Gooey Butter Cookies History
In the early 1930’s a local German/American baker from St. Louis made a new type of cake that reversed the amount of flour and butter in a cake and people raved about what was created. After many local St Louisans requested it he started making it on a regular basis, since then this St. Louis tradition has been made by many local bakeries but we are one of the only that offer this specialty in cookie form using one of the original recipes from over 100 years ago.

Ooey Gooey Butter Cake From Scratch
Often times gooey butter cake is made starting with a cake mix, but today were sharing a recipe that is totally from scratch. Dont let those words scare you off. Its really easyI promise!
- Make your buttery crust. Be sure to use melted butter so it comes together easily. Using a food processor helps those eggs and butter get perfectly blended so that your crust stays together.
- Use the same food processor to make the creamy filling. Soften the cream cheese so that the filling ends up smooth.
- 4 cups of powdered sugar? Yes. 4 cups. This is one cake that will completely satisfy your sweet tooth!
- To easily remove the cake from the pan, we recommend lining the pan with foil and spraying it with cooking spray. Allow the foil to hang out over the edges of the pan. After the cake is baked, you can lift up on that foil and pull the bars out of the pan as a sheet so that you can make clean, even cuts.
- The toothpick test does not work on this cake because you want it to be ooey gooey! So how do you know the cake bars are done? The top will be golden brown and start to puff a little.
- Dont sprinkle the cake with powdered sugar until it is completely cooled. If the cake is warm at all, the powdered sugar will melt in instead of dusting the top.

Gooey Butter Cake was originally an accident. Although origin stories vary, the cake was supposedly first made in the 1930s by a St. Louis-area German-American baker who was trying to make regular cake batter but reversed the proportions of butter and flour. Whatever its origin, there is no mistaking it is now a well-known St. Louis favorite.
It is a flat, dense cake made with wheat cake flour, butter, sugar, and eggs. It typically is only around an inch tall, dusted with powdered sugar, and able to be cut into pieces similar to those of a brownie. Variations of the cake using commercial yellow cake mix and/or cream cheese are available for simple preparation, but the best version is one using the bakers style, and served and eaten while fresh and warm.
