Divide Dough And Shape Into Long Ropes

How to make Korean Rice cake/ Garaetteok / ê°ëë¡ #12 #ASMR

This type of dough does not need any resting time. As a matter of fact, its better to work with it while the dough is still warm. If you let the dough sit for a long time, the outside of the dough will start to dry and form a crust.

Shape the dough into a ball and divide it into 8 equal pieces. You dont need to be too precise. For reference, my pieces of dough were somewhere between 95 to 100 grams.

Leave one piece of dough on the work surface for rolling out. Transfer the remaining 7 pieces of dough back into the bowl and cover with a towel.

Shape the piece of dough into a short, thick log, and then place the log on the work surface. Starting from the middle, roll out the dough and gradually work your hands further apart. Eventually, you will get a long dough rope. It should be about 16 inches long and just over 1/2 inch in diameter. Roll the dough rope off to the side.

Roll out 3 more pieces of dough into long ropes. Then, line up the 4 ropes of dough and cut them up into 2-inch pieces. The dough will stick to your knife a little. You can lightly grease the sides of your knife with oil to prevent sticking, but I dont usually bother with that.

Transfer all the pieces of rice cake onto a large baking sheet and cover them with a towel while you finish shaping and cutting the remaining pieces of dough. If any of the last few pieces of dough have started to dry up and crust over, knead them again until they no longer feel dry. Then, roll out the dough into a rope.

In Korea, you can find spicy rice cake or ddukbokki/tteokbokki in many different places from street carts to restaurants. Spicy rice cake is also served in many different ways. There are even restaurants that serve just different kinds of tteokbokki which are called . These places serve ddukbokki with different sauces and with different choices of noodles . Ddukbokki is also sold on street carts where often times you find the best tasting ones and for many Korean kids, its their most favorite after school snack on their way home. The recipe listed here is based on a ddukbokki ) version where restaurants serve it hot pot style, on top of a portable gas stove and cooked right at your table. I didnt cook it at the table in the pictures you see here but I have definitely cooked it in an electric hot pot at home before and its great fun for the whole family.

Tteokbokki Spicy Rice Cake Recipe

Step by Step Directions for How to Make Tteokbokki

1. 1 cup rice cake weighs about 5-6 oz. The quality of the tteok/dduk varies quite a bit and freshly made is the best. Heres a pic of a freshly made, never frozen, moist tteok and then dry, old, cracked tteok below. Rice cake can also develop cracks if it has been frozen and defrosted a few times.

If your tteok/dduk is frozen, let it defrost in cold water for a few minutes and drain.

2. Add water, gochujang and sugar to a pan and bring to a boil on medium high heat. I forgot to stir before taking this picture but yes.. you should stir it at some point before it boils. You can use less gochujang if you like things less spicy.

3. Add the tteokbokki tteok to the gochujang water. Add 1 tsp soy sauce and lower the heat and simmer for 8-10 minutes.
