Many cake mixes in a box are accidentally vegan.

They dont contain any dairy, so as long as you use a vegan egg alternative and plant-based milk, youre good to go.

None of Betty Crockers cake mixes are certified vegan, or even clearly vegan, but some of the mixes may be vegan.

Ive gone through the ingredients for all the different mix flavors to see which ones might be vegan .

How To Make The Best Crushed Pineapple Upside Down Cake Ever

Although Ive always loved how a traditional pineapple upside down cake looks with the pretty sliced pineapples and maraschino cherries in the center, I gotta admit Ive not always been a fan of it for practicality purposes.

I mean have you ever been SO excited to get a slice of pineapple upside down cake only to be extremely disappointed when you only got just a couple measly pieces of pineapple on your slice of cake?

I have. And let me tell you, its heartbreaking.

Now that Im older, wiser, and have my own kitchen , Ive broken away from the traditional pineapple upside down cake recipe and made a couple changes for the better in my quick pineapple upside down cake.

Below youll find my tips on how to make the absolute BEST pineapple upside down cake!

Tip #1 Double Up On The Pineapple

First off, to remedy the pineapple issue I double up on the pineapple by using both diced and crushed pineapple.

Not only does this help ensure every person gets plenty of pineapple in every slice of cake, but it also keeps the cake nice and moist and full of delicious pineapple flavor.

Another quick tip Use the pineapple juice from draining your pineapple in your cake in lieu of water. It adds more delicious pineapple flavor and helps make the cake nice and moist.

Tip #2 Keep It Simple With a Boxed Cake Mix

Second, I use a boxed yellow cake mix to keep things simple.

I love using either Duncan Hines Classic Yellow or Betty Crocker Super Moist cake mix.

Tip #3 Use 2 Pans

    Do I Need To Grease The Cake Pan?

    Yes, absolutely!

    I recommend using non-stick cooking sprayand lining the bottom of your cake pan with parchment paper. I love these pre-cut ones with easy lift tabs. They make life SO much easier!

    You can also use butter or shortening to grease your pan, if you dont have spray.

    How Do You Keep Pineapple Upside Down Cake From Sticking?

    As recommended above, make sure you grease your cake pan really well, and dont wait too long to flip your cake.

    When Should I Flip My Pineapple Upside Down Cake?

    One of the most common mistakes people make with pineapple upside down cakes is either flipping their cake too soon or too late.

    Once your cake is fully baked, let it cool for 10-15 minutes and run a sharp, thin knife around the cake edges.

    Place the plate or platter you will use to serve your pineapple upside down cake on, on top of your cake pan and use a swift motion to flip your cake.

    Let the cake fall down on its own and gently slide the cake pan up.

    Help! My Glaze Stuck To the Pan!

    If some of your glaze stuck to the pan, dont worry its an easy fix.

    While the glaze is still warm spoon it evenly on top of your cake.

    If the glaze has hardened take the pan and place it back in the oven for a few minutes until it softens again and then drizzle on top of the cake.

    Finally, Betty Crocker has a handful of specialty cake mixes.

    These have fairly unique ingredients, so I looked through each ingredient list and pulled out the ones were interested in.

    Cake Mix
    Pound Cake Mix Sugar, Distilled Monoglycerides, Artificial Color

    Most of these arent surprising, after all, most angel food cakes in general arent vegan.

    Of all the Betty Crocker Cake Mixes, the gingerbread, pineapple upside down, and pound cake mixes are most likely to be vegan.

    Super Moist Favorites Cake Mixes

    Most of these flavors are clearly NOT vegan, because they have milk:

    This Crushed Pineapple Upside Down Cake is such a delicious and EASY cake to make, and its the cake everyone in my family requests for me to make again and again.

    The sweet brown sugar and butter glaze, combined with loads of pineapple, and a buttery delicious yellow cake, make for an unbelievable flavor you wont be able to resist.

    Plus, it looks so pretty and fancy topped with maraschino cherries, with no decoration skills required.

    I love eating a warm slice with some vanilla bean ice cream or topping it with some whipped cream, but honestly this cake is so good you dont have to add anything at all!

    How to Make Easy Pineapple Upside-Down Cake

    After being in California last week for a wedding and to see family and friends, I came back missing the warm and sunny climate. Our friend was having a birthday this weekend and to celebrate we decided to bring the hot sun to us with a Hawaiian luau-themed, birthday, dinner party.

    My grandmother on my dads side used to make this classic American dessert in the 50s and 60s and I have always thought it looked so pretty and fun. I know maybe its not traditional Hawaiian cuisine but, hey it has pineapples in it! I was in charge of all the food for the event so I made 3 kinds of kabobs, Asian-style meatballs, green salad, this beautiful cake, Rice Krispy treats , and figs stuffed with blue cheese and wrapped in prosciutto. Therefore, I didnt really have the time to make the recipe from scratch. This recipe was the perfect way to combine good-op American convenience and a little elbow grease.

    The result was an absolutely stunning cake that was the center of attention at the party. I used two 8 rounds to make a double-decker birthday cake but you can just as easily keep it simple with a 9 x 13 baking pan. For the two rounds, just split the butter, sugar, pineapple, and cherries between the two pans. Simple as that! The cake was moist and you really could taste the pineapple juice flavor. The cherries on top were, well, just that! I hope youll step back into a little classic Americana with me and give this cake a try!

    This past weekend my husband and I celebrated our 11th wedding anniversary and as I always do every year I made my husband one of his favorite desserts.

    This time I went with a classic pineapple upside down cake.

    Its also one of my favorites, second to myLuscious Strawberry Pineapple Cake that is to die for!

    My quick pineapple upside down cake with crushed pineapple is probably the best pineapple upside down cake youll ever eat and its SO easy to make!

    Its made with a simple boxed yellow cake mix, and has the most delicious brown sugar, vanilla, and crushed pineapple glaze, and pretty maraschino cherries on top.

    Youll want to make this crushed pineapple upside down cake again and again!

    Vintage Betty Recipe: Pineapple Upside

    After starting my Church Cookbook Series recently, my husband asked me to make what he said was his favorite cake a Pineapple Upside-Down cake. I thought for sure I would find the recipe in one of my church cookbooks, but I came up empty handed. I was kind of surprised, but decided maybe it was either a little old fashion or too fussy for the Church Ladies. My vintage 1961 Betty Crocker Cookbook came to the rescue but not easily. This cake was not listed in the cake section, but in the Desserts. I guess when you gussy up a cake it becomes a dessert. Go figure.

    This is also sometimes called a skillet cake according to Betty and for this recipe it is baked in a 10 inch heavy skillet I used one of my antique cast iron skillets, but you can also bake it in a 9×9 inch square pan or a 10 inch round cake pan. I will say that the pineapple circles fits perfectly in the 10 inch pan with 6 around the edges and one in the middle. As Betty says, It is a handsome dessert to serve at the table.

    Moral of the story is if you are trying to make something you or someone else remembers fondly ask lots of questions so you can find a recipe that most closely resembles that memory. This cake really looked gorgeous and was moist and delicious, but it wasnt his memory. My opinion I think you will be pleased whether you are going for stunning look or practical version either way you make it you will be the queen or king of cakes.
