiches in a 9×13 baking dish. Cut the last few to fit the pan as needed.

2. Second Layer: Top the sandwiches with half of the Cool Whip and spread it into an even layer.

3. Third Layer: Drizzle the chocolate sauce over the top, and then sprinkle the crushed cookies over the top.

4. Continue Layering: Make another layer of ice cream sandwich, top them with the rest of the whipped topping and crushed cookies. Decorate with sprinkles.

I have a healthy, or shall we say, not so healthy obsession with chocolate chip cookies. And since its so blazin hot here in Florida, and most likely where you live too, how about we make some chocolate chip cookie ice cream sandwiches?

These are super simple. You just need some supplies and a little patience while some things go back in the freezer a couple of times.

Trust me, its worth the wait! For this semi-recipe, I use my favorite recipe, this DoubleTree cookie recipe that I have made over and over again. In fact, I make it so often that I almost always have cookie dough in the freezer, ready to bake when the craving hits! Then, for the ice cream sandwiches, I use store bought vanilla ice cream. You can certainly use chocolate ice cream or any other flavor thats your favorite!

First, line a quarter sheet baking sheet or pan with wax paper.

Add the vanilla ice cream and just smooth it out with a spoon.

Itll look just like this! Freeze this pan for at least 1 1/2 hours. You can make your life easier and freeze it overnight, too.
